Boil the pasta in salted water, then drain and keep 3-4 tablespoons of the water in which they boiled.

In Naples, this type of pasta sauce commonly goes under the name aulive and chiappariell (olives and capers).

The dish under its current name first appears in gastronomic literature in the 1960s. The earliest known mention of pasta to the whore is in Raffaele La Capria’s Wounded to death (Mortal Wound), a 1961 Italian novel which mentions "spaghetti alla puttanesca as they do in Syracuse (spaghetti alla puttanesca as they make it in Syracuse) ". [4] The sauce became popular in the 1960s, according to the Professional Union of Italian Pasta Makers. [5]

Nonetheless, the 1971 edition of the Silver spoon (The Silver Spoon), one of Italy's most prominent cookbooks, has no recipe with the name whore, but two recipes that are similar: The Neapolitan Neapolitan spaghetti, is made with anchovies and generous quantities of oregano while Sicilian spaghetti is distinguished by the addition of green peppers. Still again there is a Sicilian style popular around Palermo that includes olives, anchovies and raisins. [6]

In a 2005 article from The Gulf—A daily newspaper serving the Italian islands of Ischia and Procida — Annarita Cuomo asserted that puttanesca sauce was invented in the 1950s by Sandro Petti, co-owner of Rancio Fellone, a famous Ischian restaurant and nightspot. [7] According to Cuomo, Petti's moment of inspiration came when — near closing one evening — Petti found a group of customers sitting at one of his tables. He was low on ingredients and told them he didn't have enough to make them a meal. They complained that it was late and they were hungry, saying "Make any whore, "meaning" throw together whatever. "[a] Petti had nothing more than four tomatoes, two olives and some capers — the basic ingredients for the Sugoi, "So I used them to make the sauce for the spaghetti," Petti told Cuomo. Later, Petti included this dish on his menu as spaghetti alla puttanesca.

Because "whore"means roughly" whore "or" prostitute "and puttanesca is an adjective derived from that, there is a theory that the dish was invented in one of many bordellos in the Naples Quartieri Spagnoli. [8] [9] [10] Alternatively, food historian Jeremy Parzen, suggests the name has more to do with the practical use of "puttanesca" in Italian than with its literal definition: "Italians use puttana (and related words) almost the way we use shit, as an all-purpose profanity, so puttanesca pasta might have originated with someone saying, essentially, “I just threw a bunch of shit from the cupboard into a pan. ” [11]

The sauce alone is called puttanesca sauce in Italian. Recipes may differ according to preferences for instance, the Neapolitan version is prepared without anchovies, unlike the popular version in Lazio. Spices are sometimes added. In most cases, however, the Sugoi is a little salty (from the capers, olives, and anchovies) and quite fragrant (from the garlic). Traditionally, the sauce is served with spaghetti, although it is also paired with penne, bucatini, linguine, and vermicelli.

Garlic and anchovies (omitted in the Neapolitan version) are sautéed in olive oil. Chopped chili peppers, olives, capers, diced tomatoes, and oregano are added along with salt and black pepper to taste. The cook then reduces this mixture by simmering and pours it over spaghetti cooked al dente. The final touch is a topping of parsley. [12]

How to prepare Spaghetti Puttanesca (Tomato, anchovy, olive and garlic spaghetti)

Of course, as with all classic dishes, there are any number of variations on the puttanesca theme. The above recipes is my personal variation, actually, on the classic recipe, which would have you add the anchovies, (chopped) capers and, if using, olives to simmer along with the tomatoes. In the classic version, these garnishes lend their flavor to the sauce. Personally, I prefer to leave the anchovy fillets whole, and add these garnishes at almost the very end, barely cooking them only with the residual heat in the skillet. This preserves the individual & # 8216personality & # 8217 of each ingredient. The portions of capers, olives, anchovies and chili pepper can be adjusted to your personal taste. Some recipes omit the olives, while some call for chopped parsley to be added to the sauce just before the pasta. I & # 8217ve seen recipes calling for onion and / or basil as well, although these ingredients would tend to give the sauce a & # 8216mellower & # 8217 character that I personally don & # 8217t associate with a whore.And, please, no grated cheese & # 8230

The sauce is at its best if you use salted anchovies (which need to be filleted and rinsed) and salted capers, but if you don & # 8217t have any on hand, anchovies packed in oil and capers in vinegar will do. (Rinse the capers, whether in salt or vinegar before using them.)

As some of you probably know, the name of the sauce comes from the word whore, which means & # 8220whore & # 8221. (Hey, don & # 8217t kill the messenger!) The dish is also sometimes called by the slightly more genteel name of malafemmina pasta, which loosely translates into something like & # 8216naughty lady & # 8217 or even & # 8216 evil woman & # 8217 or just & # 8216streetwalker & # 8217. It is also known by the even more euphemistic belladonna pasta& # 8211 & # 8216beautiful woman & # 8217. I & # 8217ve always heard two stories about where the name comes from. One is that the name is a tongue-in-cheek allusion to the & # 8216lusty & # 8217 nature of the sauce. The other is that being very quick to make, this dish was favored by professional ladies because it could be prepared and eaten between & # 8216shifts & # 8217.
