Ingredients

Crust

  • 1 1/4 cups all purpose flour
  • 6 tablespoons (3/4 stick) chilled unsalted butter, cut into 1/2-inch cubes
  • 3 tablespoons (or more) ice water, divided

Filling

  • 3/4 cup plus 2 tablespoons fresh breadcrumbs made from crustless whole wheat bread
  • 2 tablespoons heavy whipping cream
  • 1 tablespoon light (mild-flavored) molasses
  • 1 1/2 cups coarsely grated peeled tart apples (such as Granny Smith)

Calvados crème fraîche

  • 1 8-ounce container crème fraîche
  • 1 tablespoon Calvados (apple brandy)

Recipe Preparation

Crust

  • Blend flour, sugar, and salt in processor 5 seconds. Add butter. Using on/off turns, cut in until very coarse meal forms. Add 3 tablespoons ice water. Blend until moist clumps form, adding more ice water by teaspoonfuls if dough is dry. Gather dough into ball; flatten into disk. Wrap in plastic wrap and chill 1 hour. DO AHEAD Dough can be made 1 day ahead. Keep chilled. Soften briefly at room temperature before rolling.

  • Preheat oven to 375°F. Roll out dough on lightly floured surface to 12- to 13-inch round. Transfer dough to 9-inch-diameter tart pan with removable bottom. Cut off all but 1/2 inch of overhang and fold in, pressing sides of dough to come 1/4 to 1/3 inch higher than pan sides. Freeze crust until firm, about 10 minutes.

  • Line crust with foil and dried beans or pie weights. Bake until sides are set, about 25 minutes. Remove foil and beans. Continue to bake until crust is pale golden, piercing with fork if crust bubbles, 12 to 15 minutes longer. Cool 30 minutes. Reduce oven temperature to 350°F.

Filling

  • Scatter breadcrumbs on small rimmed baking sheet. Bake until dry and crisp, about 10 minutes. Set aside.

  • Combine golden syrup, eggs, whipping cream, lemon peel, molasses, and salt in large bowl; whisk to blend. Stir in apples and breadcrumbs. Pour filling into crust.

  • Bake tart until filling is set in center and cracks appear at edges, about 55 minutes. Cool in pan on rack.

Calvados crème fraîche

  • Stir crème fraîche, sugar, and Calvados in small bowl to blend well. Cover mixture and refrigerate until ready to use, up to 3 hours.

  • Gently push up tart pan bottom to release tart. Serve tart slightly warm or at room temperature with a dollop of Calvados crème fraîche.

Treacle tart is a traditional British dessert consisting of a pastry case with a syrup and breadcrumb filling. It is so simple to make, but a great way to use up old bread. It is usually only flavoured with a little lemon zest, but having received kilos of free organic Finnish apples from my sister in law, I added some grated apple too. It was super good, moist and delicious. It will definitely be on my list of quick desserts for unexpected guests. I served mine with a spoonful of oat whipped cream, to continue the simplicity of the dish. I am slightly obsessed with mini tarts at the moment, but you can just as easily make the recipe as one large tart.

Apple Treacle Tarts – make 4 individual tarts

95 g vegan butter or margarine

zest and juice of a lemon

1 large apple, peeled and grated (you want a sweet apple that softens when cooked)

Apple Treacle Tarts

Preheat the oven to 180 degrees c.

Add the flour and salt into a large bowl and rub in the margarine/ butter, until the mixture resembles bread crumbs. Add a few splashes of iced cold water and use a knife to draw the breadcrumbs into a smooth pastry dough. Wrap in cling film and allow to chill.

Meanwhile gently heat the syrup in a sauce pan. Once runny add the zest, lemon juice grated apple and breadcrumbs. Mix well and set to one side.

Roll the chilled pastry to around 5 mm thick on a floured surface. Line your tart tins and trim the edges. Share out the bread crumb mix into the pastry lined tins, trying not to squash the mixture down too much, I would recommend a fork for this.

Bake in the oven for 25 – 30 mins until the tarts are golden brown.

Easy, Low Cost Dessert

I have made it for my children in the past so I knew how easy it is to make (and of course it is a bit naughty too!) It is however low cost – and a great way to use up any stale bread!

Researching recipes on the internet there are many variations and some are bit too fussy for me, so this is a plain, basic recipe! The proportion of syrup to breadcrumbs varies too – but I do think the proportions in this recipe are just perfect. I used wholemeal breadcrumbs because I think they give a better flavour and more robust texture – but you can use white or a mix of both – really whatever you have!

Make your own pastry – wholemeal or white – or even use ready made pastry if you want to be extra quick to make the dessert.

Bareham and Hopkinson, and Norwak, cook their tarts at a reasonably high temperature (180C), but for the wobbly middle and crisp top I'm after, Rankin's initial blast of heat and slow, 140C finish works better.

  • 18cm (7&Prime) Round Loose Bottomed Fluted Tart Tin
  • Food Processor
  • Butterfly Plunge Cutters (Optional)

How to make the pastry

So you don&rsquot need to wash it twice, (who likes washing unnecessary pots?!) roughly tear up the bread for the filling and pulse in the food processor until it becomes fine crumbs. Tip it all out into a bowl and set to one side until needed.

Then wipe out any leftover breadcrumbs and add in the flour, cold butter and salt. Blitz briefly until it becomes like fine crumbs.

Pour in 4 tbsp of cold water and blitz again briefly until it starts to clump together to form a dough.

Tip the dough out onto a large piece of cling film and bring together to form a ball. Flatten into a disc, wrap up in the cling film then pop into the fridge to chill for 20 minutes.

Meanwhile, preheat the oven to 200°C/Fan 190°C and place a heavy baking sheet in to heat up.

When the pastry is chilled, unfold the cling film and place another large piece of cling film over the top. Roll it out as thinly as you can ensuring that it&rsquos bigger than the base and sides of your tin.

Then peel off one layer of cling film and carefully lay it, pastry side down/cling film side up, over the tin. Gently ease it down into the tin, pressing it lightly into the fluted edges as you go. Try not to let any air get trapped underneath.

Next, peel off that layer of cling film and roll a rolling pin over the top to &lsquocut off&rsquo any excess. (Peel that all away and put to one side for a minute.) Now prick the base all over with a fork.

Coming back to that spare pastry &ndash if you want to, you can roll this out thinly again and cut out a few pretty butterflies or flowers to decorate the top. This is completely optional though.

Pop your tin (and butterflies) into the fridge to stay chilled whilst we make the filling.

How to make treacle tart filling

Pour the golden syrup into a medium saucepan and heat gently for 2-3 minutes over a low/medium heat. You want it warm and runny &ndash DO NOT BOIL.

Then add in the breadcrumbs, lemon juice & lemon zest and give it a good stir.

Take your prepared tin out the fridge and pour the filling straight in. Smooth it out with the back of a spoon. If you&rsquove made some butterfly decorations, arrange them however you like on the top.

At this point, you could egg wash the butterflies and the edge of the pastry but it&rsquos entirely optional. (An egg wash is simply beaten egg.)

Pop your Treacle Tart into the oven on the preheated baking tray and bake for 10 minutes. Then reduce the temperature to 180°C/Fan 170°C and bake for a further 30-35 minutes until a deep golden brown all over.

Allow to cool completely in the tin before removing. You can eat this warm or cold and store in an airtight container at room temperature (I prefer metal) consuming within 3-4 days.

Preheat the oven to 200º C.

First make the pastry. Combine the flour,100g of the sugar and 100g of the butter together in a food processor until it resembles breadcrumbs. Add the egg yolks and combine until your pastry cleans the bowl. Wrap in cling film and chill for 30 mins.

Heat the remaining butter in an ovenproof frying pan add the remaining sugar. When the butter and sugar has melted, add the lemon juice and apples. Coat the apples evenly in the syrup and then carefully arrange in the pan, cut side up.

Roll out the pastry to cover the apples, trimming off any that hangs over the side of the pan. Prick with a knife 2 or 3 times, place in the oven and bake for 20 mins.

After 20 mins, reduce the heat to 170º C and bake for another 20 mins. Remove from the oven, run a knife around the edge and leave to rest for a few minutes.

To serve, turn over carefully onto a serving plate. If any pieces of apple remain in the pan, gently replace them onto the tart. Serve warm with cream or ice cream, and some vanilla if you fancy it, too.

When the pastry is ready to use, melt the butter and lightly brush a 23cm round tart tin with some of it, reserving a little for later. Roll the sweet crust pastry out to a thickness of 2mm and carefully line the prepared tin. Trim the edges of the pastry but leave a little hanging over the sides of the tin (this will keep the pastry from slipping down inside the tart) and place in the fridge to chill for about 30 minutes.

Preheat the oven to I80°C/gas 4. Gently warm the golden syrup in a heavy-bottomed pan to soften it, then pour the syrup into a large bowl and whisk in the double cream. Crack the egg into a jug and break it up with a fork before whisking into the cream and syrup mixture. Add the cake crumbs, ground almonds and lemon zest and juice. Set this mixture aside.

Remove the pastry-lined tin from the fridge and brush the chilled pastry with the remaining melted butter (you may need to reheat it slightly). Line the pastry with a piece of baking paper big enough to cover the bottom and sides and then fill it with pie weights or baking beans. Bake for 20 minutes, then carefully remove the paper and the beans and return the pastry to the oven for 5-7 minutes until it just starts to turn slightly darker. Remove from the oven.

Turn the oven down to I70°C/gas 3.

Give the treacle filling a good stir and then pour it into the pre-baked pastry. Place the tart in the oven and bake for about 35-40 minutes or until the filling is set and the edges of the pastry are golden. Allow the tart to cool completely in the tin before cutting it into slices. The tart will keep in the fridge for 4 days.
