We handcrafted our Margarita of the Month to get that romantic color without sacrificing taste by mixing our house tequila (Espolon), with fresh-squeezed lime juice and a Spanish rosé wine that is bursting with notes of strawberry and raspberry without giving you over-the-top sweetness. And finally, it's not topped with roses but instead a fragrant sprig of rosemary,” said Jake Karley, director of purchasing & planning at PJW Restaurant Group.

The cocktail consists of turmeric honey, blended with beet juice and Botanist gin. Citrus and celery bitters are added to round out this sweet and earthy cocktail.

This Bubbly Negroni Is the Only Valentine’s Day Cocktail You Should Care About

The Negroni Sbagliato is the most romantic cocktail you can make. Evidence: It is red, the color of love! It involves sparkling wine! It’s from Italy! (Have you seen Call Me by Your Name?) It’s a little sweet and a little bitter—like romance! And saying it out loud forces your tongue to do acrobatics, like making out.

It's also what you’re making for someone on Valentine’s Day, if you have a person youɽ like to make a cocktail for.

You probably know what a Negroni is by this point, as they’ve been unavoidable for most of this decade, but just in case, it’s a cocktail made with equal parts gin, sweet vermouth, and Campari, an Italian aperitif. It’s a hell of a drink, by which I mean it’s intense and boozy. It's perfect in the right situation but can otherwise feel heavy-handed. A bit of a bully. (Particularly if it's not stirred long enough.)

You're probably not as familiar with the sbagliato part (unless you're Italian, or really into bitter sparkling cocktails). Depending on whom you ask, it means broken, mistaken, or wrong, which is funny if you, like me, believe that this bubbly thing is actually an improvement on the classic Negroni. Swap the gin for some prosecco, and you’re left with a cocktail that is lighter in body and flavor, plus you can drink more than one of them without taking a nap. (Helpful for romance.) It also happens to bring maximum sophistication at a relatively low price point.

Here’s how to make one to impress whoever you need to impress:

You’ll need Campari. This part is easy: Campari is just Campari. There aren’t different brands. It’s a little bit of an acquired taste, so if you’ve never had it before, grab a small bottle. (And if, like me, you love the stuff, grab a big one.)

You’ll need sweet vermouth. There are a lot of options here Carpano Antica is a standard, not-too-expensive choice, but if you want to check out some less-conventional options, head to your local wine shop and ask a friendly salesperson for some fortified-wine-related advice. Remember that vermouth needs to be refrigerated once opened.

And you’ll need prosecco. Or, really, any sparkling wine, so long as it’s dry. You don’t need something fancy the Campari and vermouth are going to overshadow most of what you’d get from a fine sparkling wine, so you can cheap out a little here. Maybe don't buy Andre, but don’t break the bank. Put it in the fridge to chill.

I like my Negroni Sbagliatos on the rocks—you can drink them out of a rocks glass (always a win), and the ice makes it last a bit longer—but some people drink them served up (chilled and without ice) in a champagne flute or coupe. It's your call.

Take an Old Fashioned glass or whatever short, wide glass you've got and fill it with ice. Add a shot of Campari and a shot of sweet vermouth stir for 15 or 20 seconds, till everything is cold. Top with prosecco and add an orange slice.

Valentine’s Day Mocktails

We loved the mocktails that we made before New Year’s Eve so much that we’ve come up with a few new mocktails in honor of Valentine’s Day! If you’re spending the night in tomorrow, these are perfect to whip up and drink at a fancy living room picnic.
Blood Orange Rosemary Spritzer

4 tbsp sparkling mineral water
2 tbsp orange dry soda (we used Polar brand)
2 tbsp fresh blood orange juice
2 tsp rosemary syrup

To make the rosemary syrup, combine 1 cup water, 1 cup sugar, 3 sprigs of rosemary in a saucepan over medium heat. Bring to a boil, or until sugar is completely dissolved, stirring occasionally. Remove from the heat and let infuse for 10 minutes. Strain out rosemary and transfer liquid into a jar and let it cool completely.

Combine orange soda, blood orange juice, and rosemary syrup in a glass and then fill glass 1/2-3/4 full of ice. Top off with the sparkling mineral water. Garnish with a spring of rosemary or blood orange wedge. This one is our absolute favorite!
Grapefruit & Pomegranate Soda

3 tbsp fresh grapefruit juice
3 tbsp sparkling mineral water
1.5 tbsp pomegranate juice (or 4 tbsp muddled pomegranate seeds)
1 tbsp orange dry soda
a few dashes of bitters (we used Fee Brothers because it’s local and nonalcoholic)

Combine grapefruit juice, pomegranate juice, orange dry and bitters in a glass. Add some ice and then add the sparkling mineral water. Garnish with pomegranate seeds and a grapefruit wedge.
Pomegranate Raspberry Cooler

4 tbsp pomegranate juice
Raspberry sherbet
Pomegranate seeds
Sparkling Apple Cider

Pour pomegranate juice into a glass. Add 4-6 small scoops of raspberry sherbet and 2 tbsp of pomegranate seeds – alternating between the two as you scoop them in. Top it off with sparkling apple cider. This one is sweet and delicious – a perfect option for little ones.

Whether you're having a singles soirée with the girls or you're planning an intimate evening with your significant other, these cocktails are fit for any occasion. 3 Cynar Cocktails to Make the Bitter Sweet

If you know your way around an Aperol Spritz, are acquainted with Campari and could sip Negronis all day (well, as much as propriety allows), perhaps it’s time to meet the next-level amaro: Cynar. (Pronounced chee-NAR, not SY-nar). Another classic Italian liqueur, it’s made with a number of botanicals, chief among them the artichoke, whose image graces its bright red label. There’s nothing particularly artichoke-y about the flavor, although its woodsy, earthy characteristics might remind you of one.

Like all amari, (Italian herbal liqueurs) Cynar is a balance of sweet and bitter, although this guy is further toward the bitter end than most. Swap it for Campari in a Negroni, sip it simply from a tiny glass at the end of a meal or try it in one of these three simple cocktails𠅊ll guaranteed to sweeten you toward the particular taste of bitter.

Easy: Cynar and Soda

A good aperitif is lively, bitter and refreshing Cynar with soda ticks all of those boxes perfectly. It’s vibrantly flavored but quite low in alcohol, so two before dinner won’t derail your evening. We like it with a lemon wedge garnish squeezed in there.

Instructions: In a tall glass with ice, combine 1½ ounces of Cynar with 4 ounces of soda. Garnish with a lemon wedge.

Intermediate: La Alcachofa

Good tequila—probably not the kind you shot in college—often has grassy or vegetal flavors to it, which are echoed perfectly in Cynar. This stirred Manhattan-like cocktail, made with just two ingredients, is as easy as it is sophisticated. Stir well and sip slowly.

Instructions: In a mixing glass with ice, combine 1 ounce of Cynar and 2 ounces of reposado tequila (we’re using Roca Patrón Reposado). Stir them together until very well chilled, at least 30 seconds. Strain into a cocktail glass and garnish with a lemon peel, twisting it over the surface of the drink first to release its citrus oils.

Advanced: Presbyterian’s Revenge

One of our favorite cocktails ever, this one-two punch of Scotch and Cynar gets lightened up with lemon and a big twist of grapefruit. It’s an incredibly complex drink, given how simple it really is: just four ingredients shaken together.

Instructions: In a cocktail shaker with ice, combine 2 ounces of blended Scotch (we used Cutty Sark Prohibition), ¾ ounce of Cynar, ¼ ounce of lemon juice and ¼ ounce of simple syrup (equal parts of hot water and sugar, dissolved). Dash in orange bitters if you have them. Shake that hard, then strain it into a rocks glass with fresh ice. Top with ½ ounce of club soda and garnish with a big twist of grapefruit, squeezing it over the top of the drink to spritz its oils over the surface.

This is love at first sip! This is a perfect cocktail no matter how you are spending your Valentine’s Day. Mix Malibu Rum, peach schnapps, and cranberry juice for a sweet and tasty treat.
