Cheesy Potato Slow-Cooker Soup

Ingredients

  • 1 carton (32 ounces) chicken broth, such as Progresso (4 cups)
  • 5 cups diced peeled russet potatoes (about 5 medium)
  • 3 Tablespoons cornstarch
  • 2 Cups shredded American cheese (8 ounces)
  • 4 medium green onions, sliced (1/4 cup)
  • 1 1/2 Cup chopped onions

Directions

Spray 3 1/2- to 4-quart slow cooker with cooking spray. Reserve 1/4 cup broth in small bowl; cover and refrigerate. In cooker, mix onions, potatoes and remaining broth.

Cover; cook on Low heat setting 8 hours.

Increase heat setting to High. In small bowl, beat cornstarch and reserved broth until smooth. Add to cooker; stir. Cover; heat to simmering, and cook 10 to 15 minutes longer or until thickened.

Stir in cheese until well melted. Sprinkle servings of soup with green onions.

Lazy Slow Cooker Potato Soup

I know some people consider soup a cold weather dish. And I admit, I am guilty of treating it as such, from time to time. However, every once in a while, I crave a bowl of soup in the summer and as I indulge i wonder - why? We eat hot steak, hot seafood, pasta and more all year long. Why does soup have such a winter connotation to it?

Having said that - this soup, while delicious anytime of year, does have a certain "stick to your ribs" quality to it that can really warm you from the inside out. So, while I will admit to indulging in soup year-round, this is one soup I particularly love in the colder months.


Slow Cooker Marie Callender’s Potato Cheese Soup

Fun fact! I used to be a server at Marie Callender’s. When hungry customers would come into the store they would always look forward to the cornbread and pies. And the potato cheese soup. I remember one man just ordering the potato cheese soup. When I went back into the kitchen and saw that we were out of the beloved soup I was sad for him. I told our manager and she whipped up another batch of the soup while the man waited patiently. He waited like 45 minutes just for a cup of soup.

The soup is simple it’s just potatoes, cheese, some dairy and a few other ingredients. For me personally I like to eat a cup of this soup with a salad or to start a meal. It’s delicious but it’s also quite rich. I brought this soup to our Halloween block party and everyone loved it. Before anyone says it, yes, I know that Crock Pot is a brand name and that most people these days say slow cooker instead.

I just can’t help it, y’all. A crock pot is a crock pot to me, even if it’s not a Crock Pot. Who’s confused? HA! If you’re interested, this is the Crock Pot I use the most in my own kitchen.

No matter what you call the magical kitchen appliance that it’s cooked in, you’re going to love this cheesy and delicious potato soup recipe.

The pound of Velveeta cheese in this soup pretty much means it tastes perfect. Yep, I said it. This potato soup is perfect!

This soup actually reminds me of the cheddar baked potato soup from Bob Evans which I’ve been obsessed with for many years.

Slow Cooker Cheesy Potato Soup

Ingredients

  • 6 medium potatoes, peeled and chopped
  • 2 ½ cups (625 ml) water
  • 1/2 cup (120 g) chopped onion
  • 2 teaspoons instant chicken bouillon granules
  • 1/4 teaspoon freshly ground black pepper
  • 6 oz (180 g) shredded American cheese
  • 1 ½ cups (375 ml) can evaporated milk
  • 4 oz (120 g) crispy cooked bacon, crumbled

Method

Step 1

Combine potatoes, onion, chicken bouillon, black pepper, and water in slow cooker.

Step 2

Cover the pot and cook on low heat setting for 8-9 hours(for high heat set for 3-4 hours). Stir cheese and milk into mixture in slow cooker. Cover slow cooker and cook on low-heat setting for a further 1 hour.

Step 3

Remove cooked potato soup from slow cooker. Ladle into a soup bowls. Sprinkle with crumbled bacon and serve.

Recipe Summary

  • 1 (2 pound) package frozen Southern-style hash brown potatoes, thawed
  • 4 cups shredded Cheddar cheese
  • 2 (10.75 ounce) cans condensed cream of chicken soup
  • 1 (8 ounce) container sour cream
  • 1 cup chopped yellow onion (Optional)
  • 1 cup milk
  • 1 pinch seasoned salt, or to taste
  • 1 teaspoon minced garlic
  • 1 cup crushed cheese-flavored crackers (such as Cheez-It®), divided

Mix hash brown potatoes, Cheddar cheese, cream of chicken soup, sour cream, onion, milk, seasoned salt, garlic, and 1/2 cup cheese-flavored crackers in a slow cooker.

Copycat Marie Callender’s Potato Cheese Soup Do you love Marie Callender&rsquos Potato Cheese Soup? Now you can make it at home in the slow cooker! Hi all! I don&rsquot know if I mentioned before that I worked at Marie Callender&rsquos for about 5 years as a hostess, and pie server, but mostly I waitressed. I was even the bookkeeper too! Marie Callender&rsquos Potato Cheese Soup was the most popular soup. When I ran into people around town and they found out I worked at Marie Callender&rsquos, they would always say I love the potato cheese soup and cornbread there! Sadly our local Marie Callender&rsquos has closed, so I had to figure out how to make this soup at home. Over the years working at Marie Callender&rsquos I learned what most of the ingredients were to this soup. Often customers would ask which soups of the day were vegetarian. I would have to go into the back and ask the Jimmy the cook. The potato cheese soup was not vegetarian, it has a chicken base he would tell me. Then Jimmy would go on how the soup has processed cheese in it, and a bit of regular cheese too. That&rsquos all I remembered about the ingredients of this soup. I did some research by asking an old friend who worked at Marie Callender&rsquos (for longer than I am alive!) if she remembered if the soup had celery. It does! She also reminded me that there was onions in the soup as well. Working at Marie Callender&rsquos has so many fond memories for me. I met my husband there, the very first week I started! I was the hostess with the mostess, he always jokes. And where else can you work and have pie for breakfast? The beginnings of this soup is just broth, potatoes, onions and celery. After the base of the soup cooks for 7-8 hours in the slow cooker, I add velveeta cheese, and sharp cheddar. You will notice in the recipe that I did not add salt. There is plenty of salt in the velveeta and chicken broth. The soup turns out thick and creamy! Some of the potatoes get crushed when the cheese is stirred in, but that is a good thing. The crushed potatoes help thicken the soup. I made Krusteaz Southern Style cornbread, and honey butter to go with this. I haven&rsquot seen Marie Callender&rsquos cornbread for a while at the store, it may because I always grab the Krusteaz lately and don&rsquot notice any others. You will love this soup! I wasn&rsquot sure if I would like the soup with velveeta in it, but I think this is what most restaurants use because it really makes for a creamy cheesy soup. Have a great week! Spray a 6-quart slow cooker with vegetable cooking spray.  Layer one third of the potatoes and half of the onion in the cooker. Repeat the layers. Top with the remaining potatoes. Stir the soup, milk, Parmesan cheese, salt and black pepper in a medium bowl. Pour the soup mixture over the potatoes. Cover and cook on HIGH for 4 to 5 hours or until the potatoes are tender. Sprinkle with the Cheddar cheese. Cover and let stand for 5 minutes or until the cheese is melted. How to Make Cheesy Potato Soup in a Crockpot:

Start your slow cooker potato soup or crockpot potato soup by adding chicken broth, cream of cheddar soup, potatoes, onion, garlic, salt, and pepper. Cook on low for 4-6 hours or 3-31/2 hours on high.

Thirty minutes before the end time, use a potato masher to mash up about one half the cooked potato mixture.

In a medium saucepan, melt butter and after butter is melted whisk in flour. Then whisk in half and half and cook on medium heat frequently stirring until the mixture begins to thicken. Add to the crockpot potato soup and stir well.

Add sour cream and cheddar cheese to the soup mixture. Stir occasionally during the last 30 minutes to fully incorporate all ingredients.

Serve this Campbells cheddar cheese soup recipe topped with additional cheddar cheese, green onions and chopped bacon.
