I don't know if preparing canned food for winter is really a culinary art, but I want to share with Dacic Cool readers my experience regarding preserving bean pods. It is the season when the beans started to bear fruit and we are already stocking up for the winter.
Regardless of the preservation method, the following will be taken into account: the pods are cleaned by breaking the tail and the tip, the beans are washed in more water because it has been sprayed against manna and / or pests, it is not left in the water because it hardens and is always put in boiling water.


Dry pasta

The pods do not break. Boil exactly one minute from the moment the water starts to boil. Remove with a spatula and let drain in a sieve. They are spread on a wooden board or a dry board and kept in the sun. The beans are turned 3-4 times a day so as not to stick to the board. For complete drying it takes at least 4 very hot days. On the last day, when it has become almost completely dehydrated, it can be placed on a tablecloth.
Store in a dry place, in canvas bags or in paper bags.
In winter, the bean pods are rinsed with cold water and placed directly in hot water. Do not let them soak in cold water because they harden.

Roasted beans for storage in the freezer
The bean pods break, they are boiled for 15 minutes from the moment the water starts to boil. Drain until cool. They are put in plastic bags, about 500 grams. Optionally, celery, parsley and thyme leaves can also be put in the bag.

Preserved in jars with tomatoes
Required quantities: 8 kg green beans, 0.75 l oil 4.5 kg tomatoes, 7 tablespoons salt, parsley and celery leaves, 6 bay leaves.
Method of preparation: The broken bean pods are soaked in oil for about half an hour until soft. Add the chopped tomatoes. The composition is boiled for an hour.
Add the finely chopped parsley and celery leaves and salt. The composition is boiled for another 10 minutes. Remove the bay leaves.
After it cools down a bit, add 2 sachets of preservative and mix well.
The composition is put in hot jars, put on lids and kept in beds until the next day or boiled in a steam bath. The recipe above resulted in 19 jars of 800 grams.

Preservation in jars, with brine
Boil the beans in salted water for 30 minutes. Put a tablespoon of salt in a liter of water. Drain and cool. Place in jars and pour cold brine on top.
To each jar of 800 grams add 2 tablespoons of vinegar. Place slats on top to press the pods. Tie the jars and boil on steam for half an hour, then place in beds until the next day.

How to Make Beans Pods with Garlic and Tomatoes & # 8211 ”Ai Pods”

Preparation of ingredients

1. Choose green beans. Wash well in cold water. Drain and break the ends. I prefer to break only the end with the petiole (tail) that clings to the plant. The other end is fragile, in addition I find it very beautiful. While I am cleaning the beans, I cook the peppers in an old pan on the stove. I then wrap it in aluminum foil so that it perspires well and I can peel it easily.

2. On the fire, put a large pot with 3-4 liters of water. Add, when it starts to boil, 1 tablespoon grated salt and bay leaves. Next to the stove, I stick a large bowl of very cold water in which I put some ice cubes. I put all the cleaned beans in the pot with boiling water. Boil it until it starts to freeze. Depending on how tender the bean itself is, it can take more or less to cook. Last time I kept it on the fire for only 4 minutes but it may take 15 minutes.

After it has set, I take the beans out of the boiling water with a large whisk and dip them directly in the ice water. This process is called "blanching" and has the role of suddenly stopping the cooking of vegetables. Thus treated, they will retain their natural color and shape even if they are cooked until 15 minutes later.

3. Put the oil in a large pan or saucepan. When it is cold, add half of the crushed garlic and the finely chopped baked pepper, peeled and seeded. Put the pan on the fire and heat gradually, stirring constantly, until it sizzles well.

4. Add the paprika and immediately, the tomatoes cleaned of diced (or passata) peeled skins. Bring the sauce to a boil, over medium heat, and taste the salt and pepper.

5. Add the well drained green beans. Make the fire a little bigger. After it starts to boil again, reduce the heat to medium and cook the beans for another 4-5 minutes, turning them well in the sauce several times. Crush the remaining garlic and mix with 2-3 tablespoons of cold water, preparing a mujdei. At the very end, strain this mujdei over the beans through a sieve. Stir gently (so as not to break the tender pods). Taste salt and pepper, seasoning to taste. Sprinkle with chopped green parsley and the bean paste with garlic and tomatoes is ready!

SERVE

This bean curd with garlic and tomatoes goes great as a side dish. As well, it works as a dish in itself. All the more so in the summer, when most of us prefer to feed on the gifts of the earth. Then take the jars out of the water and place them in a warm place in the house. Cover them with a thick blanket. Let them cool completely, then put them in the pantry.

The green beans in the jar thus preserved last up to a year. You can harden them and consume them as such, with garlic, sauces, cream or other garnishes. They can also be added to soups, stews, stews or other cooked foods.

We like it this way more, plus I like beans with mayonnaise and it should be whole. So I carefully place the pods in jars. I don't stuff them too much but I don't leave too much room.

Observation: if you do not have cool rooms or cellars, then it would be recommended to burn the bean pods before putting them in jars! Put the water to boil in a large pot and when it boils put the pods in it. Let them boil for 2-3 minutes and then drain them and put them immediately in jars. Pour over them the water in which they boiled and add a teaspoon of grated salt to each jar.

I poured cold water under the rim of the jar. In each jar I put a teaspoon of salt once (especially for pickles).

Heat 2-3 tablespoons of oil over medium heat and fry the chicken pieces on both sides, until it is nicely browned. Take out in a large plate. If the chicken leg remains whole, grow it on the wrist to penetrate.
2. Meanwhile, if the beans are fresh, wash them and cut off their heads, clean any threads (usually only the yellow one has threads) and cut them into 3-4 cm pieces.
3. Cut onion into cubes. After removing the meat from the pan where it was fried, if the sauce is not burnt, cook the onion until it becomes glassy, ​​about 4 minutes, stirring. You can do all these operations in the pan in which you will cook the food, if it is one that does not stick. Vessels with inner shell made of stone particles are excellent.
4. Add the beans and cover with soup or water. When the beans are 3 quarters cooked, add the chicken pieces, the peeled and grated tomatoes, or the broth, and the peeled and sliced ​​garlic.
5. After the sauce has dropped, add the chopped parsley to the end and season with salt.

MEAL OF PASTA BEANS

Bean meal, a simple, seasonal recipe, which I make very often during the summer and beyond. It is delicious eaten as such or as a side dish, it is prepared quickly and is very tasty.

You can choose bean pods which you like, it is important to be fresh, tender and crunchy.

  • 550 g pod beans (weighed after cleaning)
  • 3-4 tablespoons of oil
  • 1 medium onion
  • 150 ml concentrated tomato juice (or 3-4 fresh tomatoes)
  • 2 cloves of garlic
  • fresh thyme
  • salt and pepper
  • dill

How to prepare bean meal

First we wash, clean and break the beans into pieces.

In a bowl heat the oil and heat the onion with a pinch of salt until it softens and becomes glassy. Add the pods and a cup of water (about 250 ml), a few sprigs of thyme, salt and pepper to taste. cover and simmer until the pods begin to soften, about 15 minutes.

Then add the tomato paste, crushed garlic and cook for another 10 minutes.

*If you use fresh tomatoes, peel them, chop them finely and add them to the food.

When ready, turn off the heat and add the chopped dill.
