Cream of pumpkin and leeks
Here is the recipe for a light and detox cream: the pumpkin and leek soup with the Thermomix!
Even if there is a little oil (which you can put raw, if you prefer), the potato is missing. The potato is very good and helps to have a creamy velvety, but it adds a few more calories to the dish. So, when you want to make a light cream, better not put it!
Leek has a delicate flavor and is the first detox ingredient! If you have no problems with its flavor, you can add it to taste in the recipe. Leek has very few calories, contains vitamins A and C, flavonoids and provides a good amount of fiber.
Pumpkin also helps get rid of toxins. The high fiber content contributes to colon cleansing, it also contains antioxidants such as vitamin C and beta-carotene (which is why it is so orange!).
The Thermomix pumpkin and leek soup, rich in water, also helps diuresis. Here, then, that going to the table also becomes a time to take care of yourself, without sacrificing taste
If you are interested in periodically following a detox diet for a few days, you will find detox and at the same time tasty recipes in my cookbook Detox recipes with Thermomix

This shows how many servings you can make with this recipe.

- 30 g of extra virgin olive oil
- 700 g of pumpkin pulp in small pieces

- 100 g of milk
- 1 pinch of salt
- 1 pinch of ground black pepper
- 1 pinch of ground cinnamon
Preparation - Cream of pumpkin soup with thermomix
1.First you need to prepare the sauté. Then in the thermomix jug insert a piece of onion, of the pieces of celery already washed and dried and chopped for 10 seconds at speed 6. With a spatula group the ingredients on the bottom and add two tablespoons of olive oil, then dry for 3 minutes at 100 degrees speed 2.
2.Add the potato and pumpkin, previously rinsed and cut into pieces, and chopped for 20 seconds on speed 7.
4. At this point it is necessary to cook everything. Add to the thermomix mug water, rice and salt, then cook on speed 2 for 20-25 minutes at 100 degrees.
5. Pour half a glass of milk and the grated Parmesan cheese and homogenize at speed 8 to 10 for about 20 seconds. Taste, season with salt if necessary, and give a last stir. If the cream is too liquid, cook for a few minutes in varoma mode to evaporate the liquids.
And here is one ready in no time cream of pumpkin with thermomix, healthy and tasty. Serve it with a drizzle of extra virgin olive oil, and if you like, with a sprinkling of oat flakes and sunflower or pumpkin seeds.
To start preparing the Cream of Thermomix pumpkin first of all you will have to dedicate yourself to the leek, which will be reduced into coarse pieces, and to the garlic cloves. Add everything inside the jug and let it go to turbo speed for 10 seconds. In this way you will get a very fine beat, which you can, however, make even more subtle by continuing to work for a few more seconds.
Then add some d & rsquooliva extra virgin olive oil and sauté a 100 & degC for 3 minutes at speed 3. At this point, dedicate yourself to the pumpkin, which must be deprived of the outer skin and seeds and internal filaments and then reduced to cubes. Also in this case it will not be important to waste a lot of time in making the cubes to ensure that they are all more or less the same size since they will then be blended inside the jug.
Then add the pumpkin cubes inside the jug and let it go Turbo speed for 6 seconds. In this way you will obtain a perfectly grated pumpkin. Let it go for 6 minutes at 100 ° C speed 2 and at this point add the vegetable broth, which will be good to keep at temperature, so as not to stop the cooking of the pumpkin. Add the vegetable broth inside the jug, season with salt and pepper and let it continue cooking for about 25 minutes 100 & deg speed 1.
In this way you will have obtained a very thick cream that you will only have to add salt and pepper to taste and then make it even more velvety by adding a knob of butter. Blend everything for 20 seconds at speed 1 and you will have obtained a very inviting smooth and creamy consistency, which will make your dish perfect for a dinner or a family lunch.
Your Thermomix pumpkin cream without potatoes It is therefore ready to be served to your guests, perhaps accompanying it with crispy croutons. In this case the bread must be toasted in the oven after having sprinkled it with some extra virgin olive oil at 200 ° C for about 10 minutes. When it starts to brown on the surface and becomes crunchy, the bread can be baked and served together with your cream.
Cream of pumpkin, carrots, potatoes, Thermomix
If you want to make your cream even more consistent or you want to give an even more complete flavor to the preparation, you can also add carrots and potatoes to the pumpkin. These must be added to the pieces of pumpkin inside the jug so that they are flavored first for a few minutes and then blend them.
The final result will still be excellent and very greedy. Depending on the quantity of other vegetables added, it may be necessary to add a greater quantity of vegetable broth, also according to the greater or lesser density that you want to give to your preparation.
In this way you will also get an excellent base for preparing a pasta dish, too for children and therefore entice them to consume a first course based on vegetables, certainly healthy and very genuine.
