i used a butterflied boneless leg of lamb for this and it turned out beautifully. i cut the leg into 4 pieces and marinated them all day before grilling. the brown sugar carmelized nicely. the spices together had a morrocan flavor, so i served the lamb with cous cous and grilled vegetables. outstanding.-28 Jun 2005

I served these as appetizers for our 4th of July dinner. FANFLIPPINTASTIC! I made no changes to the recipe except to soak the chops (mine were frenched) in milk for an hour (to remove the gamey flavor) before applying the rub. Wow! I would order these in a restaurant and go back to that same restaurant just for these wonderful lamb chops. The fact that I can make them in my own home in a short amount of time is a bonus. The recipe itself: the only thing I changed was the amounts of cayenne and black pepper. I halved the amount and they were delicious. I'm in the midst of making this dish and had to take a break to write down my thoughts. I think I would cut back the salt by half or more. I minced and chopped and put this together and then decided it would do better by being made into more of a paste. This does better in a food processor. No one wants chunks of garlic or mint -- more of a wonderful smooth flavour to go with lamb.

I have been making this recipe for the last year+ and haven't found one that I like better. It's simple and perfect. Like a previous commenter I sear on the stovetop and finish in the oven, and a few times have replace the oven step with pouring in some chicken stock and covering and finishing on the stovetop. The lamb is milder and more tender that way (I prefer it with more of a crust, but it's good to mix it up.) I'll repeated the same warning on the cayenne, it's totally dependent on how long you let it sit before cooking and 10min is just about perfect for a light glow. I think the cayenne really adds to the dish if done right.

Place the lamb chops into a roasting pan, and season evenly with the garlic, garlic powder, chili powder, sugar, salt, and pepper. Drizzle with 1 tablespoon of lime juice, soy sauce and olive oil. Cover and refrigerate overnight.

Preheat the oven to 400 degrees F (200 degrees C). Allow the lamb to stand at room temperature while the oven preheats.

Roast uncovered in the preheated oven to your desired degree of doneness, about 20 minutes for medium, or 30 minutes for well done. Garnish with a sprinkle of cilantro and squeeze lemon and lime juice over the top before serving.


How To Make Lamb Chops with Tzatziki Sauce

For Lamb:

  • 8 lamb chops, loin
  • 1 large onion, chopped
  • 1 tsp dried thyme
  • 2 tsp dried oregano
  • 2 cloves garlic, minced

For Tzatziki Sauce:

  • 1 cup cucumber, seedless, peeled and grated
  • 1 ½ cup plain yogurt
  • ½ tsp dried dill
  • ¼ tsp dried oregano
  • 1 clove garlic, minced
  • 1 pinch sugar
  • salt and pepper , to taste

To make the lamb, place chopped onion in the bottom of a slow cooker or crockpot. Rub dried oregano and thyme on each lamb chop and place on the onion in the crockpot.

Sprinkle with minced garlic and cook on low heat for about 5 hours or until meat is tender and cooked to desired doneness.

To make the sauce, press grated cucumber with paper towels until most liquid from cucumbers is absorbed.

Combine cucumber with yogurt, dried dill, dried oregano, garlic, sugar and salt and pepper in a bowl. Allow chilling for at least 30 minutes before serving. Serve over cooked lamb chops.


HOW TO COOK LAMB CHOPS

Season your chops liberally with coarse salt and freshly ground pepper.

Prepare the marinade: combine thyme, oregano, rosemary, mint with olive oil and minced garlic in a small bowl.

Rub the marinade over the lamb, massaging it into the meat, and leave for up to 20 minutes at room temperature.

Heat a large skillet over high heat for 30 seconds. Add the olive oil and heat until it slides easily around your skillet &ndash you will see it shimmering.

Reduce heat to medium-high and add the chops. Sear until they are well browned on the first side, about 3 minutes.

Flip the chops over and cook for another 3-5 minutes (depending on thickness). They should be to medium rare 57°C (135°F) if checked with a meat thermometer.

Transfer the chops to a warm plate and leave them to rest for 5 minutes. This will allow the proteins in the meat to relax for maximum juiciness!

6 July marks the end of the fasting month for 2016. I will miss the vibrant Ramadhan Bazaars that were aplenty in my neighbourhood. However, the food scene is no less quieter with makeshift lemang stalls popping up along the roadside, Raya cookies and dodol which we received from friends. Lemang is coconut milk glutinous rice cooked in a bamboo stick over an open fire. I'm aiming to get some this weekend.

This blog post is nothing to do with local food, however. I thought it'd be a nice change to have lamb for dinner after a month of feasting on traditional eats. It was paired with small strawberries which I bought for a bargain at a supermarket. 'Tis the belt-tightening season. Funnily, it's not just about the finances. My waistline is waging a war with burgeoning love handles. That said, I wish I'd gotten more of the strawberries it would have been beautiful in a fruit tart too.

Pan-Fried Lamb Shoulder Chops With Strawberries
Ingredients:
- 340g Lamb Shoulder Chops (or 3 pcs)
- 150g small fresh strawberries (leaves removed)
- 2 kiwi fruits (cubed)
- 2 shallots (sliced)
- 3 stalks lemongrass (smashed)
- ½ tbsp cumin seeds
- 2 tbsp coarse salt
- 1 tsp ground nutmeg
- 2 tsp sugar or to taste
- A dash of black pepper
- 1 tsp corn flour (mix in 1 tbsp water)
- 1 tbsp cooking oil
- About ¼ cup water

- Some boiled broccoli or vegetable of choice, butter and salt (toss together) .

How-to:
1) Rub the lamb with coarse salt. Leave aside for about 15 minutes.
2) Boil some broccoli florets in a pot of water. Dunk the boiled broccoli into cool water to stop the cooking process. Immediately toss in butter and a sprinkle of salt. Keep aside.
3) Rinse the salt away from the lamb cuts. Rub on ground nutmeg and cumin seeds.
4) Heat cooking oil in pan. Place the smashed lemongrass into the pan and the lamb cuts on top of it. Pan-fry the meat for a couple of minutes on each side or to a level of doneness of preference. Then, remove the cooked lamb cuts from the pan and leave aside to prepare the sauce.
5) Using the same pan, splash in a tbsp or two of water. Add the onions. Stir-fry it for a bit before adding the kiwi fruit.
6) Cook the kiwi fruit until it looks a little smashed. Add sugar, a little water and a dash of black pepper. Stir to combine.
7) Add the strawberries. Cook until slightly tender.
8) Finally, switch the heat off and stir the corn flour in to thicken the sauce. Add more water if you find the sauce too gooey.
9) Plate the lamb and pour the strawberry-kiwi sauce over. Serve immediately with vegetable of choice.
