What’s the best cheesesteak in Philadelphia? It’s a debate that has raged for decades. We haven’t stepped into the conversation on this blog mostly because we do not have a strong opinion, plus enough other locals have opined ad nauseam.

However, I can tell you the best cheesesteak in the Lansdale, Pa. area - the one that I’ll plan an entire day around getting - the cheesesteak at Ray's Pizzeria & Restaurant.

My mouth waters just thinking about making the trip to my hometown to get one. Ray’s delivers on all the key attributes of a great cheesesteak, including a good roll, quality steak and being made fresh to order.

The amount of meat stuffed into the roll compared to other good cheesesteaks is what I love most about Ray’s, though. Nothing disappoints me more than when a cheesesteak is not filled with enough meat. This happens more often than you think. Come on folks, fill 'er up. And yes, that can even include the likes of Pat’s, Geno’s, Jim’s, etc.

As you can see, I order my cheesesteak from Ray’s with sauce and onions. It's how my family has ordered at Ray’s for as long as I can remember and I stick with tradition. The sweetness of the red sauce is a perfect complement to the American cheese. Ray's also uses a healthy dose of onions, cut thick instead of chopped thin.

If you go to Ray's, order a large so you have some leftovers. A cold, leftover Ray’s cheesesteak is like discovering a $20 bill in your back pocket. You forget about it, but the next day you do a little victory dance when you find it.

The cheesesteak in these photos was crushed in about three minutes. I had planned to share some with my parents, but it was gone before I knew it. Or so I told them... Better hurry up to Ray's before I crush yours, too.

Pizza, vegan and other great takeout spots to consider while quarantining

We zipped around the city to round up four local spots where you can create your own family meal at home.

Our first stop took us to Naples at the Warehouse in Mullica Hill, N.J. Second, we went to South Philly to check out the new Pizza Plus. We finished off with stops at Attic Brewing Company and Urban Village Brewing Company.

You'll find fresh pizza using house made sauces and they can have it ready for takeout. If you're looking to add a little craft brew to your evening - you can pick up some fresh concoctions from these local breweries whether it's a growler or a can. And when everything gets back to normal you can stop in and grab a table.

Everyone knows what you’re supposed to eat in Philadelphia. A cheesesteak, right? Of course. But there’s way more to Philly’s always-evolving food scene. The city’s most iconic dishes are rooted in Italian-American traditions, original Americana recipes, and the contributions of its many immigrant communities. Yes, get a cheesesteak or two — but this map highlights many more classic Philly dishes everyone needs to try.

Takeout is widely considered to be the lowest-risk option during the pandemic. Studies indicate there is a lower exposure risk when eating outdoors versus indoors (which is available only at maximum 50 percent capacity in Philly right now), but the level of risk involved with outdoor dining is contingent on restaurants following strict social distancing and other safety guidelines. Grad Student Raises $30,000 for Charity Dropping Free Pizzas Out of His Second Floor Window

A COVID-canceled dinner party in March has turned into a global fundraising effort.

During the pandemic, plenty of people have used baking or other culinary hobbies to pass the time. A grad student in Philadelphia specifically turned his focus to pizza𠅋ut not content with firing up pies for his own consumption, he’s been literally lowering free pizzas from his second-floor apartment with a simple request that the beneficiaries donate money for charity𠅊nd he’s raised over $30,000 in the process.

Good Pizza PHL isn’t an actual pizzeria—it’s just 27-year-old University of Pennsylvania MBA student Ben Berman and an Instagram account𠅋ut the pizzas he’s made in his one-bedroom apartment and the money he’s raised are very real. The Maine native told Penn’s Wharton School website that the very first drop happened last March somewhat by necessity. After moving to Philly in 2019, Berman took up pizza-making as a hobby and would invite friends over for dinner. When the emerging pandemic caused one of those get-togethers to be canceled and he was stuck with too much leftover dough, he told his friends to swing by anyway and he𠆝 𠇍rop” their pizzas down to them from his apartment window.

“People thought it was really cool. So I was like, alright well that’s interesting that there’s something here,” Berman explained. 𠇊s things got more dire over the summer, I wanted to find a way to give back. It was just an opportunity to marry those two things.”

Originally a word of mouth operation, Good Pizza took a major turn in November when it was featured on One Bite Pizza Reviews from Barstool Sports founder Dave Portnoy. Berman’s story was picked up by local media, and then he kicked off the New Year with a feature on CBS News. He now has over 17,000 Instagram followers.

And as interest in these bi-monthly giveaways grew, Berman began using a lottery system where people could sign up for his “pizza drops” via an email list or Instagram since demand was outpacing the number of pizzas he could cook. “I only make 20 pies a night,” he told Philadelphia’s 6ABC. �ter that, I find that my oven starts to smoke and gives up a little bit.”

Still, each free pizza comes with a handwritten note, and all Berman asks for in return is a donation that can be sent through Venmo. From there, he chooses where the funds go including Philabundance and Project Home, charities that combat homelessness and hunger. CBS News says Good Pizza has made over 500 pies, raising more than $30,000 to date.

And even if you don’t win the pie lottery or live in Philadelphia you can still support the cause by sending money to his Venmo account: @GoodPizzaPHL. 𠇍onations that have come in through people from all over the world, people without any expectation of ever trying pizza,” he told CBS. 𠇊nyone that donates to us, 100 percent of what they give is being given away.”

Good Pizza’s Instagram account says more pizzas will be dropping this month𠅊nd during the downtime, Berman has been sharing photos and videos of his new pizza experiments. (Yes, he’s apparently still making pizza in his spare time, too.) “Good pizza for a good cause. That’s all I set out to do. What an amazing few months it’s been with your support,” he posted a few days ago. “Looking forward to much more of it all in the new year. THANK YOU for all the love and support!”


Inside Kate Winslet’s Mare of Easttown Pennsylvania Accent

On the first episode of Mare of Easttown, HBO’s new series premiering Sunday, Kate Winslet takes us on a journey—into the blue-collar boroughs of southeastern Pennsylvania and, more specifically, onto the roller coaster of the Delaware County dialect. The ride begins when Winslet’s character, a detective named Mare Sheehan, makes a meal out of the word “overdose” early in the first episode—drawing it out to sound something like “aye-oh-ver-dough-se”—and careens through unexpected loops and valleys of unfamiliar sounds through the show’s seven episodes.

After hearing this head-scratching dialect, Vanity Fair took its burning questions about Mare’s accent to Winslet, Winslet’s longtime dialect coach Susan Hegarty, and Mare of Easttown creator Brad Ingelsby (who was raised in southeastern Pennsylvania himself). Ahead, a comprehensive debrief of the dialect lovingly known as “Delco” by locals.

Why does this dialect sound so strange?

If Mare’s accent sounds strange, it’s likely because you aren’t as familiar with the Philadelphia-area dialect as you are with more recognizable regional variations, like southern or Bronx. “It’s not really in the American imagination if you’re not from that state or that region,” Hegarty told Vanity Fair on Thursday. “You didn’t grow up hearing it. You didn’t grow up hearing parodies of it. What’s strange to people who aren’t familiar with it is that it sounds like New York, and it’s not like New York at all,” he explained. “And then it sounds Southern, and it’s not Southern at all.”

The dialect is so little-known (much like Pittsburgh’s, on the western side of Pennsylvania) that many Philly-set projects—think Rocky, Silver Linings Playbook—opt to forgo accent authenticity entirely. Speaking to Vanity Fair, Hegarty referenced a colleague from Philadelphia who “has a résumé as long as your arm” but “never once in her entire career has had the opportunity to coach a Philadelphia accent. She’s even talked to producers about projects that she knew were going to be based in Philadelphia. And they said, ‘Oh, nobody cares. We’re just going to do New York.’ It’s kind of a shame.” HBO and Winslet, by contrast, were so intent on setting Mare of Easttown in Southern Pennsylvania, specifically Delaware County, that Hegarty said that she was the second person hired, after Winslet, for the production.

Hegarty is prepared for some viewers to be surprised by the Delco sound.

“I remember the first time I met somebody from Pennsylvania,” Hegarty said. “It was with a friend from Pittsburgh, and I thought the accent was the weirdest thing I’ve ever heard.” (In 2014, Pittsburgh was voted the “Ugliest Accent in America” by Gawker.) Said Hegarty, “There probably will be some people who are a little bit distracted by the accent at the beginning.”

Why are certain sounds so noticeable (especially the “O”), while others aren’t?

Hegarty isn’t sure. In fact, “the inconsistency” of the Delco accent is part of what makes it such an intimidating venture for an actor. “The inconsistency of it is very strange…your brain looks for patterns, things it can find comfort in. But with this, you are constantly being challenged.”

The inconsistency worried Winslet so much that the actor “worried that I wasn’t going to be able to do it.” Speaking to Vanity Fair, she said, “Whenever that happens, then I just practice it more.”

How did Kate Winslet go Delco?

After Winslet signed onto the project, Ingelsby began sending Winslet and Hegarty voice memos that he recorded of his wife, who speaks with a subtle Delco accent. “He started sending me candid recordings of his family,” said Hegarty. “He would just turn the recorder on when they were in the car, driving the kids home—and I would hear his wife, and maybe her sister or her parents would be in the car, and the kids, and they would be playing charades at home.”

A local dialect coach, Susanne Sulby, also collected samples of Delaware County locals doing interviews. “She wandered through the counties interviewing people—all different backgrounds, all different ages,” said Hegarty. The interviews were used as dialect models for the cast. Hegarty pinpointed two “dialect models” for Winslet whose age and vocal resonance matched the actor. One was a teacher named Trish Lauria.

“I had a ritual,” Winslet told the Philadelphia Inquirer. “I’d get in the car. I’d put my coffee in the cup holder. The AirPods would go in, and I would have Trish Lauria from Drexel Hill in my ear to and from set every day. That was the voice that kind of resonated with me the most. She was brilliant.”

Which accent came the close to breaking Winslet?

“I love doing accents, but this one did drive me crazy,” admitted Winslet to Vanity Fair. “I did a sort of Polish-Armenian American for the Steve Jobs movie that was quite difficult. That was actually extremely difficult. I had been American in Titanic, but doing Eternal Sunshine of a Spotless Mind was kind of a Long Island dialect. I had to get very good at that so I could improvise a lot…. With your dialogue, when you’re suddenly making stuff up and ad-libbing, it’s a whole other host of scariness. Eternal Sunshine was really quite hard because I had to truly be very proficient at it. But the Delco was pretty tricky.”

“I had to work on it every single day,” said Winslet. “I didn’t learn it and then just go and do the show. Every single day I was working on the dialect on the way to work, when I got in the hair and makeup trailer, as soon as I could find someone to run lines with—it was just constant.”

Said Hegarty, “It’s an accent, not a costume. You don’t just go in for a fitting, put it on, and then you’re done. It has to be maintained. It’s a living thing and has to be renewed every day.”

What were the dangers of going Delco?

“There’s always the danger that as an actor, you can sound like you’re doing a voice,” said Winslet. “There was a [woman] named Christine Bleiler, who’s a detective. I worked alongside her as a large part of the preparation too. She was my go-to. I mean, I’d call her at five in the morning and go, ‘I’m on my way to work. And I’ve just realized, I don’t think this dialogue quite adds up in real police wording,’ and she helped me. But her dialect was very strong.”

Winslet said that she consciously took the dialect down a few notches so it would be less distracting to viewers. “[Audiences] don’t notice the costumes or the hair. I’m wearing a wig in the show, but you’d never know. The accent had to be the same.”

Why does Evan Peters’s dialect sound so different?

While Winslet worked with Hegarty, and Sulby helped other actors, Evan Peters decided to specifically imitate a Delco native while playing Detective Colin Zabel. Said Ingelsby, “We had a tech advisor on the show, Pete Baylor, who is a local cop. He and his brothers have this heavy Delco accent. Evan noticed that in Pete, and then we had Pete and his brothers record [dialogue]. He was always saying, ‘I got the Delco accent from the Baylor brothers.’ He just leaned into that.”

  • For the Dough:
  • 500 grams (17.5 ounces, about 3 1/2 cups) all-purpose flour
  • 10 grams (.35 ounces, about 2 teaspoons) salt
  • 5 grams (.175 ounces, about 1 teaspoon) rapid-rise yeast
  • 30 grams (1 ounce, about 2 1/4 tablespoons) extra-virgin olive oil, plus more for greasing pan
  • 325 grams (11.5 ounces, about 1 cup plus 6 tablespoons) water
  • For the Sauce:
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, grated on a microplane grater
  • 1 tablespoon dried oregano
  • 1 teaspoon red pepper flakes
  • 1 (28-ounce) can whole peeled tomatoes, roughly pureed in a food processor or blender
  • 1 tablespoon sugar
  • 1 shallot or small onion
  • Kosher salt
  • 1/2 ounce finely grated Pecorino Romano cheese

Combine flour, salt, and yeast in the bowl of a stand mixer fitted with the dough hook attachment. Whisk to combine. Add olive oil and water. Knead on low speed just until dough comes together, about 3 minutes. Let dough rest for 10 minutes, then knead once more on low speed for 10 minutes. Dough should pull away from sides of bowl but stick to bottom.

Remove dough hook, cover top of mixing bowl tightly with plastic wrap, and let rise in the refrigerator for at least 8 hours and up to 24. Meanwhile, make the sauce.

For the Sauce: Heat olive oil and butter in a medium saucepan over medium-high heat until butter melts. Add garlic, oregano, and pepper flakes. Cook, stirring constantly, until softened and fragrant, about 1 minute. Add tomatoes, sugar, and whole shallot. Bring to a bare simmer and cook, stirring occasionally, until rich and thick, about 45 minutes. Season to taste with salt. Allow to cool in fridge while dough rises.

Two hours before baking, remove dough from fridge. Generously grease the inside of a 13- by 18-inch rimmed baking sheet with olive oil (about 3 tablespoons). Turn dough out onto lightly floured surface. Form into flat ball and transfer to baking sheet. Using your hands, coat the ball on all sides with olive oil. Loosely cover the baking sheet with plastic and let dough rise in a warm spot for 1 hour. The dough should spread out .

Carefully stretch and push the dough into the corners and edges of the pan. Cover loosely, and let rise for 1 hour longer. Meanwhile, adjust oven rack to upper middle position and preheat oven to 450°F. When dough has risen, gently dock center with finger tips and use your hands to create a risen ridge about 1-inch wide around the edge.

Spread sauce generously over dough, leaving the raised 1-inch edge un-sauced. Bake until edges are light golden brown and crisp, about 20 minutes total, rotating pan once half way through baking. Remove from oven and allow to cool at room temperature for at least 15 minutes. Sprinkle with Romano cheese, cut into slices, and serve.

COVID GUIDELINES

We are now open for dinner reservations for indoor and outdoor dining! Reservations are available 30 days in advance and are required for seating.

Masks and temperature checks are required for dine-in service. In the interest of maximum safety, server interactions will be limited and ordering will be contactless.

Street parking is available on the streets surrounding the pizzeria. There is no parking on Lee Street. A paid lot is available one block away on Front Street between Thompson and Master.

Reservations for 1-2 guests are allotted 1 hour and 15 minutes to dine.

Reservations for 3-6 guests are allotted 1 hour, 45 minutes hours to dine.

Reservations for parties of 6-8 are allotted two hours to dine.

This will be enforced to allow us to seat all guests in a timely fashion, while also ensuring the proper sanitation measures are taken in between each reservation. The patio has a covering and heaters throughout and is comfortable even with light rain or snow. If the weather does not permit, we have the right to cancel your reservation.
