I doubled the quantities and I got 250 nuts, but I will write the recipe for a single portion, so for 125 nuts.
- It took:
- 9 tablespoons lard;

- 7 tablespoons water;
- 4 eggs;
- a teaspoon of ammonia quenched with a teaspoon of vinegar;
- a bottle of rum essence;
- a pinch of salt;
- flour as it contains (approximately 850g).
- Caramelized sugar cream:
- 500g sugar;
- 1l milk;
- 6-7 tablespoons flour (with tip);
- a bottle of rum essence;
- a packet of margarine (250g);
- 125g finely ground walnuts.
- Optional: powdered sugar for decoration.

RECIPE PREPARATION Walnuts filled with caramelized sugar cream:
Mix all the ingredients in a bowl until a soft crust is obtained. Put the flour on the work table and knead the crust until it is hard enough to form balls from it. The balls are put in a hot form and greased with oil and baked on the flame on both sides. And so on until the coke is finished. Remove the excess dough from the ripe nuts.
Caramelized sugar cream:
In a bowl, caramelize the sugar, then add half of the milk and leave it on the fire. The other half of the milk is mixed with flour and rum essence. When all the sugar in the bowl melts, add the milk with flour and essence over it and mix continuously until it thickens. Remove from the heat and mix with a packet of margarine and ground walnuts.
Fill one half of the walnut with cream with a teaspoon, then add the other half of the walnut. At the end, the nuts are powdered with sugar.
8 small apples
150 g sugar for caramelization
1 cup nuts and raisins
1 cup plum jam
300 g sugar
300 g flour
150 ml oil
1 sachet of baking powder quenched with lemon or vinegar
1 teaspoon vanilla essence
500 g fresh
Caramelize the sugar in the bowl in which we will bake the cake. Peeled and shredded apples, put them over the hardened caramel, then fill them with coarsely chopped walnuts, raisins and jam.
Prepare the cake top, as we prepare any pandispan: beat the egg whites hard with a pinch of salt. Add the sugar and continue to mix until the sugar melts. Add the yolks (one at a time or all at once) and mix lightly with a spoon or a fork.
Add in turn the oil, vanilla essence, baking powder and flour, which we mix with a light spoon, until the composition is homogenous. Pour a spoonful of the dough between the apples.
Put the tray in the preheated oven at 180 ° C and let it bake for about 30 minutes, then cover it with baking paper or foil and leave it for another 20-30 minutes. We will do a toothpick test after 20 minutes, to check if the dough is baked. It is possible to leave it for another 10 minutes, if the apples are juicy and leave juice during baking.
When we take the tray out of the oven, we immediately take out the cake, face down.
If we don't do this, we risk re-hardening the caramel & # 8211 as I suffered. That's what I need if I do several things at the same time!
Fortunately, I managed not to spoil the look, but the caramelized sugar remained.
After it cools, we coat the cake with whipped cream and keep it in the fridge until we serve it.
