TRADITIONAL JAPANESE RECIPE: A California roll is a fresh take on traditional Japanese rice rolls. Filled with avocado, crab, and cucumber, it's fresh and crunchy and makes a filling meal. The real secret to making the best California Roll in the world is: filled with savory crab and creamy avocado.
The most widely accepted view by food historians attributes the invention to Ichiro Mashita, sushi chef at the Tokyo Kaikan in Little Tokyo, Los Angeles, United States. According to this account, Mashita began substituting avocado for toro (fatty tuna) in the off-season, and after further experimentation, developed the prototype, back in the 1960s (or early 1970s).
The early recipe used only frozen king crab legs, since surimi imitation crab was not yet available. Cucumber, mayonnaise, and sesame seed were missing these ingredients were all added later. The original California roll was wrapped traditional style, with the nori seaweed on the outside, which American customers tended to peel off. So eventually the roll "inside-out", i.e. uramaki version was developed. This adaptation has also been credited to Mashita by figures associated with the restaurant.
A rivaling claim is that the California roll was actually created in Canada, by Chef Hidekazu Tojo, a Japanese native who moved to Vancouver, British Columbia in August 1971. Tojo insists he is the innovator of the "inside-out" sushi, and it got the name "California roll" because it was popular with patrons from Los Angeles. His original claims of invention don't even touch on the use of avocado, essential to the California roll.
How to Assemble California Rolls &ndash
Now that you have made your sticky rice and prepared the rest of your ingredients, you will need to assemble the sushi roll. Assembling your sushi roll will only take about 10 minutes. I have made a little picture tutorial, with some step by step directions. There are a lot of pictures and a lot of steps&hellip.but please don&rsquot let this intimidate you. This is EASY!
- Lay out your sushi mat and cover with plastic wrap. Put a nori sheet shiny side down on plastic wrap. Get a bowl of water and your other ingredients and have them close by.
- Dip your fingers in water and evenly spread sticky rice ¼ inch thick. Spread almost to the edge and press firmly into the nori sheet.
- Sprinkle about ½ tbsp. toasted sesame seeds evenly over rice.
- Carefully flip nori sheet so the rice side is down.
- Put a layer of filling about 1/3 way down the nori sheet, going all the way across.
- Pull the nori to the edge of the mat closest to you, and fold the sushi mat over the nori about ½ inch.
- Unroll and pull the nori to the edge of the mat again.
- Roll the mat over again, unroll, and repeat steps until you have rolled over the filling.
- Now, roll the mat over the entire roll, pressing firmly and making a tight roll.
- Wrap the roll in plastic wrap and refrigerate for about 30 minutes.
- Remove from fridge, unwrap, and slice with a very sharp knife. Cut the ends off first and then slice about 1 inch thick.
- Serve your California Rolls with soy sauce and wasabi, and maybe a little sriracha if you like it spicy.

SPICY TUNA (Miyamoto special recipe)
1 tsp Chili Paste
You can adjust the 'hot' factor up or down for individual taste. Try to use Sanbal Oelek Chili Paste.
2 tbs QP Mayo
Japanese mayo is made with soya oil and rice vinegar - that is compatible with the rice vinegar and soya products found in all sushi recipes. North American mayo's white vinegar presents a contradictory flavour.
2 tsp Tobiko
Flying fish roe, Lump fish roe and Capelin (masago) roe are O.K. substitutes but Tobiko is the best.
1/2 tsp Mirin
Sweet Japanese Cooking Rice Wine - the amount here will allow you to determine the overall sweetness.
2 tbs Negi
Finely chopped green onions.
1 tsp Lemon Zest
Adjust the tartness level up or down with this ingredient.
3 oz Tuna
May substitute with previously frozen salmon or Hamachi (yellowtail).
2 tbs Tenkasu
Crunchy bits of fried tempura batter. A line of Tenkasu adds a delicious textural touch to this mix.
(WARNING adding this will double the fat content of the recipe!)
Mix all of this together. The mayo cuts the spice somewhat, so if you want it hotter, leave out or reduce the mayo.
Assemble the roll in the size you like, from small to large, or use in a sushi cone.
Soy protein is of the highest quality, but without the cholesterol and saturated fat. It can be the sole source of protein, without causing any nutritional imbalance.

5 Common Mistakes To Avoid When Making California Rolls
• Adding too many filling or ingredients inside your roll will confuse your taste buds. Stick to one vegetable with crabstick.
• Drowning your roll in soya sauce or wasabi is a taste-spoiler. Just a little drizzle is enough to get the perfect balance of flavors.
• Buying cheap quality or the lower price imitation crab is a no-no. They cost less anyway so it’s better to pick a trusted brand.
•Using other rice variety instead of Japanese short-grained rice ( click to see my favorite rice brand) will give you a tough time as the grains will not stick properly. Buy it online or from an Asian grocery store.
• Storing leftover California Rolls in the refrigerator is not recommended as the rice will harden and not taste good. So, make only as much as you can consume for dinner.
How to make a California roll
Cover the bamboo mat
Wrap your bamboo mat with plastic wrap.
This is necessary to prevent rice from sticking to the mat and to allow easy clean up between rolls. You only need to do this once before you start making sushi, and replace it once finished – the surface is now much easier to clean in between rolls with a kitchen or paper towel.
Take a nori sheet, and break it in half. If it doesn’t break easily, you can toast it for a few seconds or use scissors to cut it. Place one half on the mat, with the shiny side facing down. In this example I actually used the entire nori sheet to get a larger roll, although it’s more common to use half.
Grab a handful of cooked and seasoned sushi rice (at room temperature), and spread it gently over the nori – about 1 cm high.
There’s no need to press the rice down onto the nori, only spread it to cover the sheet. Cover the entire sheet if you are using half a nori, and the about 80% of it if you are using a full nori.
Anything on top?
Sprinkle a spoonful of Masago or sesame seeds evenly over the top half of rice if you are using a full nori, or on all of it if you are using half a nori sheet.
The old Fliparoo
Flip the nori so that the rice is now facing down on the bamboo mat. Next we are going to place the ingredients on top of the nori (and not the rice).
First the crab sticks
Line up the crab sticks along the close end of the nori. The ones I have in the picture below are perfectly shaped for sushi. You might have to cut yours to fit it well into the roll.
Then the avocado
Next to it, line up 1-2 thick slices avocado. You can use as much avocado as you want – just remember you need to be able to close the nori around it so don’t over do it.
Tip – if you’re not serving the dish immediately, you might want to squeeze a few drops of lemon on the avocado, to prevent it from turning brown.
Now simply Roll it inside out. You can find detailed instructions on how to roll inside out sushi here. Cut into 8 equal pieces. For best results first cut in half, then cut each half into two, and then again.

How to Make It

Using a plastic bag is a lot easier to clean, but you can also marinate the meat in a glass container and put plastic wrap over it too.
- Add all the marinating ingredients into the plastic bag.
- Add the outside skirt meat to the bag.
- Mix well.
- Place the meat in the refrigerator for minimum 4 hours.
Marinating the meat overnight is best. The flavors will not develop as fully if you marinate the meat less than 4 hours.
Great Idea! Marinate the meat the night before, then take out and cook. Makes cooking easier and faster.
Heat up the oven. It’s fry time. French fries, that is.
Oven baked fries work great for California Burritos. However, you can fry them as well.
Yes, you can use sweet potato fries instead. They will add some sweetness.
Cook on each side for 6-8 minutes for medium-rare meat. Look for the grill marks before turning.
(130 to 135 degrees on an instant-read thermometer)
How to Cook Skirt Steak in the Oven:
- Place the steak on a baking sheet.
- Broil for about 5-6 minutes. You will see the meat change to a golden brown.
- Flip and place under the broiler for another 5 minutes for medium-rare.
- Let rest before slicing.
- Once it is done cooking, let the meat REST. 10 minutes.
- Tent it with aluminum foil while you’re doing this.
If you cut into the meat while it’s fresh off the grill, the juices will run out, leaving you with a dry chunk of a meat.
Slice it as thinly as possible.
- Refried Beans
- Red Salsa or Green Salsa
- Shredded Cheese
- Sour Cream
You can use as many or as little of these as you like.
Other ingredients you can add:

- Add a healthy portion of the sliced meat
- Add a healthy portion of the french fries
- Mexican red salsa or Salsa verde, whatever you prefer
- Sour Cream
- Shredded cheese
You’re going to need a very large tortilla. Look for the burrito-size tortilla at the store.
If you can’t find them, use a regular-sized tortilla, but add less of the fillings.
How to Cook from Frozen
Bake: Remove the California Burritos from the foil and place on a baking sheet.
Bake for 35-40 minutes in 400 degrees.
Test the inside. If it needs more cooking, place back inside the oven for another 5 minutes.
Microwave: Remove the California Burritos from the foil paper.
Microwave for 4 minutes, or until warm. For a crispy tortilla texture, place under the broiler or pan sear for a few minutes.
