A nice and nutritious bowl of fruit salad can always benefit from a bit of a flavor boost. Turns out, all it takes is two teaspoons of vanilla extract.

Ingredients

  • 2 Cups strawberries, halved
  • 1 Cup blueberries
  • 1 Cup fresh or canned pineapple chunks
  • 2 kiwis, peeled and sliced
  • 2 Teaspoons McCormick® All Natural Pure Vanilla Extract

Directions

Mix fruit and vanilla in large bowl.

Cover.

Refrigerate 1 hour or until ready to serve.

1 (29 ounce) can peach slices-. Reserve about ½ of liquid
1 (20 ounce) can pineapple chunks, in their own juice- Reserve about ½ of liquid
1 11-ounce can mandarin oranges- Reserve about ½ of liquid
1 small box (3.4 ounce) box vanilla instant pudding mix*
1 lb. fresh strawberries (quartered)
1/2-pint fresh blueberries
1-cup fresh seedless grapes
2 bananas, sliced and added just before serving

In a large bowl, combine peaches, pineapple and mandarin oranges and ½ of liquid from each can.
Add vanilla pudding. Mix gently but well until pudding is dissolved.
Stir in fresh fruits strawberries, blueberries and grapes.
Chill. Slice in bananas just before serving.

The fresh fruit can be varied by season. Optional: Top with toasted coconut, chopped pecans or whipped cream and garnish with mint leaves.
