I put the sweet cottage cheese in a large bowl. I beat the eggs with the sugar, vanilla sugar, essence, lemon peel, baking soda, cinnamon, oil, then I added them over the cheese and mixed well. We start to pour the flour little by little and mix until it is incorporated ... We put as much flour as necessary so that the dough is not sticky and we can shape it in our hand (we take a spoonful of dough, we pass our hand through oil or flour so as not to stick and make a ring). From my composition resulted 26 papanasi ... and about 20 beans. We fry them in hot oil and in abundance, in order for them to manifest and rise to the surface! We take them out on a kitchen towel to drain the excess oil and serve them hot or cold with sour cream and jam!
