RECIPE PREPARATION Vegetable meatballs:

Clean and wash the vegetables. Put the rice to boil. Cut the onion into thin slices, the carrot, the zucchini are put on the grater with small meshes, the mushrooms are chopped into slices. Finely chop the pepper. Put 3-4 tablespoons of oil in a pan, put it on the fire and add the vegetables to cook. When they have softened, add the chopped chickpeas and boiled rice. Stir and season with salt and pepper. Add spices: basil, oregano and marjoram to taste. Allow to cool and place in a larger bowl and add breadcrumbs until slightly thickened. Put baking paper in a tray and form the meatballs that are placed in the tray. Put them in the hot oven until they are browned on each side. When they are cooked, take them out and serve them hot with ketchup.

Add salt, spices and olive oil. Mix with clean hands until the ingredients are homogeneous and a well-bound paste results.

Mix a few tablespoons of breadcrumbs and oat bran in a bowl. You can also add seeds, such as sesame seeds, to this mixture.

Take the composition with a teaspoon and roll the vegetable paste through the mixture of breadcrumbs and bran, shaping it in the palms in the form of balls, smaller or larger, as desired.

Fry the meatballs in hot oil. If you are not allowed to eat fried foods, you can bake the meatballs in the oven, placing them in a tray lined with baking paper, sprinkled with a little olive oil.

If you choose to fry them, take them out on a plate on which you have placed paper towels to absorb excess oil. After they cool, you can keep them in pans in the refrigerator. You can serve them with a salad of beets and horseradish, with a puree of roots, rice, pasta or other fasting dishes.

To the list of ingredients you can add other vegetables, such as zucchini, bell peppers or roots (parsley, parsnips, etc.).

Meatballs with vegetables

For a while I discovered the wonderful Turkish cuisine and I can say that I fell in love with it. Besides the fact that the recipes have a lot of vegetables, I find it absolutely wonderful that I don't cook pork because I'm not a big fan of it.

The recipe below I discovered on a group of recipes of Turkish origin, called Patates kebabı and as soon as I saved it I tried it. It is very good, and the combination of meat and vegetables is a success. The original recipe was with chicken or turkey but I used beef, you know that the meatballs did not come out dry at all, they were juicy and soft even if I used beef. You can even use a combination of beef and chicken, that's fine.

Basically, a wreath of meatballs, eggplant slices is formed and peppers, garlic and tomatoes are placed in the middle. Add more tomato sauce and a few pieces of butter. The only thing I want you to keep in mind is the size of the meatballs, I didn't know how big they should be and there are a few left that I put in the middle.

This dish can be served with rice or bulgur, we served it with rice.

Meatballs with vegetables

  • 500g minced beef, chicken or turkey
  • 2 tablespoons breadcrumbs

  • 200 ml mashed tomatoes

For a start, peel the eggplant and cut it into not very thin slices, sprinkle with salt and let it sit for a while. I advise you to choose a long and thin eggplant as a shape, but if you can't find it, then the slices must be cut in half (that's how I did it).

Until the eggplant stays, prepare the meatballs, mix the meat with the eggs, the breadcrumbs and add salt and pepper. We form larger meatballs that we place on a plate.

Preheat the oven to 180 degrees Celsius.

Peel the potatoes and cut them into thicker slices.

We cut the peppers into cubes as well as the tomatoes. Peel a squash, grate it and slice it.

In a round tray we put a little oil and form the preparation: on the edge we put a meatball, a slice of potato, a slice of eggplant, and so on until we form a crown. As I wrote above, I made the meatballs smaller and there were a few left that I put in the middle.

In the middle we put peppers, tomatoes and garlic. Pour the mashed tomatoes on top and from place to place put the pieces of butter.

We cover the tray with an aluminum foil and put the tray in the oven for an hour and a quarter (because we are talking about Romanian beef). If you use chicken, 40 minutes is enough.

After 1.15 hours we take the foil and let it fry nicely on top for another 20 minutes.

We serve food with rice or bulgur.

  1. The millet is washed and left to hydrate in water with a little lemon juice (ideally, the millet is hydrated for 8 hours).

  12. Put the tray in the preheated oven and bake the meatballs over medium heat until lightly browned (possibly, they can be turned on the other side, to brown evenly).
  13. The meatballs are left to cool in the tray, after which they can be transferred to plates and served as such, or with different sauces and salads of your choice.

Extrasfat: if you try to take the meatballs out of the pan as soon as you take them out of the oven, they will crumble because they are very fragile. As they cool, they stiffen.

How do we make the best Mexican meatballs?

For the best Mexican meatballs with vegetables, it is important to have enough vegetables and the right flavors. For this reason I added zucchini. I scraped it and drained the juice to take advantage of its taste without obtaining a too liquid composition. I also put onions, garlic, hot peppers and Parmesan for taste.
