How to prepare avocado mayonnaise fasting mayonnaise recipe (vegan)

I cut the 2 avocados long, I removed the seeds that I did NOT throw! Keep at least 1 stone because we need it at the end. I took out all the avocado pulp (with a spoon or a knife) and placed it in the bowl of the processor robot with knives. You can also use a hand blender. I immediately put 2 teaspoons of freshly squeezed lemon juice, a pinch of salt and 2 teaspoons of plain mustard. Also from the beginning I put the green parsley and 2 cloves of garlic (you don't put the garlic yet if you don't know if you like it that way).

I processed everything for a few seconds and started gradually adding the oil, spoon by spoon, turning on the robot and turning it off for a few seconds. Avocado mayonnaise is mixed until we get a fine, velvety, creamy cream. You can also use olive oil but it has specific taste and flavors that change the final taste of the dish.

I tasted mayonnaise and added a little salt and lemon juice. You can put the garlic at the end if you crush it finely with a press. Or don't put it on at all.

Preservation and serving of fasting avocado mayonnaise (without raw eggs)

I have to tell you that this avocado mayonnaise is sensational! It is not necessarily a fasting product. A perfect dip for nachos or crackers or a salsa only good to serve with grilled meats, grilled shrimp or other seafood.
