Arctic Char with Chinese Broccoli and Sweet Potato Puree

Ingredients

  • 3 red-skinned sweet potatoes (yams; about 2 1/2 pounds)
  • 1 teaspoon (or more) hot prepared Chinese mustard
  • 1 1/2 teaspoons soy sauce
  • 1 pound Chinese broccoli or broccoli rabe (rapini), *large outer leaves removed, cut crosswise on diagonal into 1/4-inch-thick slices
  • 2 slices bacon, cut into 1-inch pieces
  • 2 teaspoons yellow mustard seeds
  • 4 5-to-6-ounce arctic char fillets
  • 2 tablespoons vegetable oil, divided

Recipe Preparation

  • Preheat oven to 400°F. Wrap sweet potatoes individually in foil. Roast until tender, 1 to 1 1/2 hours. Cool and peel. Puree in processor until smooth. Measure 3 cups puree and transfer to microwave-safe bowl. Stir in mustard. Season with salt. DO AHEAD: Can be made 1 day ahead. Cover and chill. Boil vinegar in small saucepan until reduced to 1/3 cup, about 8 minutes. Stir in soy sauce. Remove from heat.

  • Cook broccoli in pot of boiling salted water until crisp-tender, about 1 minute. Drain; set aside. Cook bacon in medium skillet over medium heat until edges are crisp. Transfer to paper towels to drain. DO AHEAD: Reduction and broccoli can be made 2 hours ahead. Let stand at room temperature.

  • Process mustard seeds in spice grinder until coarsely ground. Sprinkle fish with salt and pepper. Sprinkle ground seeds over top of fish. Heat 1 tablespoon oil in large skillet over medium-high heat. Add fish, mustard side down, and cook until brown and just opaque in center, about 3 minutes per side.

  • Meanwhile, rewarm puree in microwave until heated through. Heat 1 tablespoon oil in another large skillet. Add broccoli and bacon; sauté until heated through. Season with salt and pepper.

  • Divide broccoli, fish, and puree among plates. Drizzle with balsamic reduction and serve.

Glazed Grilled Salmon

3 Tbsp packed brown sugar
4 tsp prepared Chinese style hot mustard or Dijon mustard
1 Tbsp soy sauce
1 tsp rice vinegar
2 7-8 oz salmon steaks (about ¾ inch thick)

Prepare barbecue to medium high heat. Combine brown sugar, mustard and soy sauce in medium bowl and whisk to blend. Transfer 1 Tbsp glaze to small bowl mix in rice vinegar and set aside. Brush 1 side of salmon steaks generously with half of the glaze in the medium bowl. Place salmon steaks, glazed side down on the grill. Grill until glaze is slightly charred – about 4 minutes. Brush top of salmon with remaining glaze from medium bowl. Turn salmon over until second side is slightly charred and salmon is just opaque in center – about 5 minutes longer. Transfer salmon to plates. Drizzle with reserved glaze in small bowl and serve.

From a no-hassle soup (that our office is obsessed with) to a speedy chicken tikka masala, here are the 12 trusty meals I turn to when I’m in a pinch (and please share yours!)…

If you have rotisserie chicken and a can of beans, you’re well on your way to a delicious pot of Italian soup. This quick recipe calls for a glass of red wine to celebrate.

Transform store-bought dough into a creamy mess of a white pizza, with scallions, Pecorino Romano cheese and eggs.

Take your pasta game to a new level with tomatoes, roasted garlic and basil.

It can be hard to find motivation to cook a fish dinner after a hectic day, but this quick lemon-honey Arctic char with citrus sauce is an exception. The meal also tastes delicious with trout (follow the same cooking instructions) or salmon (broil it without the sheet pan trick noted). Serve with steamed broccoli and whisper “ta-dah” as much as you like.

Ingredients

Preparation -- 45 minutes

PEEL the potatoes and cut them into big chunks. BOIL for 20 minutes, check with a fork if they’re done. Meanwhile, peel and cut the shallots and garlic cloves set them aside.

Make a puree with the potatoes, be sure it’s a smooth puree without lumps. I prefer using a fine sieve, running the potatoes trough using a big spoon.

Season with salt and pepper. DUST your hands and work surface with flour. MIX in the egg yolks, parmesan cheese and all-purpose flour, do so by using your hands to form a dough.

The dough will be a little bit sticky. Divide the dough into equal pieces and roll into 0,5 inches thick rolls. CUT the rolls into small pieces and use a fork to make them into pretty looking gnocchi.

Press with your thumb and roll them a bit forward so you will get a ribbed pattern. This way the sauce will adhere better.

When you put the gnocchi on a plate, be sure to use a little flour to prevent them from sticking together.

Gnocchi with tomato sauce

Cooking the gnocchi -- 10 minutes

BRING a large pan with water and salt to a boil. Sauté onions and shallots in a skillet. Add the canned tomatoes after a few minutes and bring to a boil.

Puree the tomato sauce, season with salt, pepper and a little bit of chilli powder. BOIL the gnocchi for just a few minutes.

Be careful not to overcrowd the pan, otherwise, the result is one sticky gnocchi instead of the beautiful little ones you created. You will notice the gnocchi will float when they're done.

MIX the gnocchi with the sauce and add some extra parmesan cheese, enjoy!


Lemongrass Turkey Rolls

In a bowl, mix 3 tablespoons potato starch with 1 cup water, add the turkey, and soak for 1 hour. Place the meat in a colander and wash off the starch under cold water, stirring with your hand. Set aside to dry.

Transfer the turkey to a bowl and add the garlic, curry powder, ginger, lemongrass, 1 egg, 3 tablespoons potato starch, pepper, salt, and sugar, and stir until combined, adding 1/2 cup oil at the end. Mix thoroughly and marinate in the refrigerator for 2 hours.

Place 1-inch-diameter log of turkey mixture down the center of a spring-roll skin, roll tightly, and brush the end flap with the remaining beaten egg to seal. Repeat with the remaining ingredients.

Heat 2 inches oil to 275 degrees in a large shallow pan, add the rolls in batches, and deep-fry for 7 minutes. Increase the temperature to 350 degrees, and fry until the skins are crisp and golden. Drain on paper towels, trim off the ends, and cut the rolls into 1-inch pieces. Serve with citrus sauce or hoisin sauce.


8. Cauliflower Asian-Style

Cauliflower is not the vegetable commonly used in Chinese dishes but it should be. The florets give you a crunchy, chewy texture and are amazing covered in the flavorful sauces. This Cauliflower Manchurian is a fusion of Chinese and Indian flavors. Cauliflower can stand in for chicken or tofu in dishes like this Orange Cauliflower and Sweet and Sour Cauliflower. Recipe Summary

  • 2 large sweet potatoes, peeled and cubed
  • 3 tablespoons olive oil
  • 2 teaspoons packed brown sugar
  • 1 ½ tablespoons paprika
  • ½ teaspoon ground black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon poultry seasoning
  • ½ teaspoon chili powder
  • 1 pinch cayenne pepper

Preheat an oven to 425 degrees F (220 degrees C).

Place the sweet potato chunks into a large mixing bowl. Drizzle with the olive oil, then sprinkle the brown sugar, paprika, black pepper, onion powder, garlic powder, poultry seasoning, chili powder, and cayenne pepper overtop. Toss until the potatoes are evenly coated with the seasoning. Spread onto a baking sheet.

Bake in the preheated oven for 15 minutes, then turn the potatoes over with a spatula, and continue baking until the sweet potatoes are golden and tender, 10 to 15 minutes more.
