Vanilla cream cake and fruit

Mix 3 egg yolks with oil and sugar, add grated orange peel, ground walnuts and gradually, sifted flour with baking powder. At the end, gently incorporate the 7 beaten egg whites. Pour the composition into a baking dish lined with baking paper and place in the preheated oven, on a suitable heat, for approx. 45 minutes or until the toothpick test passes.

For the cream, boil the milk with the sugar and vanilla pods, over low heat. Separately, rub the yolks with the starch and a little cold milk, then slowly pour in a thin thread, the hot milk, stirring constantly so that it does not cheese and let it boil over low heat, stirring constantly, until it reaches the consistency of a cream. Remove from the heat and stir until cool, then add the soft butter.

Cut the top into two horizontal slices, place the bottom top on a plate, pour half of the cream on top, add the fruit, then the rest of the cream and cover with the second slice of the top. Leave the cake in the fridge for 2 hours.

Melt 300 g milk chocolate on a steam bath and spread it on a baking paper the size and height of the cake. Let it harden.

For the glaze, scrape the chocolate, mix it with the milk and heat the composition in a bain-marie, until the chocolate melts and begins to bind like a cream. Take it off the fire. Let it cool a bit, then rub with butter and pour it over the cake. Detach the chocolate sheet from the paper and coat the cake. Garnish on top with fresh fruit and chocolate chips (but I chose to use pralines).

Leave to cool for a few hours before serving.

Vanilla Cream and Fruit Cake

  • For the burnt sugar syrup, caramelize 80g of sugar until it is melted and turns golden. Add 150-200ml of water and boil them together until the sugar is melted. You can flavor the syrup with rum or vanilla, depending on your preferences. The syrup is used cold to syrup the top. Be careful not to burn the sugar, the syrup will become very bitter.

  • a Belbake vanilla cake top
  • 4 yolks
  • 100g old
  • 40g faina Castello
  • 350ml milk Pilos
  • a pinch of Castello salt
  • the core of a Belbake vanilla pod
  • 300g fresh berries

In a large bowl put the yolks, caster sugar, vanilla bean core. Mix very well with the mixer, about 10-12 minutes at high speed, until we have a cream the consistency of an ointment, in which the sugar granules can no longer be felt. The yolks must become whitish and double in volume. Add the flour and mix very well with the mixer. We also add the milk, which must be warm. Pour the milk into a thin thread, stirring constantly with the mixer.

Put the cream obtained on the fire, in a steam bath or in a double-bottomed pan. Boil the cream over low heat, stirring well, so that it does not stick to the bottom of the pan. The cream is ready when it has the consistency of a pudding. As it cools, it will harden more and more. We put the hot cream in a bowl and cover it with food foil, so that the foil reaches the surface of the cream. This way the cream will not crust.

When the cream cools to room temperature, leave it in the fridge for at least 2 hours (preferably overnight) before use.

To fill the cake, we syrup the tops with fruit juice or burnt sugar syrup. We put a generous layer of vanilla cream and a generous layer of assorted berries. Maybe you've thought a lot about eating a good slice of cake, I don't know which one is not necessarily special, but it should be good. Look, I found the cake:) as simple as it is good. Really very good. And this is what not only I say but also my husband who is not a lover of sweets :).

  • 6 eggs
  • 150g sugar
  • 60g flour
  • 2 tablespoons hot water
  • 1 sachet of vanilla sugar
  • 1 vanilla pudding
  • 400ml milk
  • 200g butter 80-82% fat
  • 150g old powder

1. Preheat the oven to 180g C

2. Prepare the top, mix the yolks well (until the sugar melts and the mixture increases in volume) with half the amount of sugar, and 2 tablespoons of warm water.

Separately beat the egg whites until stiff and then add the rest of the sugar, vanilla sugar and mix until it melts.

In the mixture of yolks, gradually add the flour, mixing lightly with a spoon over your head and then the egg whites, stirring in the same way until you obtain a fluffy composition.

Bake the top in the large pan on the stove (lined with baking paper) for 15-20 minutes. For more safety, test with the toothpick.

Remove the worktop and let it cool.

3. Until the top is baked, prepare the syrup, boil the water with the sugar, let it boil for 2-3 minutes and then add the vanilla essence.

4. Prepare the cream, prepare the pudding according to the instructions on the envelope and let it cool covered with a plastic wrap so that it does not crust.

Mix the butter well with the powdered sugar.

Gradually add the cooled pudding and mix. At the end you can add a little vanilla essence.

5. We cut the top in 3 lengths I had a tray of 40 & # 21530 cm so I got 3 pieces of 13x30cm.

A sheet of countertop (syrup), cream, banana slices sprinkled with a little lemon juice not to oxidize, cream (in a thin layer just enough to cover the fruit).

Then top (syrup), cream, kiwi slices, whipped cream (in a thin layer just enough to cover the fruit).

Let it cool for 1 hour and then cut 1.5 cm slices (it's enough because it's consistent) with a sharp knife soaked in warm water.

Strawberry shortcake with vanilla cream

Since June 1, my little boy has said that he wants me to make him a cake, as good as only I know how to make. And be one with chocolate and strawberries. Obviously, in such a way of "posing the problem" we immediately fulfilled his wish and improvised a cake that we all enjoyed in the end.

I tried to make a tasty and good-looking cake but at the same time easy to make and economical. That is, in the spirit of the recipes I have become accustomed to so far. And a came out strawberry cake and vanilla cream very tasty which, at least we really liked. All you have to do is try the recipe and tell me what you thought.

When I started making the cake, I started with the thought of making a strawberry cake, but it is covered with marzipan and since I didn't have it in the house, I rethought the whole recipe and I came up with what you will see next.

I made a genoise rockwhose recipe is very simple and easy to put into practice because the eggs are beaten whole and for that you need a mixer with a fixed bowl, like this one here, which does the job for you so you can save time and you make cream for example. I told you, to make this cake you really don't have to spend much time in the kitchen.

Vanilla cream I combined it with a little mascarpone because I don't really like mousseline cream with butter. In addition, because I had to use strawberries and I did not have so many available, I combined it with 150 grams of strawberries mashed and cooked 5 minutes beforehand, along with a little sugar.

As I had to use some chocolate, this being the "customer's requirement", I covered the cake with a chocolate ganache. Simple, fast and tasty, I assure you! Chocolate goes very well with strawberries!
