In the food processor we put 100 grams of dried cashews (or other nuts, whichever you prefer) and 80 grams of dates. Finely chop them and add 2-3 tablespoons of soy milk, coconut milk or water to homogenize the composition and make it sticky. This mixture is poured into a small form with removable walls and leveled.
In the blender we put 150 grams of hydrated cashews (kept for 2 hours in water) and coconut milk at the level of cashew beans, no more. Mix until you get a fine cream. Depending on how much liquid you put, it will be thicker or thinner, so it is better to put less coconut milk at the beginning, so that the cream does not come out too soft. Add 3-4 teaspoons of raw sugar from sugar cane (or other type of sweetener), vanilla, lemon peel, lemon juice and coconut flakes. Pour this cream over the cashew and date top and garnish with coconut flakes.
The coconut inside thickens the cream more because it absorbs liquid, but it takes time. I should have left it in the fridge overnight, but I couldn't wait, so it's a little soft. Leave in the fridge overnight (or as long as our heart allows) and serve cold. It's a DE-LI-CIU. It can compete at any time with confectionery cakes and no one will guess that you don't have butter in that cream. You have something sweet full of nutrients.
