What do you think about organic coconut sugar?

Hello Cristela! What do you think about organic coconut sugar?
So far I have used honey for tea and reading your article I was thinking of replacing it with the coconut sugar I have at home but I have never used it…

My dear, thank you for the question. Sometimes about some organic products I think they make us sick, but for more money /> />

Dr. Brucker, a colossus of soul, character, and professionalism, led the German Health Alliance and said that sugar is sugar, whatever its clever name is.

Coconut sugar is an extract from coconut, so not a whole and precise product like the one you have is obtained through industrial processes, just like not in the sun.

I use for cakes: well-ripened bananas, with brown skin, mashed dates or prunes, leaves (not powder) of stevia rebaudiana. For things made without fire, without heating, I use acacia honey.

Detectives in Nutrition: What do labels hide? Trans fats

That's how I came up with the idea for this series and the article about trans fats.

Because most of the trans fats we consume are human inventions. No matter how hard we try to hide behind our finger, we must admit that we are knowingly hurting ourselves, sometimes ignoring our health and information, which although we know, we choose to ignore.

In the late 1800s a chemist came up with the idea of testing vapor hydrogenation. A decade later, his idea was taken up by another chemist, who tried to hydrogenate vegetable fats. And so, trial after trial, the product we know today as… was invented. margarine.

And because this new product on an enthusiastic market offered a cheaper alternative to animal fats that were harder and more expensive to obtain, trans fats have taken off.

What's the trick with trans fats?

The advantage of trans fats is that they delay the rancidity of the vegetable oils from which it is formed. In addition, the products, although they have a lot of fat, do not have an oily taste.
The food industry uses them to soften doughs and due to long shelf life. Fast foods and many restaurants use them for fried products

The reason?
Trans fats can be reused, cost less, the profit for the producer is higher. A beautiful label, a cart of money on promotion and investment is recovered in time with a peak and thick. Not the other way around, but these products last on the shelf for 12-18 months.

Elementary, isn't it, my dear Watson?

What are trans fats?
Summarizing the chemistry lesson, we can say that a hydrogen molecule is added to a vegetable oil and the substance goes through a hydrogenation process. From the liquid state, it becomes solid, it changes its texture and with it, some of the properties of that oil.

The result: a solid, stable compound with a very long life to expiration.
Theoretically all good and beautiful, practically - its results on our health are neither good nor beautiful.

There are also trans fats that occur naturally in whole milk and fatty meat of ruminant herbivores but their proportion is extremely small, compared to the quantities we find concentrated in commercial products.

Why aren't trans fats good?
Trans fats are associated with heart disease and diabetes. They also affect the balance of cholesterol in the blood. Moreover, the long consumption of trans fats has its role in the emergence obesity, strokes, joint diseases and even a aggressive behaviors.

Where do we find trans fats?
This is where your work as a nutrition detective begins.

Trans fats can be detected in: fast food french fries, frozen doughs and semi-finished products (including pizza), biscuits (sweet and savory), rolls, wafers, already baked cake tops, envelope soups, cinema popcorn, microwave and cakes "Fast" whose technological process is: empty the dust from envelope 1, mix it with the dust from bag 2 and voila, you have a cake that promises smiles, happiness and beautiful children.
We all know it's not like that…

In general, on the labels we find them under the name of: hydrogenated vegetable oils, partially hydrogenated, trans fats or margarine.

How do we avoid trans fats?

We make cakes and potatoes and biscuits and soup at home: with butter, nuts, natural oils, lard.
They are all healthier than trans. Used, obviously, in moderation.
It's simple. All it takes is goodwill, perseverance and food re-education.
For the sake of demonstration and good taste, today Ama makes simple, sweet cakes, full of good fats, which are not nauseating, but delicious.

Walnut cake
Ingredients: 1 handful of dried dates, 1 handful of hydrated raw nuts (any type of nuts or seeds you like: Romanian nuts, almonds, cashews, hazelnuts, macadamia), 2 tablespoons butter at room temperature or coconut oil , half a cup of unsweetened oatmeal, sesame and coconut (for decoration).

The walnuts are hydrated (cover with water and leave to soak overnight). The dates are cleaned of the seeds and pulsed in a blender until a homogeneous paste is obtained. Remove the paste that will take the place of sugar in a large container. Drain the walnuts and put them in the blender until they are crumbly. Add over dates. Add the rest of the ingredients (except the rooster) and mix everything by hand (or glove, if the little explorer is around). Then balls or other funny things are formed (you can press them into biscuit shapes: stars, popcorn, hearts, etc.), pass them through the coconut and refrigerate for 2 hours.
Then it is eaten.

6 reasons to eat dates more often + vegan Raffaello cheesecake recipe

I haven't always liked dates. Maybe because I didn't get it right. I still took dates and figs from different brands, but I always found them too dry and threw away half of it. Why did I buy them anyway? Because I needed their laxative effect. I refuse to take laxatives as supplements. Ever since I know myself I have tried to solve the problem as naturally as possible & # 8211 honey, plums, apples, dates, etc.

Recently, I started to like them too. Exactly since I discovered these SanoVita dates.

I'm different. Not only do they have no seeds (which is good for stinky people like me), but they are fleshy and tasty, not dried shells on a stone, a tasteless fruit. On this occasion, I started consuming them more often, even as a sweetener in various cold dishes. Why not consume them if they are so beneficial to the body? You have at least 6 reasons to consume them more often.

Satisfy the craving for sweets in a healthy way

I started with that, because that bites me the hardest. I need sweet food and I try to give myself a healthier sweet in the 2-3 days a week I fast. Dates are a good choice in this regard because they are sweet, but contain natural sugars. Obviously, that doesn't mean you can eat 200 grams a day. It also thickens dates, don't imagine that it doesn't, but it doesn't compare to a piece of chocolate.

Dates are used as a sweetener in vegan desserts and children's desserts. At the end of the article, I prepared a recipe for super vegan cake ready in 20 minutes, based on coconut, cashews and dates.

They contain a high dose of iron

Dates should be on the list of foods recommended for people with anemia. They contain a large amount of iron and calcium, helping to stimulate the production of red blood cells. That means a stronger immune system. A few dates become a perfect natural energizer for the moments when we feel tired or lacking in energy.

I'm a good laxative

Especially since you should not drink a bitter tea (like buckwheat) or swallow pills that have side effects with merciless. Dates taste good, you eat them with pleasure and they do their job very well because they have a high fiber content. Moreover, dates stimulate the development of those healthy bacteria in the intestines and increase the ability to absorb nutrients from ingested food.

Decreases the risk of heart disease

Due to their high potassium content, dates are a reliable ally in the fight against cardiovascular diseases. It greatly reduces the risk of heart attack and positively influences blood circulation. Not only do they have no cholesterol, but they also help lower the level of bad cholesterol in the body. If we add the benefits of magnesium in terms of regulating blood pressure, we can already name the cardiologists.

They strengthen the skeletal system

With age, the body begins to squeak here and there, through the essential points. The skeletal system is among the first to be affected. And regular consumption of dates and other foods rich in selenium, manganese, copper and magnesium can help. A snack consisting of a few dates and a few pieces of cashews will certainly help strengthen the bones and protect them from painful diseases such as osteoporosis.

Protects the nervous system

People who suffer from anxiety or panic attacks or simply go through a very stressful period at school or work should not miss the dates in the diet. The combination of magnesium with potassium and B vitamins is very beneficial. The ability to concentrate and memorize increases, we face challenges more easily, but without giving us the state of tension and anxiety.

Did I convince you to eat dates more often? If not, they also come with a recipe dedicated to lovers of sweets who hardly swallow dried fruits, nuts (healthy foods in general). It is a vegan Raffaello Cheesecake, super easy to prepare, without fire, based only on healthy ingredients and super super tasty. And that's what a woman who loves high-calorie desserts, with cream, chocolate, all the worst. I couldn't believe what I could do in 20 minutes either. And it's fasting too!

This is what the final preparation looks like. It's my first cashew cake cream. Everyone in the house thought I was lying when I told them what I had put in it and that it was fasting. It's not too good-looking because I hurried to cut it the night I did it. I was dying for appetite. There was NOTHING left for the next day.

What do we need for this cake? 250 grams of cashews, 80 grams of pitted dates, coconut flakes, a little soy milk (but you can replace it with water), vanilla, lemon peel, juice of half a lemon, coconut milk , vanilla and raw sugar for cream, to taste.

In the food processor we put 100 grams of dried cashews (or other nuts, whichever you prefer) and 80 grams of dates. Finely chop them and add 2-3 tablespoons of soy milk, coconut milk or water to homogenize the composition and make it sticky. This mixture is poured into a small form with removable walls and leveled.

In the blender we put 150 grams of hydrated cashews (kept for 2 hours in water) and coconut milk at the level of cashew beans, no more. Mix until you get a fine cream. Depending on how much liquid you put, it will be thicker or thinner, so it is better to put less coconut milk at the beginning, so that the cream does not come out too soft. Add 3-4 teaspoons of raw sugar from sugar cane (or other type of sweetener), vanilla, lemon peel, lemon juice and coconut flakes. Pour this cream over the cashew and date top and garnish with coconut flakes.

The coconut inside thickens the cream more because it absorbs liquid, but it takes time. I should have left it in the fridge overnight, but I couldn't wait, so it's a little soft. Leave in the fridge overnight (or as long as our heart allows) and serve cold. It's a DE-LI-CIU. It can compete at any time with confectionery cakes and no one will guess that you don't have butter in that cream. You have something sweet full of nutrients. Well said who said that health tastes good.
