Fluffy croissants with chocolate

First melt the margarine with the sugar in a saucepan, over low heat or in the microwave for 1 minute. After the butter has melted, remove from the heat and mix well.

Mix eggs well with yeast in a bowl.

Add eggs over melted margarine, and then milk.

Add flour and lemon peel and knead well. The resulting dough is soft but not sticky to the hands.

Leave to rise for 30 minutes. I put it in the microwave with the door closed.

Spread thin sheets, cut and put finetti. The croissants should not be too big as they swell a lot.

Put in a tray lined with baking paper, grease with beaten egg yolk with 2 tablespoons of milk and sprinkle sesame seeds over them. I only sprinkled sesame seeds on a tray, I didn't put the rest on them.

Place in the preheated oven for 25-30 minutes or until nicely browned. But, they're done pretty quickly.

I got 3 trays of croissants.
