How to make Christmas fruit cake

First, I squeezed fresh orange juice and soaked all the dried fruit in it for 30 minutes. If you plan to use rum, add ¾ cup of rum and ¼ cup of orange juice and soak the dried fruit in it for about 1 hour.

Second, I mixed all the dry ingredients in a bowl.

Then I added vanilla extract and apple cider vinegar to the soaked fruit and mixed it.

Afterwards, I folded all the ingredients together with the oat milk and beat a soft sticky dough.

Subsequently, I put it with the spoon in the prepared pan and then I baked it in a preheated oven for 35-40 minutes or until the tester came out clean.

Once finished, I took it out and let it cool completely. Then I inverted this cake with dried fruit on a flat surface.

Voila! My whole house smelled delicious, the aroma was so appetizing.

We all enjoyed it. My kids liked it and they liked it every night all week after dinner. Of course, I did it without alcohol for them.

  • When mixing oranges in a blender, do not add liquid. We do not want the cake to have any liquid other than the one mentioned in the recipe to get the perfect texture. Just mix it as is. Oranges are watery in nature and mix even without adding water. Make sure you squeeze it very well and discard the pulp.
  • If you use rum, be sure to cool the cake completely, otherwise the rum may taste stronger when the cake is hot.
  • If you plan to use parchment paper, grease the pan first and place the parchment paper. However, make sure that you have shaped it exactly like the shape and size of the pan so that no extra paper remains. Also, on the sides, the parchment paper should be well placed and not hang from the cake tray.

It can be refrigerated for about 2-3 weeks in an airtight container.

We did it absolutely without oil, so we definitely save a few calories. I used dried fruits, which are natural sweeteners. However, I used brown sugar in this recipe, but as little as possible to keep the delicious taste intact. Therefore, I would say that this is a healthier version of the same traditional Christmas cake. However, it is dessert and should be enjoyed occasionally, as it is a bit difficult if you follow a calorie restricted diet plan.
