Cocoa muffins

In a bowl, mix the egg whites with the salt powder, hard foam, add the sugar with the vanilla bourbon sugar, then the rum. We add the yolks one by one, the melted and cooled butter, the milk, orange peel jam, and flour mixed with baking powder and cocoa powder.

Place the obtained composition in the forms of muffins and bake for about 20 minutes. We do the toothpick test.

Glaze : we put the chocolate and the oil in a bag that we keep in boiled water for 3-4 minutes. Remove the bag of chocolate from the water and let it cool a little, taking care not to harden. We cut a small corner in the bag. We remove the muffins from the paper in which they were baked after they have cooled completely and we place them in clean ones.

We form stripes over muffins, each as he wishes or we can leave them simple.
