Apple tart and puff pastry

I put them in the oven for max. 20-30 minutes on the right heat.

There are two different tart recipes, a classic tart & icircn in which the apples are placed on top of the dough, on a bed of quince jam, and the second tart with apples is an inverted tart, with coarsely sliced ​​apples and a sugar syrup. with butter that will deliciously glaze the tart after overturning.

How to prepare apple pie on top.

Unwrap the puff pastry and cut into 7-8 cm wide slices. Grow with a sharp knife to cut a groove around the dough, leaving a 5-6 mm edge on the outside, but be careful not to pierce the dough completely. This groove is interesting because it will delimit the edges of the tart, and the dough will grow more on the edge.

Glaze the dough with quince jam leaving the simple delimited edges.

The apples are peeled and stalks, sliced ​​thinly, and the slices are placed nicely over the quince jam, lightly passed, like a fan.

Sprinkle with lemon & acircie juice, sprinkle with sugar and cinnamon and place small cubes of butter in place, which will melt and glaze the apples nicely.

Bake the apple tarts at 180 degrees for 30-35 minutes.

To serve these apple tarts in the most delicious way, mix mascarpone with vanilla and yogurt flavored sugar. Decorate the hot apple pie with this yogurt cream. The cream will melt slightly and will glaze the tart nicely. Sprinkle a few mint leaves on top, for a taste and freshness.

Hello Larisa! I have not yet published the classic recipe for vanilla cream (creme patissiere) that fills choux a la creme or tarts. My recipe for vanilla cream is from 1 L of milk, 6 egg yolks, 200 g sugar (or 250 if you want sweeter), the core from a vanilla pod + pod (or 2 sachets of vanilla bourbon sugar), 70 g starch , a pinch of salt. Boil the milk with the vanilla bean until it boils well. Rub the yolks with salt and sugar until they become frothy. Add the starch and mix well. Temper this mixture with a pinch of hot milk, mixing well after each tranche (until all the milk is incorporated, thinning the composition). Pour the composition back into the pot in which the milk boiled and place again on low-medium heat, stirring constantly. It does not have to boil because it coagulates! It is enough to thicken and have a homogeneous appearance. Remove from the heat and pour into a clean bowl and cover immediately with plastic wrap placed directly on the surface of the cream. Apple tart and vanilla cream

INGREDIENTS

  • For classic tart dough:
  • 1 or

  • 150 gr butter with 82% fat
  • 1 pinch of salt
  • 50 gr vanilla flavored powdered sugar
  • For vanilla cream:
  • 2 medium egg yolks
  • 250 ml milk
  • 30 gr flour
  • vanilla (1 pod, or 2 teaspoons essence, or 3-4 sachets of vanilla sugar)
  • 1 teaspoon of salt
  • 50 gr butter
  • For the apple layer:
  • 720 gr grated apples
  • 1 teaspoon cinnamon
  • 30 gr butter
  • 30 gr biscuit breadcrumbs

METHOD OF PREPARATION


The simplest apple tart & # 8211 Tatin Tart

This tart is one of the simplest desserts and I like to prepare it in autumn and winter because it fits perfectly with these seasons. In autumn we find in the markets the best and tastiest apples, so it's the perfect time to bake a tart. This tart is the kind of cake you can eat with friends or family after a hearty dinner.

Caramelized apples are a delight and in my mind I always associate them with a cup of ice cream or a cream of mascarpone and cream.

For a tart with a diameter of 26 cm we need: 1 sheet of puff pastry, 10-11 suitable apples, 200 g sugar, 70 g butter, ½ teaspoon of cinnamon (optional).

If you do not want to use commercial puff pastry you can make a dough from: 150 g butter, 150 g flour, cold water. Put everything in a food processor and pulsate a few times.

In a saucepan (in which we bake the tart, choose one that does not stick to anything) put the sugar and caramelize it over low heat, then add the butter and mix until smooth. Meanwhile, peel and peel the apples and cut them in half. Place the apple halves next to each other, in the picture, until we cover the bottom of the pan.

Put the pan in the preheated oven for 10 minutes on high heat (about 200 degrees), then remove the pan from the oven.
From the dough sheet, cut a circle 2 cm bigger than the pan and prick the dough from place to place, with a fork, then place the sheet on top and insert the edges slightly inside.

Put the pan back in the oven for 35 minutes, 200 degrees Celsius, until the puff pastry is browned.
Remove the tart from the oven and let it cool for 5 minutes, then place a larger plate on top and turn the tart in a sudden motion.

For the mascarpone and whipped cream, mix 150 ml of whipped cream, 150 g of mascarpone, 2 tablespoons of powdered sugar and a little cinnamon until you get a thick cream.

Serve hot or cold tart with ice cream, vanilla sauce or mascarpone cream and cream.
