Crispy Buffalo Wings

Buffalo wings are always a crowd pleaser. Some like them mild, some prefer them spicy, but everyone likes them crispy, and Hungry Jack mashed potato flakes could be the secret ingredient you’ve been looking for to achieve the perfect crunch. Season a second time, then bake an easy four-step recipe that makes good use of the last of the potato flakes in the box.

Ingredients

  • Non-stick cooking spray
  • 1 stick butter, melted
  • 1 (5-ounce) jar cayenne pepper sauce
  • 1 Teaspoon celery seed (optional)
  • 1 1/2 Cup instant mashed potato flakes, such as Hungry Jack Instant Mashed Potato Flakes
  • 2 Pounds chicken wings, rinsed and dried

Buffalo Baked Chicken Wings (Super Crispy!)

At the risk of sounding a little grandiose, I’m going to make a bold statement here: Buffalo baked chicken wings deserve a renaissance.

Because before they were considered “bar food”, and before they became staples of late-night room service, poolside dining, and 99 cent menus everywhere — they were a delicacy. A craze. A uniquely American invention.

And while scholars continue to debate the dish’s true origins, and food writers make pilgrimages in search of revelation, us regular folks tend to forget what all the fuss was about. Chicken wings have become so ever-present, so standardized, that we’ve lowered our standards. “A wing is a wing”, we tell ourselves. And all wings are more-or-less “good”.


Recipe Summary

  • 12 skinless chicken wings
  • ¾ cup all-purpose flour
  • 1 tablespoon salt
  • 1 tablespoon ground black pepper
  • 1 tablespoon garlic powder
  • 1 quart vegetable oil for frying
  • ¾ cup hot pepper sauce (such as Frank's RedHot®)
  • 1 tablespoon butter

Rinse chicken wings in cold water drain and pat dry with paper towels.

Mix flour, salt, pepper, and garlic powder together in a 1-gallon resealable bag add chicken wings. Seal bag and shake to evenly coat chicken.

Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).

Remove chicken from bag and shake off any excess coating fry in the preheated oil until chicken is no longer pink in the center, about 7 minutes. Remove chicken with a slotted spoon and drain on a paper towel-lined plate.

Combine hot sauce and butter in saucepan over medium heat cook until heated through, about 5 minutes. Coat cooked chicken wings with sauce.


  1. Dry the Wings Thoroughly
  2. Coat the Wings with Baking Powder

Dry Wings: The chicken wings must be super dry before placing them in the oven. You can dry them by squeezing the wings with paper towels, or by placing them on a rack and letting them air-dry for hours. Or both!

Baking Powder: Baking powder (aluminum-free) is the secret ingredient to make the skins turn extra crispy in the oven. The baking powder changes the ph balance of the chicken skin, and helps to pull all the moisture out of it.


How to make these Easy Crispy Baked Buffalo Chicken Wings:

  • Be certain to have the wings absolutely dry before dreading in the seasoned flour (this will assure a crispy wing). You can use a paper towel to pat the wings dry.
  • Season your flour with the yummy spices I have added in the recipe. I am generous with the spice. If you want them milder, play with the spices.
  • After coating the wings I let them sit in the fridge for about an hour on a baking sheet that has been sprayed with nonstick cooking spray ( This gives a chance for the seasoned flour to really adhere to the wing) Okay, I have been in a pinch in the past and to for time sake, by-pass the sitting in the fridge. The wings were great but super crispy of they are allowed to sit in the fridge. Just an hour, make your buffalo sauce, blue cheese dressing, cut up some carrots and celery, put on some music and enjoy a cocktail of choice! Then relax and think about noshing on the extra crispy wings while you while wait, well worth it!
  • Preheat the oven to 425 degrees!
  • I give a quick spritz of non-stick spray to the tops of the wings before baking. I bake for about 25 minutes. remove the wings from the oven and dredge in the buffalo sauce. Back into the oven flip side up for about 15 -20 minutes. Then we devour these wings.

Baked vs Fried: This version of Baked buffalo wings are cooked in the oven instead of the deep fryer. At the right temperature and if thoroughly prepped ahead of time they’re just as crispy as the fried version. I toss the buffalo wings in a flour and seasoning mixture before letting the chicken rest and air out in the refrigerator before baking and tossing with buffalo wing sauce.

Why are they called Buffalo Wings?

Buffalo Wings were created in a restaurant in Buffalo, New York at a restaurant called the Anchor Bar in the 1960s. What used to once be a bar food is now they’re served at restaurants of all kinds ranging from casual to even high end.

The buffalo wing is the kind of bar food, game day food and even take out. More chicken wings are used in making buffalo wings than any other preparation in the United States. In fact during the Super Bowl, over 1 billion Buffalo Wings are consumed per the National Chicken Council. Buffalo wings are the kind of game day food.

Difference between a Chicken Wing and a Buffalo Wing?

Chicken wings generally refer to the entire wing portion connected at the joints including the tip. Buffalo wings are usually made up of the smaller drummette piece, flat wingette piece and the tip of the wing is discarded.

How do you make Buffalo wing sauce?

  • 2/3 cup Frank’s Red Hot hot pepper sauce
  • 1/2 cup unsalted butter
  • 1 1/2 tablespoons white vinegar
  • 1/4 teaspoon Worcestershire sauce
  1. Combine the ingredients in a small saucepan and whisk it together until combined and bubbling.

What to serve with buffalo wings?

  • We serve buffalo wings with celery and carrot sticks as a way to temper spicy flavors and to add extra texture to your plate.
  • Sauces: Along with Blue Cheese Dressing for dipping people will also sometimes use ranch in place of blue cheese dressing.

Slow Cooker Buffalo Wings

If you’d like to make these buffalo wings in your slow cooker add all the seasonings to the chicken wing pieces (skip the flour) and let it dry in the refrigerator. Add the chicken to the slow cooker and cook on low for 4-6 hours before draining the fat and adding in the buffalo wing sauce and cooking for an additional hour on high heat.

There’s just a few ingredients in buffalo wings but the method is the most important.


How To Serve These Spicy Wings

Because these wings have a bit of a bite to them, a super simple yogurt-mint dressing or a ranch sauce will balance out the flavors nicely.

Some fresh carrot and celery sticks will also compliment the wings and is an easy addition to the game-day platter.

Alternatively, you can choose a wide variety of sides to fit your occasion. A classic side would be some crispy potato or sweet potato fries or onion rings.

Extra Crispy Air Fryer Buffalo Wings

Air Fryer + Chicken Wings + Buffalo = MATCH. It’s science.

Today I’m sharing with you a method for making the crispiest, healthiest, most flavorful chicken wings. Best part… they aren’t even deep fried. In fact, there is no added oil required. I’d even go so far as to say that if you make a careful buffalo sauce selection (aka.. not the recipe provided below – see FAQ’s for recommendations), these guys could be considered good for you!

Alright, so maybe I’ve made a few overly dramatic claims (no surprise), but in all seriousness.. these wings are as good as any wings I’ve ever ordered in a restaurant AND boast about 70% less calories than their traditional deep fried counterpart. If you don’t have an air fryer, well.. today’s the day my friend. This is a situation that you NEED in your life.

WHAT ARE AIR FRYER CHICKEN WINGS?

They are chicken wings prepared in the air fryer instead of deep fried or baked in the oven. They are lower in calories AND in fat, but you have my word, they still taste great!

HOW TO MAKE AIR FRYER CHICKEN WINGS:

  • Season the chicken wings and arrange them into a single layer in the air fryer.
  • Cook the wings for about 25 minutes at 350 degrees before raising the air fryer‘s temperature to 390 and finishing them off for another 5 minutes.
  • Remove wings from the air fryer and toss them in your favorite buffalo sauce. Serve immediately with fresh veggies ranch and/or blue cheese dip and any extra buffalo sauce.

TIPS FOR MAKING EXTRA CRISPY AIR FRYER CHICKEN WINGS:

  • Use olive oil spray to coat the air fryer basket before adding the chicken. This helps prevent sticking and adds a little extra oil to help the wings crisp up.
  • DO NOT pile the chicken into the air fryer. It is very important that the wings are arranged into a single layer. You can use a trivet as shown in the picture below to cook twice as many wings at once.
  • Don’t bother pre-heating your air fryer. Just toss in the chicken and start cooking.
  • Cooking the wings at a lower temperature for the first 25 minutes allows the fat to break apart slowly, raise the temperature for the last 5 minutes to crisp up the skin.
  • Shake the basket roughly several times throughout the cooking process. This will help them cook more evenly.
  • These chicken wings do contain fat so they may cause your air fryer to smoke. If this happens, simply stop the air fryer and wipe out any fat from the bottom of the air fryer pan and then resume cooking.

HOW TO CUT CHICKEN WINGS:

I alway recommend that you purchase pre-cut wings, it’s just easier. I have had great luck finding these fresh (not frozen) at Whole Foods. If you can’t find pre-separated wings at your local grocery store, just follow the steps below.

  1. Locate the 2 joints by feeling the wing with your fingers. You should be able to tell where the 3 pieces connect.
  2. Use a pair of sharp scissors to snip through the joint. You will be left with 3 individual pieces (drumette, flat and tip)
  3. Use the drumettes and flats to make your wings. You can either discard the tips or save them for making homemade chicken stock.

FAQ’s ABOUT EXTRA CRIPSY AIR FRYER CHICKEN WINGS:

ARE EXTRA CRISPY AIR FRYER CHICKEN WINGS HEALTHY:

Cooking wings in the air fryer makes them healthier and makes clean up so much easier! They don’t contain the added oil that is required when you fry wings. Wings cooked in the air fryer have approximately 70% – 80% less calories that deep fried chicken wings.

To make these wings even healthier, skip the butter + hot sauce based buffalo sauce and replace it with a healthier store-bought version (see below for my recommendation.

WHAT IS AN AIR FRYER AND WHICH AIR FRYER DO YOU RECOMMEND?

An air fryer is a counter top kitchen appliance that uses convection to circulate hot air and oil around food in order to cook it.

I have THIS PHILIPS AIR FRYER and I love it! My only complaint would be that it is too small. I do not own this CUISINART AIR FRYER TOASTER OVEN, but have heard that it is a great choice if you are looking for something larger.

CAN I USE STORE-BOUGHT SAUCE? WHAT BRAND DO YOU RECOMMEND?

Traditional buffalo sauce is made from butter and hot sauce. If you are looking for a healthier version New Primal’s Dipping Wings Sauce Medium Buffalo is my favorite.

CAN YOU COOK FROZEN WINGS IN THE AIR FRYER?

Yes, you can cook frozen chicken wings in an air fryer. Just cook the wings about 30 minutes at 350 degrees before raising the temperature to 390 degrees and finishing them off for an additional 4-6 minutes.

HOW LONG DOES IT TAKE TO COOK AIR FRYER CHICKEN WINGS?

This recipe can be served start to finish in about 30 minutes.

CAN YOU REHEAT CHICKEN WINGS IN THE AIR FRYER?

Reheat chicken wings at 350 degrees for 5 minutes, then increase the temperature to 400 and cook for 3-5 more minutes.

CAN I DOUBLE THE RECIPE?

It depends on the size of your air fryer. It’s very important that the chicken wings are arranged into a single layer. Stacking them on top of one another reduces air-circulation and will result in a soggy wing.

CAN YOU MAKE AIR FRYER CHICKEN WINGS IN THE OVEN? I DON’T HAVE AN AIR FRYER.

Cooking chicken wings in the oven takes a much longer time than in the air fryer and there are a couple different steps that you need to take to ensure that they are crispy. Get my favorite recipe for Oven Baked Whole Food Hot Wings.

WHAT DO YOU SERVE WITH AIR FRYER CHICKEN WINGS?

I serve these chicken wings with the usual suspects… ranch dressing and lots of fresh carrots and celery sticks. Ree Drummond’s Homemade Ranch is my very favorite. If you are looking for something a little lighter this recipe from A Couple Cook’s is also very tasty.

Instructions

1. Preheat oil to 275F (140 degrees C). Pat chicken wings dry and drop into hot oil. Using kitchen thermometer try to stay at 120C/240F, cooking wings for 20 minutes.

2. Transfer wings onto paper towels to drain and set aside for about an hour.

3. For the next frying, preheat oil to 200C/400F and fry the wings until golden and crispy.

4. For the sauce, melt butter and hot sauce together. Pour over the wings immediately and serve as soon as possible.
