Beetroot salad with horseradish

Wash the beets well then put them in a large enough pot, cover them with water and let them boil over low heat for approx. 3 hours.

Meanwhile, while the beets are boiling, prepare the jars, wash them and dry them in the oven for 10 minutes.

Then wash the horseradish roots, clean them and grate them. Mix the vinegar with the sugar and salt until it melts.

When the beets are well cooked, strain them with water, let them cool a bit, clean them and put them through a large grater, then add the horseradish and vinegar with the sugar and salt and mix well, leave it to stand for 2 hours, stirring occasionally. then we put them in jars and seal them, after which the pantry naturally follows its course
