INGREDIENT:

METHOD OF PREPARATION:

1. We wash the pods very well, we break their heads, and if they are too long we cut them in two.

2. Peel and finely chop the onion and sauté it with a tablespoon of olive oil and 3 cloves of garlic given through the press. When the onion becomes translucent, add the pods and a cup of water. Cover the pan with a lid and let the pods boil until soft.

3. Cut the tomatoes into cubes and place them over the pods, along with the tomato juice. Add about a teaspoon of paprika, salt and pepper, cover again and let it boil for 10-15 minutes, until the beans are cooked. If you want to come out a little spicy, you can put 1/2 teaspoon hot pepper paste.

4. When the beans are cooked, taste to see if you need more salt and pepper. Put 2 more garlic cloves in the press, mix and leave for a maximum of 2 minutes. Turn off the heat and season with finely chopped green parsley.

Serve with stewed beans with pickled cucumbers in summer with polenta or meat in any shape you want. Have a good appetite!

As you know there are many varieties of pods, but the best and tastiest that are suitable for this dish are mottled green pasta .
If you have the opportunity to find them in the market or to cultivate them in your garden, and you have never prepared them in this way, I recommend them with all confidence. They are very tasty even if I used only a few simple ingredients to prepare them.

Sun Dried Pastai Beans

I had quite a few beans in the garden this year, so I decided to put them in the freezer for the winter, but also to dry some peas. For those who do not have a fruit / vegetable dryer, this method is ideal.

Take the healthy bean pods, wash them well and clean the ends. Take a larger pot and fill it with water (depending on the amount of beans you have) and then put it on the fire.
When the water starts to boil, put the pods in the bowl.

Boil for about 10 minutes and then pour into a strainer, drain well and then place on a grill, spread and cover with gauze.

They are placed in the sun and from time to time we take care to turn them from side to side to prevent possible mold. In three or four days the beans should be dry. In the evening, the beans are put in the house and in the morning they are taken out in the sun again.

The grill on which the pods must be placed must not be missing because they need the air to circulate under them as well.

They are ready when their texture is brittle.

For their use in winter, the pods are put in warm water from evening to morning. During this time they rehydrate and we can use it as a fresh bean pod.

Store in paper bags or canvas bags in a dark and dry place.

If you store dry pods in damp places they tend to absorb moisture from the air and can mold.

  2. In the hot oil add 6 cloves of crushed garlic and cook quickly. Then add the pods and continue to cook for another 2-3 minutes, stirring often.
  3. Cover the pods with 2 cups of water, add the finely chopped spices and greens. Put the lid on and cook over medium heat for about 25-30 minutes. Check that they are cooked after this time and if they are not ready, leave them to boil with a lid.
  4. Add the remaining 2 cloves of crushed garlic and cook for another 5 minutes without the lid, to remove the sauce from the pods.
  5. Serve simply with toast or as a side dish.

It is a vegetable dish with delicious sauce that can be left alone or thickened with a little flour dissolved in milk.
