I bought a jar a few years ago from Auchan (made in Italy) with olive paste, "Bruschetta alle olive". I ate it with great pleasure, but I found it quite expensive. So, I dared to prepare this pasta myself. The ingredients they use are: green and black olives (41%), red peppers, sunflower oil, carrots, onions, celery, capers, lemon juice, garlic, salt, oregano.

Here is my recipe for Olive Pasta. Of course, it can be improved with the above ingredients, to everyone's liking.

  • 200 g pitted olives
  • 50 g of olive oil
  • a clove of garlic

How do we prepare the recipe for spreadable pasta, olive pate?

The olive pate recipe is as simple as possible, it doesn't even need too many explanations and details, you can also see the video recipe below, to see how I do everything.

Add the olives to the blender, a teaspoon of dried oregano, add the oil.

We pass everything and that's it, in 5 minutes it's ready.

We can serve the olive pate on fresh or toasted bread, we can fill eggs, vegetables, we can serve it on salted biscuits, as desired.

Olive paste

In the following I will present you a very simple and very good recipe. That's if you're, like me, an olive fan. The extra words are superfluous, because as I have become accustomed to, I try to approach combinations that are as simple as possible and that offer a unique experience in terms of taste.

The taste of this pasta is slightly exotic, but I leave it to you to draw conclusions and tell me how you like it.

Necessary ingredients:

  • 300 gr seedless Kalamata olives
  • 50 ml of olive oil
  • a clove of garlic
  • a small onion
  • juice from a lemon
  • a teaspoon of dried basil (if you're fresh it's even better)

Method of preparation:

  1. If the olives are slightly too salty, put them in water in the salted water for an hour.
  2. Put the onion in the food processor and make it into a paste, then add the olives and the garlic clove and process for 45 seconds.
  3. Then add the lemon juice and olive oil. Mix for another 20 seconds.
  4. At the end we add the basil and process for another 10 seconds. The paste can be crushed more or left larger, depending on your preferences. I preferred to feel a little more consistent with the pieces of olives.

The pasta thus obtained is eaten either on pieces of peppers, cucumbers or other vegetables, in the pictures I put it on the pieces of croquettes whose recipe I posted the other day and you can find it here.
