Aceasta este reteta folosita de socrii mei la afumaturile de anul acesta. Reteta este extrem de simpla, dar aveti nevoie de o afumatoare. Se pot prepara atat muschiuleti cat si slaninuta sau kaizer. Voi posta si o varianta a acestei retete, pretabila pentru micul dejun si care se poate prepara de oricine in propria casa.

In acest an nu am putut merge si noi sa ii ajutam la preparare dar promit sa revin cu poze de la "culturile" urmatoare. Ne plac atat de mult incat vom profita de prima ocazie ca sa mai facem!

Se pun bucatile intr-o copaie presarate cu sare de muraturi pentru gust, una peste alta. Se tin 7 zile la rece. Din doua in doua zile se intorc intre ele: cele de jos sa fie sus iar cele de sus sa fie jos si cu partile intoarse.
In a opta zi se prepara un amestec consistent din: usturoi, ardei iute pisat, cimbru,busuioc, boia iute si apa, dupa gust. Noua ne plac mai picante, asa ca ardeiul iute a fost la primul rang.
Se ung bucatile cu amestecul preparat si se acopera cu hartie. Se tin la temperatura de aprox. 4-8°C timp de 2-3 zile.
Se scot, se curata de ingredientele folosite prin radere usoara cu cutitul si stergere cu hartie si se infig carligele de inox pentru afumat.
Se tin la zvantat 2 ore.
Dupa ce s-au uscat, se pun la fum cald timp de 4 ore. Din cand in cand se verifica fragezimea si culoarea.

A rezultat un muschiulet afumat extrem de gustos care poate fi mancat ca atare. Fumul cald a copt carnea, doar bucatile mai groase aduc aminte de gustul crud afumat.


Spaghete cu somon afumat, marar si muguri de pin

Imi plac pastele. Lungi, scurte, rotunde, late, subtiri, invartite, indoite, umplute, neumplute, colorate in fel si chip sau albe… cum vreti voi. Imi plac toate pastele pentru cel putin doua motive: nenumaratele combinatii in care pot fi pregatite (cu toate tipurile de carne si legume) si, doi, timpul scurt in care se pot transforma intr-o masa delicioasa. Avantaj cu atat mai important in timpul saptamanii, cand vrem sa pregatim rapid cina. Daca nu ma credeti, “rasfoiti” categoria Paste si veti gasi zeci de propuneri de toate felurile.

Astazi, va tentez cu niste spaghete cu somon afumat, imbaiate intr-un sos cremos cu vin si marar. Iar pentru un plus de gust si de farmec, presaram peste paste niste muguri rumeni de pin. Simplu, rapid si foooarte eficient!

Ingredients (for 4 servings):
– spaghete 250 g
– somon fume 150 g
& # 8211 onion 1 pc. mare (140 g)
– usturoi 3 catei (12 g)
– vin alb sec 80 ml
– smantana lichida (32% grasime) 200 ml
– lamaie 1 buc.
& # 8211 dill 1 small link
– muguri de pin 35 g
– ulei de masline 2 linguri
& # 8211 salt, pepper

Puneti mai multa apa la fiert, cu un pic de sare. Cand clocoteste apa, puneti pastele si fierbeti-le timpul indicat de producator. Intre timp, intr-o tigaita rumeniti mugurii de pin. Aveti grija, odata incinsi, mugurii se rumenesc foarte repede, chiar daca luati tigaia de pe flacara! Intr-o tigaie mare, incingeti uleiul de masline si caliti ceapa (felii) si usturoiul (trecut prin presa). Cand ceapa a devenit translucida, adaugati vinul alb. Lasati cateva secunde, sa se evapore alcoolul, dupa care dati focul mic si puneti smantana.

Scurgeti spaghetele fierte (pastrand cateva linguri de apa) si puneti-le in sos. Amestecati usor, astfel incat pastele sa fie uniform cuprinse de sos. Adaugati somonul afumat (taiat fasiute), mararul (tocat marunt), mugurii de pin si coaja rasa de la lamaie. Puneti si una-doua linguri de suc de lamaie si piper proaspat rasnit, dupa care amestecati usor. Daca vi se par prea uscate pastele, puteti adauga cateva linguri din apa in care au fiert!
