Cheese roll

Put water with salt and butter on the fire. Bring to the boil to melt the butter.

Add the flour and mix vigorously, so as not to become lumpy.

Remove from the heat and add eggs one at a time, stirring after each. Stir until smooth.

Grease a pan with oil and line with flour.

Put the dough in the pan and level it.

Bake in a hot oven at 200 degrees for 15 minutes. Do not open the oven for the first 10 minutes.

Remove the "infuriated" omelette from the oven, grease it with sour cream and grate the cheese on top.

Roll hot and bake for another 10 minutes.

Allow to cool slightly and portion.

Eat hot or cold (if it gets cold :)))

To prepare the coca, boil the milk and margarine. When the margarine has melted and blended with the milk, add salt and flour in the rain, little by little, stirring constantly. Boil this mixture until it comes off the bottom of the pot, then remove from the heat and leave to cool.
When the composition is cold enough, add eggs (one at a time), stirring.
Next, grease the pan with oil or lard and pour the resulting composition into the pan. Leave in the oven for about 20 minutes. During this time, we can prepare the filling.

Remove from the oven and place on a damp napkin, put the filling, twist with a towel until it is like a roll. Serve cold

Ingredients Appetizer roll with cheese and ham:

  • 4 eggs
  • 100 grams of sour cream
  • 150 gr. flour
  • 1 knife tip of baking powderFilling:
  • 500 grams of fresh cow's cheese, well drained of whey and as much as possible without sour taste + 100 gr. sour cream (min. 25%) or 600 grams of light cream cheese (eg Philadelphia)
  • ½ onion (optional, if you don't like onions you don't have to add it or you can add a little garlic instead)
  • 1 teaspoon grated sweet paprika
  • 200 grams of ham cut into very small cubes
  • 1 large, fleshy tomato, or pickled donut and pepper
  • 2 tablespoons grated cheese through a small grater, to sprinkle at the end

Countertop:

The egg yolks are combined with 100 gr. sour cream in a bowl.

Beat the yolks well with the cream until smooth. The flour is mixed with the baking powder and the egg whites are beaten hard with salt. Add over sour cream and egg yolks flour and egg whites.

Homogenize the composition with movements from bottom to top, then pour and level in a tray covered with baking paper.

Bake the top in the preheated oven at 180 degrees Celsius for 10 minutes. Be careful, the countertop should not brown too much, as soon as it passes the toothpick test (which, stuck in the countertop, must come out clean) the countertop is removed from the oven.

Detach the hot top from the baking paper with a long knife, then roll tightly in the same paper. Allow to cool completely.

Filling

Meanwhile, prepare the filling: in the blender (robot) add the cottage cheese, 100 grams of sour cream, chopped onion (if using), salt and pepper and paprika to taste and mix. If you choose to use cream cheese, homogenize it with a spatula with grated onion on a fine grater (if you use it) and the rest of the ingredients.

The obtained cream is mixed with very finely chopped ham.

The tomato is boiled for 30 seconds in boiled water, peeled and the seeds and the juicy part are removed. The remaining pulp is cut into small cubes and drained. If you use pickled donut, drain the juice well and cut it into cubes

The cooled top is opened, greased with cream cheese and ham and sprinkled with well drained tomato cubes:

Roll tightly and wrap in cling film.

Presentation and serving Appetizer roll with cheese and ham

The appetizer roll with cheese and ham is kept in the fridge for at least 3 hours before cutting and serving. Before serving, sprinkle with grated cheese and cut into 1 cm slices. thickness with a very sharp knife. It is arranged on appetizer plates and served as a cold entree.

Appetizer roll preparation method

Separate the egg whites from the yolks.

Mix the egg whites with a little salt. Mix the yolks with the cream and add them over the egg whites. Add flour mixed with baking powder and starch.

Homogenize by stirring from the bottom up, lightly. Incorporate green parsley leaves.

Line a 28/32 cm tray with baking paper, pour the mixture and level lightly.

Put the tray in the preheated oven at 175 degrees and leave until the roll begins to take on color.

Remove the tray from the oven and roll the appetizer roll sheet with the baking paper. Leave to cool.

When it is completely cold, roll it up and gradually, little by little, peel off the baking paper as you roll.

Spread a layer of cream cheese evenly over the roll top (leave the layer thinner on the edges, so that the cheese does not come out when you roll) then place thin slices of ham on top to cover the entire sheet. Press lightly with your hands and then run.


First of all, we prepare the top for the roll:

1. Put the egg whites from the 4 eggs separately in a bowl, and put the yolks together with the sugar.

2. First mix the yolks with the sugar in their bowl, until they double in volume and light in color. We also mix the egg whites, then we add them to the yolk mixture, we mix lightly. Add flour and vanilla essence and mix again.

3. Put the composition in a 29x42cm tray lined with oil and greased with flour, or better try baking paper. Level the dough and spread it on the entire surface of the tray. Bake in a preheated oven at 175 degrees for 10-15 minutes.

4. The top prepared in this way is detached from the baking paper and placed on a damp towel, rolled and held like this until we prepare the cream:

The mascarpone is slightly dissolved with the two tablespoons of strawberry jam and a little vanilla essence. Beat the whipped cream well, mix with the mascarpone and you're done.

Grease the top for the first time with strawberry jam, then spread the cream cheese, roll again and refrigerate for 30 minutes.

This spinach roll with cream cheese is very tasty and good-looking. A very fluffy green roll, with a bright color and filling to choose from. It can be filled with various creams based on cheese (cream cheese, cream cheese, ricotta or urda cream) and thin slices of pressed ham (ham), smoked salmon or colored bell pepper sticks.

The recipe for this spinach roll was given to us by our dear friend and collaborator Mya Benea. Mya chose to make the roll top starting from the recipe already published by us: a fluffy top prepared from a white sauce (Bechamel) made of butter, flour and milk to which are added egg yolks and, separately, beaten egg whites. These make the top airy, fluffy and extremely fragile. In addition, Mya mixed some spinach into the dough.

In the spring you can also use tender nettle leaves or a combination of spinach and nettles. Old garlic can be replaced with leurd or green garlic. What great flavors they have!

Here are the two appetizer roll recipes that are the basis of this dish: the one with mushrooms (see here) and the one with ham, cream and cheese (see here.)

This spinach roll must have a soft and fluffy top! That's why a Bechamel sauce is made and the eggs are separated (the egg whites are whipped). Well-beaten egg whites are a natural loosening agent that brilliantly replaces baking powder. If we beat the whole eggs, the roll would come out thick and rough, like a carpet or a sheet of synthetic turf & # 8211 and we don't want that!

Overall it is a rolled sheet prepared from a spinach puree with milk and garlic & # 8211 slightly thicker than the one we usually make & # 8211 see here.

The filling can be simple (cream cheese) or with slices of ham, slices of smoked salmon, colored peppers, etc.

From the quantities below results a spinach roll with long cheese of approx. 40 cm and about 6-7 cm thick. It is baked in a tray of 30 & # 21540 cm. At least 20 beautiful slices can be cut from it.

Beat the egg and add it to the cream, taking care to keep just a little, to grease.

I had fresh pie sheets that didn't need thawing, so I could use them right away. I only used one sheet, but you can use more if you want a crispier exterior. Thus, spread a sheet of puff pastry, spread the cream cheese, garnish with julienned peppers, a few sliced ​​tomatoes and chopped green onion leaves. Roll as a roll and grease with the remaining egg.

Place the roll in a tray prepared with baking sheet and put it in the preheated oven, over medium heat, for about 25 minutes or until golden.
