300 ml water
10 grams of fresh yeast
2 tablespoons olive or sunflower oil
250 grams of a mixture of cottage cheese and slightly salted telemea
finely chopped green onion stalks

From flour, water, yeast and 1 tablespoon of oil make a soft and elastic dough that you knead very well for 20 minutes.
You can add 1-2 tablespoons of flour if necessary. But the dough should be elastic and slightly sticky.
Then put it in a bowl greased with oil and let it grow in a place away from currents until it doubles in volume.

Prepare the filling as well. Mix the cottage cheese with the telemeau and the finely chopped onion tails.

After the dough is raised, turn it over on the work surface sprinkled with flour and knead for another 2-3 minutes, with your hands greased with oil, so that the air bubbles come out.

Break the dough into suitable pieces - the size of a tennis ball - spread with a rolling pin sprinkled with flour and put 1-2 tablespoons of cheese. Bring the edges to the center, press well, then stretch again with the twister until it reaches about the size of a plate.

Bake in a non-stick pan for 4-5 minutes on each side. The pan can be greased with oil, but I preferred not to grease it. They will not stick if the pan is non-stick.

It can be served both hot and cold. They are extraordinarily good. We don't know when they ended.

Cut green onions into pieces.

In a bowl, mix the flour, water and salt and knead until you get an elastic dough. Add water gradually, the amount may differ depending on the type of flour used.

Leave the dough aside for about 15 minutes, covered with a kitchen towel, then roll in a 12 cm roll.

(Out of these quantities come 8 pieces):

1. Make a dough from salt water and flour.

Knead it (about 10 minutes) until it detaches from the bowl and becomes elastic, which means that if you press with one finger it returns to its original shape. (Some pressed with all their palms :))

2. Let it rest for 30 minutes.

3. Divide it into 2 pieces. We take a piece and spread it on the board sprinkled with flour until we get a rectangular sheet 0.3 cm thick (I did not measure but it was written in the recipe).

4. Cut it into 4 strips and put the grated cheese on each one and mix it with a little salt. If you want you can also put a few finely chopped green onion tails.

5. Grasp the dough on either side by pressing lightly (see photo) so that the cheese is not visible and roll in a spiral.

6. Spread the spiral lightly with the rolling pin, helping us with a little flour. The result is a thin pie with a diameter of 20-22 cm (and I'm writing to you that I didn't measure, but maybe the size will help you get an idea of ​​how thin the pie should be).

7. Fry in a little hot oil until they brown nicely on one side and on the other then take them out on an absorbent paper.

Do the same with the other half of the dough.

They are very good both hot and cold. (There is no point in writing that we ate them hot because we could not wait to cool down).

Ingredient:400 g white flour, a teaspoon of salt, 5 tablespoons oil, 200 ml warm water, 500 g cow's cheese (sweet or salty according to preference), 6 eggs, 3 green onions (or normal onions), 300 g cow's milk , 300 ml oil.

Method of preparation: Dough preparation. In a deep bowl put flour, 1 teaspoon salt and 5 tablespoons oil. Separately heat 1-2 glasses of water that you will use for the dough. Pour a little water into the flour mixture and knead until you get a soft and non-sticky dough. Remove the dough on a table sprinkled with flour and knead a little, then cover with a kitchen towel and leave to rest for about 15 minutes. After 15 minutes, knead well (on the table sprinkled with a little flour) until it becomes a smooth and uniform dough. From the formed dough, 2 dough balls are made. The dough is left to rest for another 10 minutes. The dough balls are spread with the foil in sheets of about 3-4 mm thick. Grease well with oil and leave for 10 minutes. The room in which you prepare the pie must be warm.

Preparation of the filling. The cottage cheese is mixed with 5 eggs, a little salt and chopped green onions as small as possible (you can make the pie without onions if you want). The cheese mixture obtained must be more liquid.

Assembling the pie. Take one of the oiled sheets and spread it lightly on the work table. You can spread the sheet in your hands, then gently pull the edges. Stretch it to be very thin, and give it an oval shape, about the size of a table. Grease the spreadsheet with oil with a silicone brush. Spread half of the amount of cheese evenly over the entire surface. Then it is given through the larger grater, half of the amount of telemea, directly on the pie, is distributed evenly over the entire surface. Lift one of the sides of the pie sheet and start rolling the pie. Repeat the procedure with the other sheets. Then cut the rolls into 3-4 pieces, to be the width of the tray in which you will bake them. Grease the tray with a little oil, line it with baking paper and put the rolls in it, as close to each other as possible. Grease the surface with a little beaten egg yolk. About 6 smaller rolls come out of a pie sheet, a full tray. Bake for about 20-25 minutes in the oven heated to 180 °, then remove to powder and serve hot or cold.

It took:
250ml warm water
1 sachet of dry yeast (7g)
1 or
450g white wheat flour (or more, if the dough is still sticky, depending on the flour)
I only used 1/3 of this pie dough! The rest can be frozen or a homemade pizza can be made.

200g homemade cheese
3-4 green dill threads
3-4 green onion leaves

I put the yeast in warm water and mixed a little. I left it like that for 5 minutes. Flour and I incorporated it over the water with yeast, adding the egg. I kneaded and added the flour until the dough didn't stick to my hands and it was slightly elastic. I left it to rise until it doubled in size (covered with a kitchen towel).
House cheese was made earlier. I crushed it and mixed it with dill and chopped onion. I separated the bowl into 4 parts.
I lined the worktop with flour. I took 1/3 of the leavened dough and divided it into 4. I spread it in a round shape and in the middle I put cheese mixture, I folded it like a lap at the waist, then I spread it with the rolling pin. I repeated 3 times.
I heated a non-stick pan greased with sunflower oil (if there is excess oil, wipe it with a paper towel) and I put the pies in turn, leaving each side for a few minutes, until browned.
The fire was medium, I greased the pan in front of each pie.
Homemade cheese can be replaced with another type of cheese.

Cheese pies in the pan, what do we put in the filling, how can we customize them?

I added some green onions to these pies, also thinking of my grandmother and omelette them with onion and Telemea cheese. I simply adore the aroma that green onions gave to cheese.
