Peel an onion and cut it into larger pieces. The same is done with the pepper. Chop the parsley leaves. Mix everything with the minced meat, salt and pepper to taste. At the end, pour the broth and mix well.

Peel a squash, grate it and slice it. Place the slices in a yena bowl, sprinkle salt on top and pour the minced meat. Level and place again a layer of zucchini slices and in the middle place the tomato cut in the same way the slices and salt.

Cover with foil and put in the preheated oven at 180 degrees for. about 20 minutes, then take the foil and you can empty a little of the excess water left by the zucchini. Pour over the mixture obtained from beaten eggs with sour cream. Grate the cheese on top and put it back in the oven until it takes on color on top.

Musacaua is a very well-known recipe all over the world and is based on eggplant and minced meat. It is a very filling and delicious food, which can be found in various variants depending on the country in which it is prepared. I chose to make the Greek version of musaca today, but without fasting meat & ndash (vegan).

The authentic recipe for moussaka is made from minced beef or lamb (or even a combination of the two), prepared in a pan with spices and tomato sauce. This composition is then added in a layered tray, along with the eggplant strips and sometimes even potatoes, on top of which a generous layer of Bechamel sauce or mashed potatoes is added. Then put everything in the oven until it turns golden. I recommend serving musacaua with a glass of good red wine, to get a very special mixture of flavors.

If you want to create an authentic Greek moussaka recipe, you should know that an essential step is to prepare the meat mixture, because you have to saute it together with onion, olive oil, garlic, tomato sauce and some specially chosen spices to get a mixture with a very specific taste and texture. For this, you need to give the meat time to absorb all these magical flavors.

In some parts of Greece you can find different moussaka recipes, some of them containing pumpkin, artichokes or potatoes instead of eggplants. But I prefer the one with eggplants. Eggplants are full of flavor and nutrients beneficial to our body such as vitamins (B1, B6, K), copper, fiber and more! One of the biggest advantages of eggplants is that they are very versatile and you can create a wide variety of recipes with them, and this nutmeg recipe is the perfect example! & # 128578

Some variations of the original Greek moussaka recipe contain not only eggplant, but also layers of potato slices, to get an even more satisfying result. You can add potatoes as a base layer or you can follow the original recipe that uses only eggplant and meat mixture. The authentic recipe requires fried eggplant, but if you want to get a healthier result (as I did), you can bake the eggplant in the oven with a little salt (which will eliminate the bitterness and excess liquid of the eggplant) and olive oil.

For the vegan / fasting version of this recipe, I replaced the minced meat with a mixture of Pleurotus mushrooms and soy pieces, sauteed together with smoked paprika, salt, pepper and tomato sauce. I usually use Pleurotus fungus or the pieces of organic soy texture every time I want to get a result as close as possible to the taste and texture of real meat, but I must admit that the mixture between the two is simply incredible! I am sure that this bite recipe will convince even the most greedy carnivores to believe that it is not vegan / fasting!

Musacaua is a perfect food for any season. You can prepare a large tray of Greek moussaka which you can cut into pieces and keep for the next few days & ndash the recipe being perfect for meal prep!


Eggplant mousse with zucchini and parmesan, without meat, in the oven

1. Preheat the oven to 180 ° C. Cut the eggplant slices, then squeeze them and dab them with a paper towel to drain all the water that would make them bitter. Cut the zucchini as well. Place the eggplant and pumpkin slices on a grill pan sprinkled with oil and leave until lightly browned on each side.

2. While the vegetables are cooking, heat the oil in a deep frying pan. Add diced onions and brown for 5 minutes, stirring with a wooden spoon. Add the pepper cubes to the heat, and leave for another 5 minutes, stirring occasionally. Add the garlic, oregano and canned tomatoes with the sauce, then cook for another 5 minutes.

3. Take a heat-resistant dish and put some of the tomato sauce in it. Add the eggplant slices on top, then a layer of zucchini slices and sprinkle again with sauce and parmesan. Continue with alternating layers, making sure that the final layer is vegetables. Cover with the remaining sauce, Parmesan cheese, and finally with slices of mozzarella.

4. Put the dish in the oven for 30-40 minutes, until the moussaka browns on the surface.

5. Serve a portion sprinkled with freshly ground black pepper, garnish with lettuce and polenta next to it (for a gluten-free meal).

Potato and pumpkin bite

1. Fry the finely chopped onion in a hot pan with a little oil. Add the meat and stir until hardened. Then add the diced tomatoes, tomato juice and tomato paste. Simmer for 15-20 minutes and season to taste with lemon juice, salt, pepper, oregano, garlic and parsley.

2. Peeled and washed potatoes and zucchini are cut into slices and fried in oil.

3. In a pan greased with butter, place layers of potatoes, zucchini, half of the minced meat, part of the grated cheese, then again the potatoes, zucchini, the rest of the meat, grated cheese and the last layer of pumpkin and potatoes.

4. Dissolve the flour in the milk and put it on the fire. Stir continuously and remove from the heat after the first boiling. Add the cream, a pinch of salt, pepper and nutmeg, then pour over the moussaka and bake over medium heat for 40-45 minutes.


Method of preparation

Put the minced meat in a bowl and mix with salt, pepper, a little thyme, finely chopped greens, bell peppers cut into small cubes, then pour into the pan with hot oil, stir so as not to stick, and when the meat has become whitish and the water has evaporated, add 1 glass of water, 1 cup of tomato juice and leave on low heat until reduced, and after this time, adjust the taste and set aside.

During this time, the zucchini cut in half in width, then each half into thin slices, powder with salt and leave on a sloping shredder to drain.

Fry the zucchini slices in oil or very well they can be put in the tray on baking paper, in the oven.

In a bowl, beat eggs well and mix with sour cream.

In a tray or other heat-resistant dish, put a few tablespoons of tomato juice, then tomato slices, slices of zucchini, then meat, over the meat a few tablespoons of sour cream with egg, again slices of zucchini, tomato slices, on top pour the rest of the cream mixed with the rest of the tomato juice, then in the oven, on low heat for 1 hour.


Method of preparation:

You need a tray with a size of 33X23, greased with a little butter or olive oil.

Eggplants should be peeled and cut into slices (circular) with a thickness of about 1 cm thick, sprinkle with salt and let the bitterness drain for almost 1 hour. After this time they are passed through a jet of water and dried with absorbent paper.

After they are well dried, bake in a grill pan.

Peel a squash, grate it and slice the onion. The garlic should be crushed.

Cook the onion with 2-3 tablespoons of oil, until it becomes glassy and then add the garlic and minced meat. Stir until the meat is done and add salt, pepper, thyme and tomato sauce. All this is simmered until the tomato sauce decreases.

In a tray greased with butter / oil put a layer of eggplant and put half of the meat composition over it. Place the zucchini slices (given in flour or breadcrumbs) and add the rest of the meat. Put the remaining eggplant over the meat.

Beat eggs and mix with sour cream or fatty yogurt, salt, pepper and pour over the composition in the pan.

Place the tray in the hot oven at 180 degrees and bake for 45-50 minutes.

After this time, remove and leave to cool for a few minutes. Serve while hot.

With a layer of white sauce (bechamel) and grated cheese, au gratin in the oven. This moussaka is made according to my mother's recipe and is very tasty. It has a minced meat sauce with onion and garlic and a creamy start of white sauce.

Musacaua has Arab origins and arrived in the Balkans on the Greek chain. Traditionally, this potato bite is prepared with lamb or beef, but variants with pork or poultry are also common. I used a mixture of beef and pork. A potato bite involves layers of potato slices (I boiled them in their skins, but some recipes mention raw and short-fried potatoes in hot oil) alternating with layers of minced meat fried with onions and spices.

Pumpkin bite - Recipes

In order to take advantage of the presence of some vegetables in the market, I propose a vegetable bite. The aromas combine incredibly well and the resulting taste makes you & # 8220 lick your fingers & # 8221 and want another serving. And you can eat another one because it's only good for the Dukan diet. And if you want to share it with your family, don't hesitate, because you go safe with it.

Cruise Phase, Consolidation

- 2 medium eggplants in size

- 1 bunch of green dill

- 2 tablespoons tomato sauce

- 500 ml Bechamel sauce (recipe here)

First of all, we clean the eggplants and cut their slices about 1 cm thick. We put them in a tray on baking paper, pour some salt over them and put them in the oven (heated to 180 degrees), where we keep them for about 10-15 minutes until they soften a little.

Meanwhile, cut the onion into small pieces, grate the carrot and pour it into a hot non-stick pan, possibly greased with a little oil (within the 3 allowed drops). Stir continuously, and after 5 minutes add the tomato sauce and leave it on the fire for another 5-10 minutes (continuing to mix). From now on, it's simple. We take a bowl or two & # 8211 depending on their size (for the oven, the yena works very well) and first we put a layer of eggplant (follow in the picture), then we add a thin layer of the composition of carrots and onions, then another layer of sliced ​​zucchini. On top put another layer of carrots and onions, then another layer of eggplant, one of tomatoes and green peppers, cut into rounds.

At the end add the finely chopped dill and the Bechamel sauce (if you want you can put a layer inside) prepared beforehand, and level it well over the whole composition.

Put the dishes in the oven (180-190 degrees) and leave them for about 1 hour (until the sauce on top takes on a copper color).
