Cornbread and Sausage Stuffing Recipe

This is one of Mark’s favorite stuffings. He loves to make stuffing and is very particular about it — he makes his own cornbread or sourdough bread, makes sure it’s not too sweet, and dries it just right so it doesn’t get mushy. The right Italian sausage is also a must — a little hot sausage with a bit of sweet sausage to balance it out.

He only makes it a few times a year and wants it all to himself. Believe us, you’ll find the results are well worth the effort, and we’ve found ourselves on many a night forgoing the silverware and hovering over this dinner, picking at the meat and stuffing until it was all gone. You can substitute sweet and hot turkey sausage for the Italian sausages, if you prefer.

  • 1/4 cup unsalted butter, plus more for greasing
  • 1/2 cup Spanish onion, chopped finely
  • 1/2 cup celery, peeled and chopped finely
  • 8 ounces sweet Italian sausage, crumbled
  • 8 ounces hot Italian sausage, crumbled
  • 1 teaspoon tarragon, chopped
  • 1 teaspoon thyme, chopped
  • 1 teaspoon parsley, chopped
  • 1 teaspoon chives, chopped
  • 1 cup chicken stock
  • 2 cups cornbread, dried and cut into ½-inch cubes
  • 2 cups sourdough bread, dried and cut into ½-inch cubes

Cornbread Stuffing

This Southern-style cornbread stuffing has a rich, almost spoon bread-like consistency and a toasty golden top. It’s a little more time consuming than traditional stuffing because it’s made with homemade cornbread (no cheating! store-bought cornbread is too sweet and won’t work), but you can break the steps of the recipe up over a few days, if you’d like.

The cornbread in this recipe is intentionally dry and bland, so don’t worry if you taste it while you’re cooking and it seems plain. The sausage, eggs, and butter in the stuffing balance it all out. Also, note that this stuffing is best cooked in a baking dish separate from the bird.


Recipe Summary

  • 12 ounces bulk pork sausage
  • ¾ cup finely chopped onion (1 large)
  • ½ cup chopped green sweet pepper (1 small)
  • ½ cup chopped celery (2 stalks)
  • ½ cup butter or margarine
  • 5 cups dry white bread cubes (see tip)
  • 4 ½ cups crumbled corn bread
  • 1 teaspoon poultry seasoning
  • ⅛ teaspoon black pepper
  • ¾ cup chopped pecans, toasted (see tip) (optional)
  • 1 ¼ cups chicken broth

In a large skillet brown sausage over medium heat drain. Remove from skillet set aside.

In the same skillet cook onion, sweet pepper, and celery in hot butter over medium heat until tender set aside.

In a large bowl combine bread cubes and corn bread. Add cooked sausage, onion mixture, poultry seasoning, black pepper, and, if desired, pecans. Drizzle with enough broth to moisten (about 1 cup), tossing lightly to combine. Transfer to a 2-quart casserole. Bake, covered, in a 325 degree oven for 30 to 45 minutes or until heated through.

Or use bread mixture to stuff one 10- to 12-pound turkey. (See stuffing tips.) Place any remaining stuffing in a casserole drizzle with enough of the remaining chicken broth (1/4 to 1/2 cup) to make a stuffing of desired moistness. Cover and chill until ready to bake. Bake, covered, in a 325 degree oven alongside turkey for 40 to 45 minutes or until heated through. (For doneness temperatures and roasting times, see roasting chart.) Makes 10 to 12 servings.

Bring water to a boil in a saucepan. Add giblets and boil for 10 to 15 minutes. Remove and discard giblets, reserving water.

Preheat the oven to 400 degrees F (200 degrees C). Grease an 8-inch square baking pan.

Mix corn muffin mix, milk, egg, and shortening together in a bowl. Pour into the prepared baking pan.

Bake in the preheated oven until golden brown, 15 to 20 minutes. Set aside to cool.

Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Add celery, onion, and hot peppers and continue cooking 3 to 5 minutes more. Drain and discard grease. Transfer sausage mixture to a large mixing bowl.

Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole pan.

Add giblet water, turkey broth, bread crumbs, cornbread, remaining eggs, sage, salt, and black pepper to the sausage mixture in the mixing bowl. Mix together well and transfer to the prepared casserole pan.

Bake in the preheated oven until slightly brown on top with darker brown edges, about 45 minutes, checking often. Let cool 10 to 15 minutes before serving.

The day before you want to make the stuffing, bake the corn bread mix according to package directions, remove it from the pan, cover lightly with a cloth, and leave it to dry overnight. Tear the bread into pieces and leave it out overnight to dry.

About 1/2 hour before serving, preheat an oven to 350 degrees F (175 degrees C), and grease a 1 1/2-quart baking dish.

Place the sausage into a skillet over medium heat, and cook and stir the sausage, breaking it up as it cooks, until the meat is browned, 8 to 10 minutes. Stir in the celery and onion, and cook until the onion is translucent, stirring occasionally, about 8 minutes. Stir in the sage.

Tear up and crumble the corn bread into a large bowl. Break the bread apart into 1/2-inch pieces, and lightly mix it with the corn bread. Pour in the melted butter, stir to combine, and lightly mix in the sausage mixture.

Whisk the chicken broth with the eggs, and stir into the corn bread mixture. Place the stuffing into the prepared baking dish, cover with foil, and bake in the preheated oven until the stuffing is cooked through and hot, about 30 minutes. Uncover the dish and return to the oven to bake until the top is lightly browned, about 10 more minutes.

For cornbread: Combine first 4 ingredients make well in center. Combine milk, oil, and egg add to flour mixture, stirring just until moist. Spoon batter into 8-inch square pan coated with cooking spray. Bake 25 minutes or until a wooden pick inserted in center comes out clean. Cool 5 minutes in pan on wire rack. Remove from pan cool.

Reduce oven to 375°. Cut cornbread into 1-inch cubes, and place on baking sheet in even layer. Bake 12&ndash15 minutes or until golden. Let cool.

For stuffing: Heat olive oil in skillet over medium-high heat. Add sausage cook, crumbling, 8 minutes or until browned. Add onion and bay leaf cook 4 minutes or until onion starts to brown, stirring occasionally. Add celery, and cook 5 minutes. Add garlic and next 3 ingredients cook, stirring constantly, for 1 minute. Remove from heat discard bay leaf. Cool about 20 minutes or until room temperature.

Combine cornbread and sausage mixture. Add broth and eggs stir just until moistened. Spoon into 2-inch deep, 7- x 11-inch baking dish coated with cooking spray. Bake, covered with foil, 28 min-utes. Uncover bake 10 minutes until top is crisp and golden.
