Fattoush is a much loved Lebanese salad, perfect summer fare. Sumac, usually sold ground, is ground red berries and purslane is a popular green eaten throughout the Mediterranean.

  • 120ml water
  • 1 teaspoon cornflour
  • 5 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 2 teaspoons sumac powder
  • salt to taste
  • ground black pepper to taste
  • 1 cos lettuce, torn into bite-size pieces
  • 1 medium cucumber, diced
  • 2 large tomatoes, diced
  • 4 spring onions, chopped
  • 4 tablespoons chopped fresh flat-leaf parsley
  • 4 tablespoons chopped fresh mint
  • 1 green pepper, seeded and chopped
  • 50g chopped purslane
  • 75g rocket
  • 4 pitta breads, toasted and torn into pieces

  1. Mix the water and cornflour in a small saucepan over medium-high heat until thickened. Remove from heat, and mix in lemon juice, garlic, sumac, salt and pepper. Refrigerate until ready to use.
  2. In a large bowl, toss together the lettuce, cucumber, tomatoes, spring onions, parsley, mint, pepper, purslane and rocket. Toss with the dressing and toasted pitta.

i am lebanese, and this is my favorite salad. But just to note: the ingredients used in this recipe are right but the problem remains with the sauce that you are using. the real sauce requires: lemon juice, olive oil, sumac and garlic. and if you like, u can add a pinch of zaatar(A lebanese mixture of savory, thyme, sumac, and sesame seeds. Available prepared in most Middle-Eastern groceries).-25 Feb 2009

I love Fattoush, I grew up with it as a kid. One suggestion I have is to toast the pita bread in an oven/toaster oven until crispy, break it into bite size pieces and mix it into the salad. It is a healthier option than frying the pita as another user mentioned, and adds a nice crunch to the fattoush.-12 Jun 2008

thought the recipe was pretty good i make fattoush all the time the only difference is i dont use constarch in the dressing and i add red onion and raddishes for more flavor!!-02 Oct 2007
