These biscuits are very good; I got this from my mother's personal recipes, originally from a Lebanese woman who was a friend of my mother's. This makes a large batch, so they're perfect for cake sales.

- 225g butter
- 225g margarine
- 75g desiccated coconut
- 330g porridge oats
- 400g caster sugar
- 500g plain flour
- 2 teaspoons baking powder
- 1 teaspoon bicarbonate of soda
- 1 teaspoon salt
- 225ml boiling water

- Set aside boiled water and cool until lukewarm. Mix butter, margarine, coconut, oats, sugar, flour, baking powder, bicarbonate of soda and salt with fingers until dough reaches the consistency of shortcrust pastry. Add lukewarm water and work into dough.
- Form dough into 2.5cm (1 in) balls. Flatten with a fork or fancy bottomed glass for imprint.
- Place on greased baking trays and bake at 200 C / Gas 6 for 10 minutes.

There is nothing Lebanese or Arabic about these cookies (I am Arab American) But these cookies were absolutely a delight nonetheless! (As one has stated the originator of the recipe may be Lebanese but that doesn't mean her cookie is! ;-)-16 Jul 2005
I am from the middle east and these cookies are NOT at all from the region...just because the origin of the lady was from lebanon doesn't mean the cookies are! but they are tasty anyhow, give them a try.-10 Apr 2002
