A wholesome food and much nicer than a store brought brand, this is a flexible recipe. You can add your favourite fruits, cereals and extras and be as adventurous as you want.

  • 4 cups (porridge) oats
  • a handful of toasted almonds
  • a handful of chopped toasted hazelnuts
  • a handful wholewheat flakes or crumbled whetabix
  • 2-3 tablespoons puffed rice
  • 1 tablespoon sunflower oil
  • 1 tablespoon agave syrup
  • Anything else you might like: millet, sesame or sunflower seeds, etc.
  • For after baking: raisins, sultanas, dates and any other fruit

  1. Preheat the oven to 150 C / Gas 2.
  2. Mix all the dry ingredients together.
  3. Mix the sunflower oil and agave syrup together in a small bowl. Then add the oil mixture to the dry ingredients and stir in. Oil a baking tray and place the mixture into it.
  4. Place in the preheated oven. Check and stir the mixture every 5 minutes until the mixture is a golden brown and crunchy. It could take anything up to 20 minutes depending on ingredients and oven.
  5. Leave to cool and then add all the raisins and other fruit mixing it in - store and/or eat.

Homemade Muesli

Ingredients:

  • 100g porridge oats
  • 100g jumbo oats
  • 50g rye flakes
  • 50g barley flakes
  • 100g mixed fruit
  • 100g sultanas
  • 50g flaked almonds
  • 50g sunflower seeds
  • 25g sesame seeds
  • 25g walnuts

Cost: As mentioned above, the cost of this homemade muesli is roughly equivalent to the cheapest ‘luxury’ commercial mueslis. At £1.70 for 650g you’ll soon be mixing your own for good.


  • 2 parts rolled oats
  • 2 parts other rolled grains (or another 2 parts rolled oats)
  • 4 parts nuts and seeds
  • 1 part dried fruit

Then I just stir it all together in a big bowl, store it in an airtight container, and scoop out 1/2 cup or so for each breakfast or snack.

Here’s the formula broken down with options:

2 parts rolled oats

This is pretty straightforward. I buy my rolled oats out of the bulk bin at my local grocery store. If you are gluten-free, you’ll want to look for certified gluten-free oats.

2 parts other rolled grains

  • Rye
  • Barley
  • Triticale (a cross of rye and wheat)
  • Spelt flakes
  • Quinoa flakes (quinoa is actually a seed that performs like a grain!)
  • Or just another 2 parts rolled oats!

If you’re gluten-free, you’ll likely want to stick with quinoa flakes – or simply add more gluten-free rolled oats.

4 parts nuts and seeds

This is where it gets good! Throw in one or more of the following. Chop up the bigger stuff first!

  • Almonds
  • Pecans
  • Walnuts
  • Cashews
  • Sunflower seeds
  • Pepitas (pumpkin seeds)
  • Sesame seeds

For an extra healthy punch of goodness, you might also include a small amount of the following:

1 part dried fruit

Choose from these delicious dried fruits:

  • Raisins
  • Golden raisins
  • Apples
  • Currants
  • Coconut flakes or chips
  • Blueberries
  • Freeze-dried strawberries
  • Apricots
  • Cherries

Mix and match however you want – make your muesli your own!


Healthy Homemade Muesli

I started making my own muesli years ago when I stopped eating gluten. At first I followed a recipe, then slowly started changing it each time I made it. Muesli is so easy to make and you can pretty much use whatever nuts and seeds you have in your cupboard. I add oats, puffed buckwheat or quinoa flakes to include some carbohydrates. However, if you are following a grain-free or paleo diet you can definitely leave it out and keep it all nut based.

The trick to this muesli is mashed banana! I added it once in attempt to sweeten it without the need for honey. So many people question me when I tell them I add a mashed banana – “doesn’t it go soggy??” The banana dries out very well and leaves the muesli in delicious crunchy clusters, and of course no need to add a sweetener. This recipe can also be used to make raw muesli which is what I did when I lived in Melbourne and didn’t have an oven. I used the same recipe but only the dry ingredients and left out the banana and coconut oil.

It’s great to make a big batch of muesli over the weekend for an easy breakfast during the week. This muesli also makes a great snack! Be warned though…it is addictive. I have this muesli every morning on top of my smoothie, I absolutely love it!! It is also delicious with Greek yoghurt and fresh berries. I hope you enjoy this recipe as much as my family, my partner and I have and make sure you add plenty of coconut and cinnamon!


First you’ll need to peel, core and steam your apples and preheat your oven to 180.

Place the rolled oats and 1 cup of buckinis into a large mixing bowl. Once your apples are steamed, remove and place into a bowl, mash and add the cinnamon. Add this mashed apple and cinnamon mixture into the oats and buckinis.

Mix thoroughly and lay evenly on a lined baking tray. Place into the oven and bake, stirring occasionally, until golden brown. I like to slightly grill the mixture at the end, just to crisp it up and try replicate that delicious flavor my mom used to get.

Once you’re happy with the mixture remove, add the remaining ingredients and allow to cool.

Serve with your favorite fruit and a dash of nut milk. I like to use banana and nectarines, and drizzle a little agave nectar (diabetic friendly) over the top. If you have a sweeter tooth, you can add maple syrup or raw honey.

Store in an air tight glass jar.

Delicious! Easy! Nutritious! What more could you want?


The Best Homemade Bircher Muesli

I started making my own muesli a few months ago, and I honestly don’t know why I didn’t do it sooner.

The idea conjures up an image of a wholesome, earth-mother type – quite intimidating when you’re a childless twenty-something who like vegan cupcakes a little too much!

But honestly, there’s really nothing to it. As long as you have a well-stocked health food store (or equivalent) nearby, you’ll have no trouble sourcing the ingredients. Better yet, there’s no complicated cooking process involved!

This bircher muesli is chock-full of my favourite superfoods, from goji berries to chia seeds. I adapted my recipe from Loni Jane’s ‘ Flat Tummy Superfood Bircher ‘ blog post – it’s still fairly similar, but I switched up a few of the ingredients until I found a combination that ticked all of my boxes.

I can’t think of a better way to start my day than with a huge bowl of homemade muesli. It gives me a ton of energy, improves my digestion and keeps me comfortably full until lunchtime. Plus, the extra vitamins and nutrients make my skin and hair glow!

Homemade Bircher Muesli

Ingredients

  • 1 cup of buckwheat flakes
  • 1/2 cup of chia seeds
  • 1/2 cup of ground flax seeds
  • 1/2 cup of goji berries
  • 1/2 cup of dried mango, chopped
  • 1/2 cup of desiccated coconut
  • 1/2 cup of toasted coconut
  • 1/2 cup of pumpkin seeds
  • 1/2 cup of sesame seeds
  • Pour each ingredient into a large jar, creating a beautiful layered effect.
  • Give the jar a good shake, and voila – homemade bircher muesli! It really is as simple as that.

The beauty of this muesli is that you can get as creative as you like when serving breakfast, safe in the knowledge that you’re consuming nutritious superfoods with every mouthful. I like to serve it with coconut yoghurt and chopped banana, but it’s equally as delicious sprinkled over an acai bowl or kept simple with almond milk and berries. You can soak it overnight to activate the seeds – this makes them easier to digest and increases the nutritional value – or eat it fresh from the jar.

This may be a little too much information, but this stuff really cleans you out. If you’re suffering from digestive issues then I highly recommend skipping the medications and opting for a bowl of bircher muesli instead.

So what makes this recipe so incredibly healthy? I’ll let you in on a secret: it’s the seeds. While a handful of seeds may look unassuming, inside that hard little shell they’re actually bursting with nutrients!

I recently learned that flax seeds and golden linseeds are exactly the same thing! I feel a little silly as I was originally adding both to this muesli mixture. Ground flax seeds are more easily absorbed by your body than whole, so I always reach for them if I have the choice.

Flax seeds are the best plant source of omega-3 fatty acids which are key to a healthy brain and heart, but the hormone-balancing properties of these unassuming seeds are by far my favourite benefit. I struggled with severe cystic acne a few years ago, and even now that my skin is healed I still get small pimples a little more often than I would like. I’m always on the lookout for natural ways to balance my hormones, and flax seeds are incredibly effective when consumed regularly. They’re full of phytoestrogens – natural, plant-based female hormones which work to balance the estrogen levels in your body.

If you suspect that your hormones are a little out of whack, try adding a spoonful or two of flax seeds to your daily diet. You’ll be pleasantly surprised!

Chia seeds have become super-popular in recent years, and for good reason! It’s said that the Aztec warriors could run on just one spoonful of chia seeds for an entire 24 hours.

Just like flax seeds, they’re a fantastic source of omega-3 fatty acids and are one of nature’s richest high-antioxidant foods – great for preventing signs of aging and repairing your skin from damage. They also form a gel-like consistency when wet, helping you to maintain a healthy and regular digestive system.

If you find yourself reaching for energy drinks or sports beverages, swap them for chia seeds instead – they’re said to be just as effective at providing you with energy, but without the refined sugars!

Goji berries

The ancient Chinese recognised the medicinal benefits of goji berries and used them to treat a range of ailments – if they’re good enough to be used for thousands of years, they’re good enough for me! These colourful little berries contain all nine essential amino acids (histidine, isoleucine, leucine, lysine, methionine, phenylalanine, threonine, tryptophan and valine) so they’re a fantastic addition to your diet and have definitely earned their title as a superfood.

If your vitamin A levels are a little low, look no further than the humble goji berry – 1/4 of a cup gives you 340% of your vitamin A needs, boosting your immune health and improving your vision. All the better to see your delicious muesli with!

Pumpkin seeds

A study by Mineral Check revealed that 70% of people in the UK have low levels of magnesium. This is a problem when you consider that a magnesium deficiency can lead to insomnia, depression and a host of other health problems.

The solution? Pumpkin seeds! They’re a great source of magnesium as well as iron, zinc and copper – essentials for a healthy mind and body. If more people in the UK included pumpkins seeds in their diet, we’d have a much happier and well-rested population!

Sesame seeds

Remember how I mentioned that this muesli recipe really cleans you out? It’s down to the huge amount of fibre contained in the ingredients, and sesame seeds are a great example. They work to bulk up your stools and get things moving through your digestive tract – a little gross to think about, but incredibly important for your health (and comfort!)

Another benefit of sesame seeds is the fact that they contain zinc, calcium and phosphorous, making them great for bone health. Forget milk – got sesame seeds?

I keep a jar of homemade muesli in my kitchen at all times, and it never fails to impress visitors. If only they knew how easy it is to make! Well, I guess my secret’s out now…


This cereal is toasted in a pan, not in the oven, so you can make it on the go with a camping stove. We use this Coleman Classic Propane Stove.

Additionally, this recipe is small-batch, and meant to serve two.

You can definitely multiply the recipe, but if you want to make very large batches, it’s easier to toast the oats in an oven (like in this homemade breakfast cereal recipe).

And finally, this toasted oats recipe has a little more oil, nuts, and fruit per serving than my other muesli recipe.

The extra calories will help energize you before a long hike.


Now for the grand finale!

Okay, that's it! You've assembled your muesli. Now just close your jar and roll it around in your hands until everything is combined. Then pour some into a bowl and top it with fruit, nuts, and plant-milk of choice! This recipe is beautifully versatile and can fit any taste. If you prefer it to be a little sweeter, add a drizzle of maple syrup. I find that using frozen blueberries (which are more concentrated than their fresh counterparts) and extra ripe bananas gives the muesli more than enough sweetness, but you do you!
