Growing up in a Gujarati household, boiled plain rice was cooked daily. Sometimes it's the best thing to accompany very flavoursome dishes, however the recipe below turns plain boiled rice into a tasty rice dish which can be eaten on its own or accompanied with meat or vegetable dishes.

  • 500g wild rice and basmati rice (sold in a pack in most supermarkets)
  • Oil
  • Cumin seeds (1 heaped teaspoon)
  • Curry leaves (fresh 6 - 10)
  • Red pepper (1 diced)
  • Yellow pepper (1 diced)
  • Salt to taste


  1. In a non-stick large saucepan place the rice with water on the cooker. The water should be twice the amount of rice once in the pan. Depending on whether you have been able to pre-soak the rice it should take about 20 - 25 mins to cook. You can add a little salt to the rice to help it cook. Stir every now and then.
  2. Whilst the rice is cooking you need to cook the peppers.
  3. In a non-stick wok or frying pan add the oil until hot.
  4. Then add the cumin and curry leaves.
  5. Once the cumin seeds are popping away nicely and you can smell them in the air, add the peppers. On a low to medium heat allow them to soften and brown, but keep stirring.
  6. Check the rice. Make sure it has enough water so the rice grains are loose. Once the rice is cooked strain the excess water.
  7. The peppers should now be done. Add the rice to the peppers and stir thoroughly making sure the rice gets a nice coating of the peppers and cumin mix. Add salt to taste. Allow this to cook through for a few mins at a medium heat, stirring so it doesn't burn and then place into a serving dish.


This dish works really well with veg and meat curries and it also looks amazing when served.

Spicy Moroccan Rice with Tomatoes and Peppers

While it's true that bread accompanies almost every Moroccan meal, khobz is not necessarily needed when the main dish is built around couscous or pasta or rice, all of which might be offered alone with no sides or bread at all.

This saucy, spicy Moroccan rice recipe is one example. It's very versatile and can be served as a main dish or side. I was introduced to the recipe many years ago by my mother-in-law, and it immediately reminded me of a Spanish rice dish which my own mother used to prepare in the States. A Spanish influence might indeed be at play here, as a number of regional Moroccan dishes can be linked to our northern neighbor.

Here, the rice gets a little bit of kick from its blend of Moroccan spices which includes cayenne pepper, but if you really like things fiery throw a chili pepper into the pot while the rice is cooking. Conversely, omit the cayenne if you don't want any heat at all.

I'm most inclined to offer the rice as stand-alone fare in the evening when a light supper suffices after a much heartier main meal at lunchtime. I like it as a vegetarian entree with lots of bell peppers, but if you prefer, go ahead and add some diced beef, lamb or chicken – simply brown the meat with the rice before adding the liquids, or throw in some leftover cooked meat when you add the broth.

Stuffed Peppers with Rice and Mushrooms

Meatless dinners in the winter are not very easy to put together. While trying to make a satisfying and delicious dish at the same time, proteins in the form of fish, meat or eggs are always a first option. But this recipe brings together unique flavors!    


  • 2 red peppers, cut in half and seeded
  • 2 green peppers, cut in half and seeded
  • 1/2 red pepper, diced
  • 1 cup mushrooms, diced
  • 1 onion, diced
  • 4 garlic cloves grated
  • 1 cup of cooked rice
  • Salt to taste
  • Pepper to taste
  • Olive oil
  • 1 teaspoon oregano
  • 1 teaspoon Italian seasoning
  • 1 jar tomato sauce


1. In a large pan, heat up one tablespoon olive oil. Sautee the onion and garlic for a few minutes. Add the peppers and the mushrooms. Cook for about 10 minutes and add the spices. When the vegetables are ready, combine with the cooked rice and adjust seasoning if needed.

2. Preheat the oven to 400°F.

3. Pour the tomato sauce into a large baking dish. Stuff the peppers with the rice mixture and bake for about 30 to 35 minutes.

Cashew Rice

We dress hot cooked basmati rice with a mixture of sautéed ginger, chili peppers, and cashews and a healthy dollop of plain yogurt to make this exotic and flavorful side dish.

  1. Rinse the rice in a bowl with cold water. Drain and repeat until the water is no longer cloudy. Drain completely. Add the rice, 1 teaspoon salt, and 3 cups water to a 2-quart saucepan, cover, and bring to a boil. Reduce heat to low and cook, covered, for 20 minutes. Remove from heat. Fluff with a fork.
  2. Heat the oil in a large skillet over medium-high heat. Add the mustard seeds and cook for 30 seconds. Add the cashews and cook until lightly browned, about 20 seconds. Add the onion, peppers, ginger, and remaining 1 1/2 teaspoons salt, and cook until the onion is tender, about 5 minutes. Toss rice with the onion mixture and the yogurt.

Food comas

It had been a while since I planned a big dinner, and I decided I wanted to make a Mediterranean feast! I had fallen in love with Stuffed Capsicums (Peppers) while I was in Greece, and it was one of the first recipes I tried after buying The Essential Mediterranean Cookbook. I decided to ramp up the recipe this time around after stumbling upon one at Teri’s Kitchen, which added goat cheese and ground beef to the mix. I edited it a bit to work with the ingredients I had on hand and I think the results were delicious!

One disclaimer: I did cheat a bit by just purchasing a box of Wild Rice Pilaf mix… it probably isn’t too difficult to make the wild rice pilaf from scratch (at the bare minimum just cook long grain white rice with chicken stock) but most of the better recipes ask for all these spices and vegetables to add… and while I think I can be fairly motivated in the kitchen… my laziness wins out often. Maybe someday I will try to make Wild Rice and will update this recipe in turn…

Try serving these with a couple refreshing meze dishes such as Marinated Feta with Olives and Tzatziki for a complete Mediterranean feast!

Baked Peppers Stuffed with Ground Beef, Wild Rice & Goat Cheese (adapted from Teri’s Kitchen and The Essential Mediterranean Cookbook)


  • 6 oz package Long Grain & Wild Rice Pilaf
  • 6 large red, yellow or orange peppers (capsicums)
  • 1 T olive oil
  • 1 lb ground beef
  • 1 tsp fennel seed
  • 6 T dry herb mix (Herbs de Provence, Italian, or whatever dry aromatics you have: basil, thyme, marjoram)
  • Salt and pepper to taste
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 large tomato, diced
  • 1/4 C tomato paste
  • 4 oz mild goat cheese, crumbled
  • 4 T freshly grated Parmesan cheese
  • Fresh basil leaves, coarsely chopped

Preheat oven to 350°F. Cook the rice according to package instructions. Set aside.

Bring a large pot of water to a boil. You can either cut the tops off the peppers or cut the peppers in half vertically. I tried both methods and my verdict: the former method is a bit “prettier” for presentation purposes, but the latter method is a lot easier to eat… so choose whichever you prefer! Remove the membranes and seeds from the peppers and discard.

Blanch the peppers in the boiling water (not the lids) for 2 minutes, then drain and leave upturned to dry on paper towels.

Heat the olive oil in a large skillet over medium high heat. Sauté the ground beef until browned, stirring in the fennel and other dry herbs. Season with salt and pepper to taste.

Add the onions and chopped peppers to the pan cook until softened, about 4 minutes. Add the garlic and sauté for another minute. Remove from heat.

Place the peppers in one layer in a lightly oiled or sprayed baking dish. In a large bowl, mix together the ground beef mixture, rice, goat cheese, 3/4 of the diced tomato, tomato paste, and 2 T of Parmesan cheese. Taste for seasoning and adjust as needed.

Stuff each pepper with the mixture. Top each pepper with the remaining diced tomatoes, fresh basil, and the remaining 2 T of Parmesan cheese.

Pour 100 ml (3 1/2 fl oz) boiling water into the dish. Bake, covered (or just replace the lids depending on how you cut the peppers), for 40 minutes or until the peppers are just tender when tested with the point of a small knife.

These can be served warm or cold. Also, try serving with a Greek Salad or with a Falafel Sandwich with Tzatziki.

Filling Criteria For Stuffed Vegetables

Almost any vegetable can be stuffed, those with a deeper inner cavity just tend to be easier to scoop out and fill. But honestly, what really upgrades one recipe or another is the filling! So, before we delve into our favorite vegetables to stuff, let’s take a look at what elements are essential for an above-the-top filling.

  • Grains: The perfect filling base, grains like rice or quinoa are an essential part of any stuffing to give your dish that hearty oomph to keep you feeling full. Grains are also perfect for absorbing the flavor of the cooking liquid. If using plain rice, try vamping it up by using ½ broth or season the cooking water with herbs and spices.
  • Protein: To keep you feeling satisfied, a protein will come in handy! While most recipes call for ground meat, protein can also come from fish and eggs or beans, tofu or extra vegetables for a meat free alternative.
  • Sauce: There is a wide range of sauces to use that keep your vegetables from drying out when cooked. Some of the most common are tomato-based like marinara or oil-based like pesto.
  • Herbs and Spices: Using ingredients like fresh herbs and spices helps to cut down on the use of salt, while providing loads of flavor in every bite.

How to make rice pilaf

This recipe couldn’t be easier to make. Here’s what you’ll do. You can see all the steps in action in the video that accompanies this post.

  • Find a wide, shallow pan with a lid.
  • Rinse your basmati rice until the water runs clear.
  • Melt butter in the skillet
  • Sautee the onions until translucent and a tiny bit browned
  • Add the garlic and cook for a minute
  • Stir in the rice and cook for two minutes to toast
  • Add broth and bring to a boil
  • Cover the pan, turn down the heat, and simmer for 15-20 minutes.
  • Off the heat, place a clean kitchen towel between the pan and the lid, and leave it to absorb any extra moisture for 5 to 10 minutes.
  • Taste and add salt and pepper.

These tiny grains made it across the world and into many cultures’ signature dishes. From Asia, it traveled to Africa, then the Middle East, then to Europe. The European colonists took it with them and introduced it to the Caribbean, Latin America, Australia, and “The New World,” now known as the United States. Its history & importance is different from place to place, but what do they all have in common? It’s still eaten in all of those places today…and then some!

There are now more than 100,000 different types of rice around the world. How many different kinds can you name? The International Rice Research Institute, located in the Philippines, houses 136,000 varieties of rice. The 3 main categories are: short grain, medium grain, long grain but each type of rice has varying shapes, colors, textures, aromas, cooking properties, and flavors. It’s naturally gluten-free and can even be used to make dairy-free milk.

Hopefully, you’ve learned something new about a food you’ve probably eaten many times in many ways. Now let’s explore some important dishes from historical places!

Asia: It’s common for Japanese & Chinese people to eat steamed short-grain, white rice with meals. A sticky version is used for Japanese sushi, whereas leftover rice is fried with oil, salt & egg in China (not like the Americanized version). Sticky white rice can also be found in Thailand, cooked in coconut milk & served with fresh, sweet mango. And in India, long-grain jasmine or basmati rice is often served with spices like turmeric, cardamom, cumin, and veggies, like garlic and peas.

Africa: In Western Africa, Jollof has been around for centuries & is made many ways depending on the country/region. The essential ingredients include long-grain rice cooked with tomatoes, onions, peppers, tomato paste, curry powder, cayenne, habanero, garlic, ginger, and chicken stock/bouillon. It’s bright red in color & lacks nothing in flavor!

Europe: In Italy, rice differs based on the area and dish. But a popular type is Arborio, which is used for risotto & arancini. Risotto is a creamy rice dish often served with vegetables or fresh seafood. Arancini are crispy, fried rice balls made from leftover risotto! Speaking of seafood, how could we talk about European rice recipes and not mention Paella?! This Spanish dish uses saffron rice as a delicious base for shrimp, mussels, clams, chicken & chorizo perfect for parties and family meals.

Middle East: Crispy Persian rice, known as Tahdig – translates to “bottom of the pot”, is popular in Iran. Basmati rice is cooked with saffron, then yogurt is added and the pan is buttered before the rice gets pressed down, covered & cooked for up to 40 mins. The result is crispy, golden-brown outer edges & soft, fluffy rice inside.

Caribbean: Arroz con Gandules is how you’ll find rice in Puerto Rico. Cooked with a sofrito of onion, peppers & garlic, spices & pigeon peas (gandules) and garnished with green olives and/or roasted pork their national dish & historic staple you can’t miss out on. A similar recipe of rice & peas can be found in Jamaica, except they use brown rice and coconut milk instead of medium grain rice and chicken stock.

Latin America: Mexican rice is similar to Spanish rice, in that it’s simply cooked with tomatoes and onion. But instead of saffron, in Mexico they use cumin. Also, Spanish rice is served with lemon & parsley, whereas Mexican rice is served with lime & cilantro. Rice is a huge staple in all Latin American cuisines, but a very simple and popular way it’s eaten is Ecuadorian style steamed, white rice with fresh cilantro. Arroz con Camarones (rice w. shrimp) can be found in most of Central & South America, served with beans or some kind of plantains.

United States: The US is considered a melting pot of cultures so there’s no one way to cook rice. From Creole Jambalaya to creamy chicken & wild rice soup, the types are too vast to list. Each state has developed its own recipe, and 85% of the rice consumed in the US is also grown there.
