RECIPE PREPARATION Aromatic turkey wings:


  1. All the ingredients for the sauce are blended with the help of the vertical hand blender.

  2. The turkey wings are cleaned, washed and placed in a tray.

  3. Pour the sauce over the wings. The tray is wrapped in aluminum foil.

  4. Bake in the oven for one hour at 230 degrees.

Baked turkey with tomatoes

The other day I started cooking at home again (I took a break for almost three weeks, because I didn't get home until night). I took a nice backpack to the market. I bought a turkey wing (quite healthy, enough meat for four people) and a kilo of tiny tomatoes from the garden. A zucchini, two heads of garlic and a handful of parsley completed the shopping basket.


I cut the tomatoes in two, cut the tomatoes into several pieces and put them all (including garlic, parsley, zucchini, two tablespoons of olive oil and a little salt + rosemary + pepper) in a heat-resistant saucepan. I put the pan in the oven well heated (a cup of water went over the tomatoes & ampcarne), reduced the temperature to 160 degrees Celsius and left the food in the oven for three hours.

I got a delicious steak, tender but slightly crunchy. Tomatoes and pumpkin & # 8211 dream.

No other garnish, just a little homemade bread to pick up the sauce from the plates.


Turkey wings with green onion sauce

Heat the oven to 160 degrees and put the washed wings in a tray and pour over them the box of cola and a little water, so that they are almost covered. Cover the tray with aluminum foil and leave in the oven for 90 minutes until soft, but do not detach the meat from the bone.

Meanwhile, put all the ingredients for the sauce in a saucepan. Heat over low heat and simmer for 2 minutes, stirring constantly.
When the wings are ready, take them out of the remaining juice, put them in a bowl and grease them with the thick sauce from the pan. Cover the dish and refrigerate for 24 hours.

We also prepare the green onion sauce: mix all the ingredients and season. Let it cool.
The next day, place the marinated wings in the pan and put them in a hot oven (turning them from time to time and greasing them with the marinade drained in the pan until they become sticky) or on the grill (fry for 20 minutes).

Sprinkle with sesame seeds.

Serve the delicious and fragrant wings with the refreshing yogurt sauce and green onions.

Baked turkey wings with oranges

Wash the turkey wings well and cut them in half (they are large, half a wing reaches one person). Put the oil and spices in a bowl. Mix all together then grease the pieces of meat with it. Put the pieces of meat in the bowl and let them cool for at least an hour.

Peel the potatoes and cut them into thicker slices than for the straw potatoes. Peel a squash, grate it and slice it. Peel an onion and cut it into 8 slices. Wash the orange well and then cut into thick slices of about 3-4 mm.

Place the pieces of meat in a round pan greased with oil. Then add the potatoes, carrots and onions. Sprinkle salt and pepper over the vegetables, pour the red wine, cover the tray with baking paper (or aluminum foil) and place in the preheated oven at 200 degrees for one hour. After the hour has passed, remove the tray from the oven, remove the paper and sprinkle the meat and vegetables with the sauce from the tray.

Place a few slices of orange on top and put back in the oven and leave until the meat and potatoes are nicely browned, sprinkling from time to time with the sauce formed in the pan.

When it is ready, serve the meat with the vegetables from the tray and garnished with fresh orange slices.

How to marinate and fry turkey meat?

Turkey meat is par excellence a lean (and very healthy) meat that needs a little help before cooking. As in the recipe for turkey legs in slow cooker, I kept this whole turkey in brine for 24 hours. First I slowly thawed the bird in the refrigerator (it takes about 1 day) and then I immersed it in a large pot full of cold water mixed with salt. I put 4 teaspoons of salt for each liter of cold water.

The simplest is to place the turkey in an empty pot (after you have cleaned it of any flakes and glands) and with a graduated measure of 1 L to pour cold water over it, remembering the number of measures poured. Then drain the water from the pot and prepare the brine in another large bowl putting the counted measures of water and the corresponding teaspoons of salt. Don't be alarmed if you think it is & # 8222ocna & # 8221 because the meat will absorb exactly as much salt as it needs.

I placed the pot of brine (and the turkey dipped in it) in the refrigerator and left it there until the next day (24 hours).

Don't skip this step! You will feel the difference in tenderness and juiciness of the meat kept in the brine. It's incredible!

The next day I sauce the turkey in brine, drained it well and wiped it with kitchen towels. I left it at room temperature for at least an hour before cooking, placed directly in the tray where it will be baked, on the bottom of which I put a special grill for steaks.

Bridge: I saw on TV earlier how Chef Lorraine Pascal placed bags of frozen vegetables on a turkey's chest. Why? To keep the temperature as low as possible (compared to the rest of the bird) and to prevent its excessive cooking and drying. I thought it was a great idea, with logical explanations, so I decided to apply it.

How to make the filling of cranberries and croutons for the whole turkey steak?

I only had about 3 slices of bread drier at home so I had to supplement it with commercial croutons (for cream soups or salads). Here you can find the recipe for homemade flavored croutons.

I cleaned the salads (which have a milder onion flavor & # 8211 instead I recommend using leeks) and chopped them. I also chopped the garlic clove. In a large pan, fry the salad and garlic in a little oil and butter, without browning them. I salted them carefully & # 8211 considering that the meat is already well salted. I also sprinkled them with pepper and put out the fire. I immediately added the dehydrated cranberries and bread croutons. I sprinkled the mixture with a little lemon juice & # 8211 to balance the cranberry sweetness a bit. I mixed and left the pan to cool.

In this filling do NOT put strong flavors (Mediterranean herbs such as rosemary, thyme or oregano) because they do not match the cranberries and delicate salads.

Do not pour any liquid over these croutons! Their purpose is to absorb the natural juices of the meat and to soften them! So we don't make porridge croutons before putting them in the turkey!

Aromatic butter cream with green onion

To get an even more fragile breast, I quickly prepared a cream & # 8211 balm made of soft butter and a little greenery (chopped cepsoara). I seasoned it with a little salt and pepper.

I also used this aromatic butter cream for some turkey legs cooked in a slow cooker as well as for the classic chicken from Kiev.

First I turned the bird upside down and seasoned it well with pepper and paprika. I dripped it with a little oil and massaged it well.

I turned the turkey upside down and carefully inserted the fragrant butter cream under the skin of the turkey's chest, sliding gently with a long-tailed teaspoon. I massaged the chest well to distribute the butter evenly under the skin. Here the butter is placed under the skin, not on the surface of the skin!

How to fill a whole turkey? How is it seasoned and why is the stuffed turkey steak tied?

I also seasoned the turkey face with pepper and paprika and I massaged it with a little oil. I stuffed the stuffing of cranberries and croutons in the chicken cavity, pressing well.

With a piece of kitchen twine (about 1.5 m) I tied the wings behind and came cross-legged. You can find the whole detailed binding procedure here.

I had 2 good spoons of filling left and I decided to fill the end of my chest with them. In order not to fall through the grill into the tray, I quickly made a small bag of baking paper. Thus I protected with the filling and the open cut of the chest.

I fixed the upper end of the bag with a toothpick, anchoring it to the skin of the chest.

Portion the wings and wash them well with the entrails. Put them to boil in water, let them boil for a few minutes and throw away the water. Add four liters of warm water, add the remaining foam and simmer for 30 minutes. Meanwhile, make the noodles, because the sheet must stand to dry. Put flour in a bowl, make a hole in the middle, put the egg, a pinch of salt and mix with a fork until a suitable dough is made, then knead it by hand. Sprinkle flour on the table and spread a thin sheet with the rolling pin. You let it dry, roll it and cut it into thin strips. Sprinkle the noodles with your hand and let them dry.

Finely chop the leeks and peppers, and put the roots on the large grater. Put all the vegetables in the meat pot, salt to taste, and leave until soft. Add the tomatoes to the broth and leave for another 15 minutes. If they are whole, cut them into small pieces. Put half of the noodles, shake well with the flour, leave for 5 minutes and add the boiled borsch separately and froth. Match the taste of salt, let it boil for a few minutes, turn off the heat and season the turkey wing soup with green or dried larch. You keep the rest of the noodles in a paper bag and use them another time.

I took 2 turkey wings, which weighed 1,300 kg, I burned them on the stove flame, I washed them well and cut them into pieces. I boiled them in cold water in a 5 l pot.

After the first boil, I threw away the dirty water, washed the pot and the pieces and put them back in cold water. When it started to boil, I took the foam and added it vegetables: 2 suitable onions, 1 carrot large or 2 smaller, 1 pepper fat, 1 leaf wire celery, 1 link lovage, all finely chopped.

Later I added 3-4 tomatoes, also finely chopped, cleaned of skin. I let it boil and then I put home-made borscht, strained it and boiled it in another pot.

I matched it with salt and djpa what boiled and borsch I put noodles. I let it boil for another 10 minutes and then I added 2 well beaten eggs. I set the pot aside and put green larch and parsley.
