An omelet that, although not very good-looking, is so tasty that you will want to cook it daily.
- 3 eggs
- 1/2 kg tomatoes
- salt pepper

RECIPE PREPARATION Tomato omelette:
We choose very well ripened tomatoes. Grate the tomatoes and remove the peel.
Put the tomatoes in a pan and leave on the fire, stirring constantly, until you get a thick sauce.
Beat eggs with salt and pepper and add them over the hot tomato sauce.
Stir and leave for another 2-3 minutes until eggs are formed. Serve both hot and cold.
