Bran makes the best bulz in all of Romania, thanks to the unique quality of bellows cheese in this area.

METHOD OF PREPARING Bulz recipe as in Bran:

For a measure of grated corn (to get rid of problems and waiting) you need 2 1/2 measures of water. Salt water is put on the fire and when it boils, pour the cornstarch slowly, stirring so as not to make colossi. Then mix for 5-10 minutes on low heat and ready.

When it has cooled down a bit, balls are formed by hand in which the bellows cheese is placed! Then, wrap them in aluminum foil and put them on the grill!

Few people know that the bulz also entered the Book of Records in 2008, after the inhabitants of Turia commune, Covasna county, managed to make a bulz with a diameter of 150 meters and 32 centimeters. It is said that bulzul is a traditional preparation of shepherds, based on several ingredients, including the indispensable bellows cheese. You will find it under different recipes and names. The simplest bulz recipe is the classic one, in which only curd and bellows cheese are placed. Other ingredients can be added to this recipe: egg, sausages, small pieces of bacon, smoked ribs or kaiser. Bellows cheese can be mixed with dill or chopped parsley leaves. The most well-known names are the Transylvanian bulzul, the shepherd's bulzul, the Moldovan or traditional bulzul, but they are all based on the same ingredients.   1. Bulz in the oven - the bulul is in the form of lumps heated and lightly browned in the oven
  2. Grilled Bulz - Bulz lumps are browned on the grill until they turn slightly brown
  3. Bulz in the embers - the bulz lumps are kept in an aluminum foil and browned in the embers for a few minutes.
  4. Bulz in layers - the dough and the other ingredients are placed in layers, in a pan, and cooked in the oven for 10-15 minutes.


Shepherd's bulz recipe with bellows cheese

Polenta with bellows cheese and sausages

  • 350 g cornmeal
  • 1 l of water
  • 300 g of bellows cheese
  • 2 sausages
  • Serving cream

Bring the salted water to a boil, when the water starts to boil, pour the cornmeal into a thin layer, stirring constantly. Boil for about 15 minutes and then let it cool. A thicker polenta will come out.

Divide both the polenta and the cheese into 4 equal parts and form some polenta balls in which we will put the cheese. after which I put the polenta, the cheese and then with the help of the foil I shaped.

We let them dry a little on the surface on a plate, so as not to get caught and to handle them more easily on the grill.

Saute the sausages and cut them into small pieces, then put them in the polenta balls

Then we put them on the grill heated and greased with oil, until they take on color.


400 g Malay
500 g cheese
100 g butter
150 ml sour cream
6 eggs
water, salt, white pepper (or paprika)

Step 1: make a softer polenta from boiling water, salt and 1 tablespoon of butter added at the end.
Step 2: take a heat-resistant dish and place a layer of polenta, a layer of grated cheese (sheep, cow, mixed, we have), sour cream and cubes of butter.
Step 3: repeat the operation until we finish the ingredients: at the end we will put a layer of cheese, sour cream, butter cubes and make 6 nests where we will break 6 eggs with a pinch of salt and a pinch of white pepper and then put the dish in the oven . It's ready when the eggs are made on top! It is delicious!

The cold polenta is divided into 3 parts, for 3 portions. Each piece of polenta is shaped in the hand, it is baked, it is made in the middle of it, in which the cheese is put, a piece of butter, the kaiser with the bacon, then the bulzul is shaped like a larger well-closed dumpling.

The polenta balls thus prepared are put on the grill until the cheese has melted inside and the crust has become crusty on the outside. Then serve hot at dinner with cream on top.

Method of preparation - Shepherd's Bulz - (modern version):

Prepare a polenta from corn, water and salt.

Fry the kaiser and bacon in a little butter. Add the hot, freshly prepared polenta and bellows cheese and mix everything.

Pour into a plate, add an egg (optional) and grate the salted cheese on top.
