Banana muffins

In a bowl put eggs, sugar, vanilla sugar, cinnamon and salt and mix well until everything becomes like a cream.

If you don't like the idea of ​​muffins, you can pour the composition into a cake tin and you're done.

The combination of bananas and nuts is very successful. The bananas are sweet and soft and the nuts give the muffins a crunchy texture. You can make these muffins as a gift. A set of 12 holiday wrapped with red or green ribbon are wonderful to offer to loved ones or to put under the Christmas tree. It's a good gourmet gift idea, isn't it? ingredients
(for 12 muffins)

150 gr. flour
1 1/2 teaspoon baking powder
55 gr. soft butter
150 gr. fine white sugar
1 or
1 teaspoon vanilla extract or 1 vanilla bean
3 soft bananas
75 ml. milk
55 gr. chopped walnuts + extra for decoration

Preparation time: 1 h

We put 12 paper forms in the muffin tray.

In a bowl, sift flour and baking powder. Let's put it aside.

In another bowl, beat the butter and sugar with the mixer until they become a fluffy and light mixture. It takes about 11 minutes. Add vanilla and egg. Stir a little. We mash the bananas in a blender or with a fork and mix them in the composition.

Now add the flour and milk, adding a little of each one at a time, and mix with the mixer at minimum speed. Finally add the chopped walnuts and mix. With a towel or spoon this time. With the mixer we grind them even more.

We pour the composition into molds. Put a few walnut halves on top. Put the tray in the preheated oven and keep for 20-25 minutes at 180 degrees. Bigger fire at first to grow big and fast and then we can let it go slower. They must be brown at the end and if we put a toothpick in them they must come out dry.

We decorate with other nuts if we want. Let the muffins cool in the pan for 10 minutes, then take them out and leave them to cool for another 10 minutes. Servim.


Fasting recipe: muffins with bananas and oat milk

I really like the muffins. And because it is fasting now, but also because I try to consume dairy as rarely as possible, I found and tried a recipe for fasting muffins.

I looked for more options and stopped at the one with bananas. I used wholemeal flour, oat milk (instead of regular milk), coconut oil instead of melted butter (which I used in my traditional muffin recipe) and brown sugar. To which, depending on the desire, you can add cinnamon, nutmeg, grated ginger, seeds of all kinds, oatmeal or almonds or crushed walnuts.

Method of preparation

I made a shake of 200 ml of oat milk and two ripe bananas, then I added a cup of wholemeal flour, a sachet of baking powder and 3 tablespoons of coconut oil. I added a teaspoon of cinnamon and a few tablespoons (about 4) of brown sugar. You can put a few raisins or pieces of candied dates (in which case you reduce the number of tablespoons of sugar) or a few pieces of apple, which, in combination with cinnamon, become extremely fragrant after removing the muffins from the oven. While mixing the ingredients, preheat the oven. From case to case, after about a quarter of an hour you can insert a toothpick to see if they are cooked in the middle.

They have a divine aroma and are absolutely delicious! They are not very sweet, but raisins or dates offer a special sweetness. This tells you a great lover of sweets!


Blackberry muffins

Ingredient:

  • 2 cups and a half of flour
  • a tablespoon of baking powder
  • a teaspoon of baking soda
  • half a teaspoon of salt
  • a cinnamon powder
  • 2 large eggs
  • a cup of cream
  • a teaspoon of milk
  • half a cup of sugar
  • a quarter packet of butter
  • 2 cups blackberries or other berries (fresh or frozen)
  • a few drops of vanilla essence

Method of preparation:

Preheat the oven to 2oo degrees. Mix the flour, baking powder, baking soda, cinnamon powder and salt in a bowl.

Separately, mix the eggs, cream, milk, sugar, melted butter and vanilla essence. Mix both compositions until you get a homogeneous paste, but without exaggerating, because if you mix too much, your muffins will be dense, not fluffy. Then add the blackberries. If you use frozen blackberries or berries, they must first be thawed, drained of excess liquid and given a little flour beforehand.

Divide the composition into equal parts and pour into shapes in which you have previously put baking paper. Bake the muffins for up to 20 minutes - you can easily insert a toothpick in the middle of one to see if it has baked (the stick should be clean when it comes out of the dough). Leave them in the oven, with the door open, for another 3-5 minutes after they are baked, so that they sit down. Serve these delicious muffins with warm blackberries on the same day you prepared them.


MUSHROOMS WITH STRAWBERRIES AND BANANA (VIDEO RECIPE)

The best muffins are with strawberries and bananas and I prepared them today with Zuzu Bio milk !

Cut the strawberries and banana into cubes.

Mix eggs well with sugar until you get a frothy composition. Then add melted butter, milk, baking powder and flour mixing after each.

Fill muffin tins and bake in preheated oven at 180 degrees C for 40 minutes.

Remove the muffins from the molds after they have cooled completely. The muffins remain softer and full of fruit.

Method of preparation
